Mutton Cutlet Recipe


Cutlets are a favorite evening snack..It is  perfect for an elegant dinner or lunch Party.
This can be a healthy snack for kids,since here we are going to shallow fry these in very less oil.
Ingredients
Mutton Minced-200g
Boiled Potato-1 big
Ginger garlic paste -1 tbsp
Onion -1 big chopped
Green chilli-2 nos
Cloves,Cardamom and Cinnamon-Powdered -1-2 tsp
Turmeric powder-1 tsp
Chilly powder-1tbsp
Meat Masala Powder-(optional)-1 tbsp-This gives a very good flavor.
Coriander leaves-
Salt -to taste
Oil-1 tbsp for shallow frying.
Method
1.Cook minced meat with some salt and pepper.
2.Heat 1 tsp oil in a pan.Saute onion chopped ginger garlic paste and salt.
Add minced meat.Now add in green chilly chopped,turmeric,chilly powder and meat masala powder.
Saute well.After 2-3 minutes add in mashed potato and lots of chopped coriander leaves.
Cook and mix well.Now this mix will be like a lump.Once its cooled a bit,shape into balls and then flatten with  hands.
Coat with bread crumbs and shallow fry until golden brown on the top.(I have avoided beaten egg coating.Vegetarians can use thin corn flour batter instead of egg.Here I have omitted both.)
Serve hot with tomato sauce.

Lamb Keema Kathi Rolls

Lamb Keema Kathi Roll
 Kathi rolls are fast food popular in the Northern part of India.
I had tried Paneer(Cottage Cheese) Kathi rolls, and  thought to prepare it at home, with Mutton/Lamb Keema.
Keema is the minced Lamb or meat.
This is very simple and extremely delicious!!! 
Method of preparation
For Lamb Keema
Minced Lamb-400 g
Ginger -garlic-green chilly paste- 2 tbsp
Onion-2 no
Tomato- 1 big
Cloves, Cardamom, Fennel seeds, black cardamom-All powdered together-2 tsp
Salt –to taste
Red chilly powder-2 tsp
Coriander powder-1 tbsp
Pressures cook all the above ingredients after mixing thoroughly.
You can add ½ cup water also.
After  4-5 whistles ,Keema gets cooked.
Now open the cooker and you can evaporate any excess water. Now add 2 tsp oil and fry this mix in the same cooker. Add some pepper on top and keep it on medium flame for 6-7 minutes.
Now let’s make the Paratha.
Ingredients
Wheat flour-1/2 cup
All purpose flour-1/2 cup
Salt-
Water
Make thin Paratha’s or Chapattis .
Now keep the stuffing inside and pour some lemon juice and add some onion slices and chopped coriander leaves.
You  can add any salad vegetable, you prefer,Lettuce,greenchillies,bell pepper slices..Choice is yours. But don’t forget to add  raw onion slices and lemon juice since it enhances the taste.
Serve hot.

Mutton /Lamb Masala

Step1

Fry 1 cup Onion in 2 tsp oil until dark brown.
Step2

Marinate Mutton pieces (500 gm) with
½ Turmeric Powder,
2tsp Chilly powder,
1tbsp ginger Garlic paste,
Salt to taste,
1tbsp Coriander powder,
Mint leaves, Curryleaves,
½ cup Fried onions,
Pureed Tomato (1 big).

Keep refrigerated for 2-6 hrs.

Cook it with 4tbsp water in a Pressure cooker until well done.

Now transfer this to a wide pan and add ½ cup fried Onion, Mint leaves and make it dry on high flame  until oil starts appearing.
