Unniyappam recipe

Unniappam,Unni appam,Unniyappam


Today I am going to share the secret of traditional Kerala Snack 'Unni Appam' or 'Karol Appam'.

Unni appam resembles small pancakes.
You can find the recipe  anywhere on Internet and many might have  succeeded in making these delicious and healthy dumplings.

But this is my recipe;after desperately  trying to bring back the taste of Unni appam that my Grand Mother (we call her Ammamma) used to make for us,children.She didn't know how to show her love for us,but with the taste of her special snacks, her love was conveyed to us.

I am sure it is impossible to recreate the same taste,since that special "kaipunyam" ended with her demise.
(Kaipunyam is a Malayalam word which  means 'having gifted hands')


So let's  try to bring back that taste... nostalgic to many of you ,today..

Ingredients
Raw rice -2 cups
Jaggery-200g
Banana-1 no
Plain Flour-2tbsp
Ghee-1tbsp
Black sesame seeds-2tsp
Coconut pieces-2tbsp
Method of preparation
Soak rice for 5-6 hrs.
Melt Jaggery into a thick liquid.
Grind together, rice and this liquid Jaggery (1tbsp at a time).When it's almost done ,add in banana and grind well.( need to add extra water,only if you feel that melted Jaggery is not enough)
Finally add in the flour and mix well to get a smooth batter of Idly batter consistency .
Heat ghee and fry coconut pieces and sesame seeds.And pour these along 
with the ghee to the batter.Mix well and keep aside for 4-5 hrs.
Now take a Karol (is the mould used to fry this snack) or you can even use Pancake griddle for this .
Pour oil into the holes and make fluffy tasty and more over, very  healthy Unni Appam.

Appam (Kerala recipe)

Palappam Kerala

Appam Kerala with Chicken Mappas

Ingredients
Fine Rice flour--1 1/2 cups
Yeast- 1/2 tsp dry yeast
Coconut milk- 2-21/2 cups.
salt-2 pinches
Sugar-2 tbsp
Cooked rice-2 tbsp
Grated Coconut -2 tbsp
Method of preparation
1. Take  2 tbsp Luke warm water,add sugar and dry yeast.Keep aside for 5 minutes .When it becomes frothy,add this to a blender along with rice flour,salt and 2 tbsp sugar.Add enough coconut milk and blend well.Add cooked rice and coconut into this and grind in to a fine batter.Consistency should be thinner than dosa batter,not too watery.Keep aside for 5-6 hours or until it gets fermented.

Now,heat *Appam griddle.Keep it in simmer and add 1 big ladleful of batter.Swirl it and cook appam closing the lid.After swirling the griddle ,keep it on medium flame.
Serve Appam with egg roast/Chicken Mappas/Veg Stew.

Fish in Banana Leaf

Kerala is the southern most state of India.This small place is a good tourist destination for those who love nature and serenity.Another attraction in Kerala is the food.Anyone who visits Kerala should try this fish fry.Fish in banana leaf (called "Meen Pollichathu" in the regional language,Malayalam) is a special delicacy available in House boats of Kerala.

Any Kerala style fish fry is delicious ,but this recipe is the king of all.

Karimeen Pollichathu-fish fry
Fish Fry in Banana leaf.
This fish fry is healthy since this is cooked, wrapped in banana leaf thus making it less oily.You can use aluminium foil to wrap the fish and instead of frying,bake it in a preheated oven at 180 degrees for 10-15 minutes.
INGREDIENTS
Any big fish-Pearl spot fish/King fish-2 nos (here I have used King fish)
Onion-1 small
Shallots-1 cup
Garlic-4 cloves
Curry leaves-use liberally
Chilly powder-2 tbsp(add less if you don't want spicy)
Turmeric powder-1tsp
Pepper powder-2tsp
Tomato-1 small
Vinegar-1tbsp
Salt-to taste
Garam masala powder-1tsp
Coconut oil-1tbsp
Banana leaf or aluminium foil
Method of preparation
1.Wash and clean fish.
2.Sprinkle salt,chilly powder and garam masala powder on fish pieces and shallow fry in 1 tsp oil.Add curry leaves to the oil.

3.Make a masala with shallots now.
Heat a pan and add oil.Saute chopped shallots ,Onion chopped,salt and curry leaves.
When it turns brown add in tomato,chilly powder,turmeric powder,salt,vinegar,curry leaves and pepper powder.Saute well and cook.When the tomatoes dissolve in onion mixture,turn off the heat.
4.Now coat this masala on shallow fried fish pieces.
5.Keep the banana leaf on low,direct flame and wilt it slightly.
Now keep the fish inside this banana leaf and wrap it completely; as in the picture.
Add 2 tsp oil to a pan and shallow fry for 3 minutes each on both sides.
You can also use the oven for this.
Serve hot.

Masala Chicken

masala chicken is a spicy kerala recipe

Masala Chicken is a special recipe from deepsrecipes.Here we are preparing a masala which gives all the taste to the curry.This masala is closely related to the dry masala that Tribal people make and carry with them when they travel from one place to another in the forest.Once they get any animal they mix the masala and cook it right away.But the taste is so authentic and lip smacking.
But this recipe is just a trial from deepsrecipes.We can make the masala beforehand and can store it refrigerated.

Ingredients
Chicken-500 g 
For the Special masala-
Onion-2big
Ginger-1 small piece
Garlic-4-5 cloves
Tomato-1 big
Coriander dry seeds-1tbsp
Red chilly dry-8-9 no
Pepper corns-1 tsp
Salt-to taste
Curry leaves-
Fry all these ingredients in 1 tbsp oil.Grind it into a fine paste.
Coat the chicken with the masala.

Pour 1/2 cup water and cook well in a nonstick pan.Stir occasionally.
Cook until all the water dries up and then pour some oil and lightly fry it.

Theeyal Recipe (A spicy curry from Kerala)

This curry is called "Theeyal " ; One of the very delicious, spicy and savory curries from traditional recipe collections of Kerala. Kerala food is famous and much admired by all around the world. This particular recipe is popular in southern Kerala.
We can make theeyal with different vegetables or with Prawns instead of veggies.Today, I am giving you the basic Theeyal recipe with a combination of veggies.Here I use Bringal,bitter gourd and Onion.
INGREDIENTS
Bringal -cut into longitudinal sections-1/2 cup
Bitter gourd -cut into longitudinal sections -1/4 cup
Shallots (Or if its not available use Onion 1 big) -1/2 cup
Green chilies -4 nos-(slit into two).
Coconut oil-4tbsp
Grated coconut-1cup
Turmeric powder-1tsp
Chili powder-1tbsp
Coriander powder-2tbsp
Salt-to taste
Tamarind paste-1tbsp
Method of preparation
Step1
Make a masala paste.
In a shallow pan,pour 1 tbsp oil.Roast coconut.When its light brown in color,add in 1 tbsp coriander powder.Keep this on low flame for 10 more minutes.
Let it cool down a bit,then grind this into a fine paste.
Step2
Take a big vessel and pour 2 tbsp coconut oil. Lightly fry the cut veggies with green chilies.
Add in salt,turmeric,chili powder and remaining 1 tbsp coriander powder.Mix well and simmer.
Now pour in the tamarind paste along with 2 cups of water.
Let this boil and cook well.
Finally add in the coconut paste we have prepared.
Switch off once it starts to boil.
Tampering
Heat 1 tsp oil ,splutter mustard seeds and fenugreek seeds.Add in 2-3 dry red chilies and curry leaves.
Pour this over the curry and keep the lid on for 10 more minutes .
This curry is best with Prawns instead of veggies and served with white rice traditionally.

Malabar Fried Chicken

MALABAR FRIED CHICKEN 

Ingredients
Chicken-500 g cut into Big pieces
Whole pepper corns-1/4 cup
Garlic-Ginger paste-1 tbsp
Turmeric powder-1/4 tsp
Onion-1 small
Vinegar-1tsp
Curry leaves-
Method Of preparation
Clean the chicken with salt and vinegar.
Now add some salt,ginger garlic paste and turmeric powder .Cook until done.

Now the marination 
Make a paste with pepper,1 garlic,salt,vinegar,onion and curry leaves .Apply this to the cooked chicken and keep refrigerated for 2 hours.

Make a thin batter of all purpose flour after adding a  pinch of salt and a pinch of garlic paste.

Shallow fry these marinated pieces after dipping in the batter.

Exotic Kerala Malabar chicken fry is ready..!!!!

Beef Pickle

Beef Pickle is a recipe popular among  traditional Christian families in Kerala.
Here I have not followed any particular recipe to make this pickle.Instead,this is a trial to get a spicy,tangy , pickled beef.
Ingredients
Beef -500g
Meat Masala-2tsp
Ginger garlic paste-1/2 tbsp
Vinegar-1tbsp
Chili powder-1tbsp
Curry leaves-
Ginger-a small piece chopped
Garlic pieces-2tbsp
Gingelly oil-1tbsp
Salt-to taste
Fenugreek seeds-1tsp
Mustard seeds-1tsp
Cumin seeds-1/2 tsp
Asafoetida-1tsp
Method Of Preparation
Step1
We need a masala to give the pickle its real taste.for this dry roast fenugreek seeds,mustard seeds and cumin seeds.Now powder them after adding Asafoetida powder.
Step2
Marinate beef chunks with ginger garlic paste,salt and meat masala.Now add 1/4 glass water and cook until well done.
Take a pan and shallow fry the cooked beef .
Add some curry leaves while frying.
Step3
In the same pan,add 1 tbsp gingelly oil.Fry garlic and ginger pieces.Add some curry leaves.Now add 1 tbsp chili powder.

Now add the masala that we have prepared in the step1 above.
Fry this for a minute.Add Vinegar and 1/4 glass hot water.
Add in the shallow fried beef and mix well.After 2-3 minutes oil separates  from the mix.

Delicious Beef pickle is ready to serve.

Fish Curry-South Kerala Style



This is a very delicious fish curry from the southern region of Kerala. This recipe I got from a cookery show.
I am trying to stick to the original recipe since it’s a recipe inherited from ancestors.
This is a bit different from the usual fish curry.
Try this one with any fish that’s available to you and enjoy this lip smacking curry!!
Ingredients
King fish-1/2 kg
Ginger-1 tbsp
Onion/Shallots-1/2 cup
Kokum-12 no’s
Turmeric powder-1/2 tsp
Coconut-1 cup
Dry red chili-10 no’s
Coriander seeds-1/4 cup
Method of preparation
Step1
Clean the fish.
In a heavy bottom vessel, pour 1 cup of water(or the water enough to cover the fish). Boil the water with Kokum (U must use 10-12 no’s), curry leaves, salt and turmeric powder.
When it starts boiling add fish pieces and cook  on medium fire.
After the fish is fully cooked, you can remove the Kokum from the gravy.
Step2
Dry roast coconut on a dry pan.
When its half done, add coriander seeds and dry red chili (8-10 no's) into this coconut. Simmer for 15 minutes or until fried well.Keep stirring occasionally.

Grind these into fine paste.
Step3
Heat coconut oil in a big vessel.
Crackle mustard seeds, fenugreek seeds and then add 2 red chilies.
Now add chopped onion/shallots.
Mix in ginger chopped.
Add some salt.
Now add the coconut paste and the gravy in which the fish was cooked. 
Let it boil for 3 minutes now add in fish pieces and excess water if needed.
Check the salt and add some more curry leaves to this.
Just bring it to a boil.
Very special traditional Kerala fish curry is ready!!!!!!!

Kerala Fish Fry(Pepper Fish Fry)


The cuisine of KERALA is very rich and has roots in the History, with a myriad variety of both vegetarian and non vegetarian dishes.
 Kerala food has a big role in attracting  tourists to Kerala as much as its scenic beauty.
Today’s recipe is authentic Kerala Fish Fry using whole pepper corns.
This recipe is inspired by the “Karimeen Pollichathu” (fish fry in banana leaf); we got from Kumarakam house boat.

You can find more delicious Kerala cuisine here.
We can use any fish, I used King Fish.
Ingredients
Fish – ½ kgs
Turmeric powder- 1 tsp
Red chilly powder-1/2 tsp
Green chilly -1 no
Garlic cloves-2 no
Pepper corns-2tbsp
Salt
Oil to fry
Method of Preparation
Marinate King Fish with salt, turmeric and red chilly powder and keep refrigerated for 15 minutes.
Make  a paste with
Whole Pepper corns, Garilc cloves, Onion, greenchilly and curry leaves.
Now apply this Paste and marinate again for ½ an hour.
Grill or fry the fish.
Yummy spicy fish fry is ready …!!
