Special Dates Milkshake



Here is the secret to a creamy, silky yet healthy Milkshake!
Dates, known to be the most ancient fruit, are jam-packed with iron and loaded with fiber. 

They are considered to be natural weight-loss food. 
Dates Milkshake is an Arabic recipe.



Now, the good news for kids is that, in this recipe, I have added 1 tbsp Nutella.
So, you can imagine how divine a milkshake it has turned out to be! All of you must try this.

Ingredients for a healthy, kids favorite breakfast item:


Milk -2 cups
Dates- 8 nos chopped
Nutella- 1 tbsp (Optional)
Almonds-
Ice cubes- 4-5 (Optional)

Preparation:

Blend all ingredients with milk until smooth. Serve Chilled Topped with almonds.

Banana Chocolate Muffins

Banana Muffins are very popular recipe.But here,we are trying a variation to the recipe,making it healthier and egg less too.

Banana Muffins are muffin version of banana bread.Muffins ,as you all know,are  a quick bread of American Origin.
Here ,I have mixed all purpose flour with some whole wheat flour ,to make it healthier.

Banana muffins can be a great after school snack or a good breakfast item for kids.These are healthy as it contains eggs,butter,banana & wheat flour.

What We Need to make Banana Chocolate Muffins:

Preheat the oven to 180 degree Celsius. 

Dry Ingredients

All purpose flour - 150 g
Whole wheat flour (whole meal/flax seed powder)- 100 g
Sugar- 4 tbsp
Baking Powder- 1 tsp
Baking soda- 1/4 tsp
Salt- 1/4 tsp
chopped nuts- 100 g
Mix all dry ingredients with a wire whisk.


Wet Ingredients

These are Eggless Muffins ,so,I used ,2 tbsp Condensed Milk instead.
Vanilla essence- 1 tsp
Banana- 1 big
Butter - 100 g
Chocolate melted- 2 tbsp
Whisk all wet ingredients in a separate bowl.


Combine wet ingredients into dry ingredients well. Don not over stir.Batter should be very thick.
(It should be thick,sticky batter,unlike cake batter).Add 1-2 tsp milk if the batter is too thick to scoop out.
Add blueberries or chocolate chips according to your choice.

Isn't this egg less muffin recipe so simple? And the results are awesome if you follow the mesurements.

Scoop the batter into muffin cups and bake for 20-25 minutes at 180 degress. (Until a toothpick inserted into the center of the muffin comes out clean)


We can store this for 3-4 days. Soon ,out of oven , the top of muffins will be crispy,but as you store them,it becomes soft and nice.

Serve it with a topping if you prefer,since we have adjusted the sweetness to minimum.That's why muffins are quick bread,not cup cakes.So here is my delicious muffin with a topping of my choice.

Hummus

This recipe gave me the real authentic taste of arabic Hummus.Serve this along with Khubbus or any flat bread for a very healthy protein rich breakfast.
Hummus is a healthy Middle eastern dip or spread made from cooked Chick peas(Garbanzo beans),Tahini,Garlic&Lime.
Though its very common in Middle east,I am trying to share the recipe with the people around other parts of the Globe.
As an appetizer and dip, hummus is scooped with flat bread  (such as pita ).

Ingredients
1. Garbanzo Beans or Chickpeas - 100g soaked all night
(Easily available as canned,but please avoid using canned Garbanzo beans)
2. Tahini  paste - 4tbsp
(Tahini is white sesame seeds available as canned paste.Instead,you can soak white sesame seeds over night and grind it to a paste along with olive oil)
3.Garlic paste- 2 tbsp
4.Lime juice - 2tsp
5.Salt   - to taste
6.Olive oil - 4 tbsp
7.(Cherry tomatoes , Olives for garnishing )
Method Of Preparation
Boil the chick peas adding salt and water until they are very soft. Drain and reserve the stock for later use.
Transfer the chickpeas to a blender along with tahini paste,garlic,1/2 tsp salt and 1tsp lime juice.Blend until a smooth paste ,adding olive oil gradually.Add reserved stock if needed to make a fine paste.
Adjust the lime juice/garlic to suit your taste.Transfer this to a serving dish.
Pour 2 tsp of olive oil  on top.Drizzle some paprika in to the oil.
Garnish with Cherry tomatoes and  Olives .
Serve Hummus with Pita bread or Khubbus(Lebanese Pita bread) ,or any bread of your choice.Or you can use it as a dip for veggies or chips.

Crepe Recipe

Here  is a small variation from the usual Crepe  recipe.Crepes are really a quick and easy breakfast item.
Here crepe batter has been enriched using whole meal  and wheat flour.Those who have bored of having brown bread every day can try this,tastes different from the usual pan cakes too.The authentic taste and aroma of sage gives this dish a completely different finish.Try this at home and please leave the comments.
Ingredients
Whole meal-1 cup
(Instead make crumbs from brown bread and add to the wheat flour,as I have done.)
Wheat flour -1 cup
Dried Sage-1-2 tsp
Salt-to taste
Olive oil-Optional
Water-
Method Of Preparation
Make a thin batter with all the ingredients except olive oil.
Now heat a non stick pan and make small thin crepes.Drizzle olive oil over the crepes,if you prefer.Every one would love the aroma and taste that sage provides to the crepes.
Serve hot.
ENJOY with any side dish you prefer or with maple syrup.

Butter Milk Scones.

Scones hail from Scotland.This is a quick breakfast bread recipe.Add 1/4 cup wheat flout to 1 cup Plain flour to make this recipe healthy.You can substitute wheat flour with oatmeal/flax meal or whole meal.
Adding buttermilk also makes it rich in nutrients.Quick and yummy breakfast in 20 minutes.
Ingredients
Flour-1 cup
Wheat flour-1/4-1/2 cup
Powdered sugar-4 tbsp(Only lightly sweetened)
Cold unsalted Butter-25 g
Buttermilk-3-4 tbsp
Baking powder-1/4 tsp
Method of preparation
Mix flour,wheat flour and baking powder well.Now mince cold unsalted butter to the dry ingredients and mix it well with fingers;Now the flour will resemble breadcrumbs.
Now add in sugar and mix once again.Slowly add buttermilk and mix everything into a ball.
Flatten the dough (in to 1 inch thick) and cut round or triangle shaped scones using a cookie cutter/scone cutter.
Bake in a preheated oven at 180 degrees for 20-25 minutes until golden brown.
Serve with cream//fruit jam.
(Add raisins or blue berry for variations.)

Ingredients
Avocado-1 no
Apple-1 no
Banana-1 no
Carrot-1/2 no
Mango-1/2no
Milk-1/2 cup
Water-1/2 cup
This combination will provide a delicious  smoothie.
Blend all the fruits and carrot together with water (and sugar/honey to taste).
Once everything is properly incorporated add milk and blend well.
Serve chilled.

South Indian Breakfast

 Thattil Kutti Dosa with Garlic Chutney

Ingredients
for dosa batter
Raw Rice-3 cups
Urad Dal-3/4 cup
Fenugreek Seeds-2 tbsp
Soak these ingredients in water for 5-6 hours.
Grind into a thick batter.Add salt and keep it for fermentation (8-10 hrs).If you want to prepare this instantly you can add Eno fruit salt.
Make small dosa on a tawa.
For the chutney
Coconut grated-1 cup
Green chillies-2-4 no
Garlic -2 cloves
Ginger -1 small piece.
Salt -to taste
Shallots-2 nos
Coconut oil-2 tsp
Method of preparation
Fry shallots and garlic in coconut oil.Add some curry leaves to this.Now grind all ingredients together.Very special delicious chutney is ready to serve with the dosa.
Some chickpea curry is also great healthy combination with these.

Mixed Fruit Jam



Ingredients
Fruits-Apple,pear,kiwi,pineapple and orange.-2 cups
Sugar-1 cup
Lemon juice-1tbsp
Vanilla essence/nutmeg powder-
Method of Preparation
Blend all the fruits to a paste in a blender.
Heat a pan.Pour the fruit puree into the pan.Stir well after adding sugar.
Add 1 tbsp lemon juice to prevent crystallization of sugar.You can add vanilla essence or nutmeg powder for more flavor.
Cook until it thickens to dropping consistency.

Once its cooled,it gets more thick and you can store it in a sterilized jar.
Serve this with home made whole meal buns for a very healthy breakfast.

Bread Upma

Easy breakfast for kids


Ingredients
Bread -6-8 no
Onion -1 no
Potato- 1 no
Green chilly- 2nos
Turmeric powder-1/4 tsp
Chilly powder -1/4 tsp
Salt- To taste
Asafetida-a pinch
Method Of Preparation
Cut the bread into pieces.
Boil 1 Potato .Peel and cut into pieces.
Heat oil and add mustard. When it starts popping, add asafetida and curry leaves.
Add turmeric powder and chilly powder. Sauté well.
Now add chopped onion and green chilly. Add salt to taste.
Now add potato and bread pieces .Drizzle some water, and mix well.
This Upma can be served with tomato ketch up and kids would love this.
You can use whole meal bread to make it healthy.
 Serve hot.

Carrot Cake Pancake

This is an easy, very nutritious and more than anything, VERY TASTY breakfast for you and family.
I was experimenting with Carrot ,wanted to make an easy Bread.. Then suddenly thought, why dnt use our normal Pan instead of Oven?And so,here it is..!
This pancake has got a new flavor and its a quick breakfast. Just wanted a change from  those boring side dishes with Carrot.

This is tasty when it’s still hot and with maple syrup. Hope you have noticed the steam on my Pan cake. :-)
Ingredients
All Purpose flour – 1cup
Finely Grated Carrot- 1 cup
Milk- 2 tbsp
Oil- 2 tbsp
Vanilla essence -1 tsp
Baking Powder – 1 tsp
Baking soda- ½ tsp
Salt – ¼ tsp
Sugar- 1-2 tbsp
Method of preparation
Make a cake batter as follows. Beat oil with Sugar, add in salt. Now add milk and Vanilla.
Sieve flour and baking powder, and soda .Add in to the above mixture.
Finally add grated Carrot, incorporate well.
Heat a Pancake Griddle or normal Pan. Apply butter on the pan.
Pour in one  ladle of batter .Make pancakes and serve with Maple syrup.

Khaman Dhokla(Spicy & Healthy Rice Cakes )

Khaman Dhokla.
(Khaman Dhokla is a healthy Breakfast Item from Indian State Gujarat.)
Today, I m going to introduce you to a very popular breakfast item in Gujarat (Indian State), but I think not many from other parts of the world would be acquainted with this snack.
Khaman Dhokla is a very healthy dish made from Raw Rice, Black gram (uraad daal) and Split Chickpeas (Chana daal).
Good part is that you can store the batter for 4-5 days...so all those working moms, this recipe is for you especially...
Ingredients
1. Raw Rice -- 1 cup

2. Split Chick peas (Chana daal) --- 1 cup
3. Black gram (Urad daal) --- 1/2 cup
4. Butter Milk - 1 cup
5. Ginger paste - 1 tsp
6.Green Chilly Paste - 1 tsp
7.Salt - According to the taste
8.Asafoetida  - 1/4 tsp
9.Baking Soda - 1/4 tsp
10.Turmeric powder - 1/4 tsp
11.Mustard Seeds - 1tsp
12.Grated Coconut - To Garnish

Soak the pulses in water along with the  rice  for 5-6 hours.
Then grind it adding sour butter milk,salt and Turmeric powder.
Batter should be thick, say dropping consistency.
(For better result,You can ferment this batter for 8 hours)



Now add Ginger paste 1 tsp and green chilly paste 1 tsp.
Add 1/4 tsp Baking Soda and pour 1 tsp hot water on the Soda ,mix the batter well.
Pour into greased baking tin, bake until done (3-4 minutes) on Microwave High power.
For Seasoning
Heat 1tabsp oil, splutter 1tsp Mustard seeds,add a pinch of asafoetida, Curry Leaves and slit green chillies.
Add 2tbsp water to this and pour the whole mixture over the Cake/Dhokla taken out from Microwave.

Cut this into squares and garnish with grated coconut and chopped Cilantro.

Enjoy Khaman Dhokla with Coconut-Cilantro chutney.


Very tasty, just try once then I am sure, you will accept it as one of your favourite snacks.
Please tell me how you find it. Then I can give you easier version of the same recipe.But this snack will taste way DELICIOUS if you follow this recipe than going  for the easier one!!!!!!

Flax Seed Muffins recipe

One of the readers requested me to post some recipes with flax seed.So I hope she is reading this .
Flax seeds are the most nutritious meal .Its very low in Cholesterol and Sodium. It contains high levels of dietary fiber. Flax seeds lower cholesterol. It has a great medicinal value.
So include flax seeds in your every day diet. Every morning, you can even take a tablespoon of flax seed powder dissolved in water.
Add some flax seed powder with any other flour in any of your recipes such as pan cake or baked items.
Enough of health talks. Now let’s begin.
Ingredients
Flax seed powder-1 cup
Plain Flour -1/2 cup
Salt- a pinch
Baking soda-1 tsp
Oil- 2 tab sp
Warm water/butter milk – 1 cup
Cinnamon powder-1tsp
Vanilla essence-1tsp
Blue berries-1/2 cup
Brown sugar-3/4 cup
Method of preparation
Using a fork, mix flax seed powder, flour, salt, brown sugar, cinnamon powder and baking soda well.
Add in buttermilk and oil to the dry ingredients and mix well with a spoon, care to be taken to avoid lumps. Mix in blue berries.
Fill muffin moulds lined with paper cups to 2/3 full, and bake for 17 minutes at 180 degrees.
Enjoy it with Tea or Coffee.

How to make a perfect Poached Egg (Breakfast Recipe)

Looking for a very quick break fast recipe?
Poached eggs are a great option to start a day healthy.
Poached eggs are cooked by being simmered in   hot water and so contain all the nutrients of the egg
with out any added fat .
Making a perfect poached egg is a little tricky.But it's fun!
Method
Boil water in a sauce pan.Add some salt to the water.
Crack an egg to a small bowl.
When salt water  starts boiling, reduce heat and stir the water anti clockwise and make a whirl pool.
Carefully drop the egg to the center of the whirlpool. Cover and simmer for 3-5 .
                                         poached egg center                                           Traditionally,egg yolk will be undisturbed inside,but I made it half cooked to suit my family's  taste.
Drizzle pepper powder and serve immediately.
