Radish Kofta

Kofta is a Middle eastern and South Asian delicacy using ground meat(also called Meat balls.) This recipe is Radish Koftas ;a  vegetarian version of Kofta. Dry Koftas are served as appetizers ;but you can easily make a delicious curry,with  tomato or cream based gravy  served with koftas. My suggestion for the gravy which really goes well with kofta is here. Substitute Paneer in the above recipe with these Koftas and you will get a delicious ,rich party item. So  all coffee lovers out there,this recipe is for you.This is a method to make Instant Coffee with out using a coffee maker or filter ; You can use any instant coffee powder. “Come on, don't you ever stop and smell the coffee?”  ― Justina Chen Headley , North of Beautiful For 1 cup of coffee you need 2 tsp coffee powder or less as per your taste. A bit of hard work is needed. First add a spoonful of hot water and the required amount of sugar to the coffee powder and blend well with a spoon for 5-10 minutes or until the coffee turns thick and frothy as in the picture. Now it's quite simple.Boil milk and add the required quantity of coffee decoction into the milk.Serve hot. If you shake/whisk the milk to a really frothy consistency,coffee turns even better. Vegetable curry

Here'z a vegetable curry using yam and pumpkin . This nutritious,mildly spicy,tangy curry can be served with rice. Ingredients Yam- 100 g Pumpkin-100 g Mustard seeds-1/2 tsp Fenugreek seeds-1/2 tsp Asafoetida -1/2 tsp salt-to taste Shallots-6-8 nos Garlic -2 pods Turmeric powder-1/2 tsp Chilly powder-2tsp Coriander powder-1 tsp Coconut grated-1/2 cup Cumin seeds-1 tsp coriander leaves chopped Tamarind -soaked 2 tbsp Method Of Preparation Add 2 tsp oil to a sauce pan.Splutter mustard seeds,fenugreek seeds and saute shallots. Add the vegetables after cutting them in to cubes.Add turmeric,chilly ,asafoetida,salt and coriander powder and cook well in tamarind water. Add the garlic pods . Coarsely grind coconut and cumin seeds. Once the veggies  cooked well,add the coconut mixture,coriander leaves and saute well. Finally add some coconut oil on top and close the lid to lock the flavors. This is a really yummy side dish for rice. ENJOY!

This recipe is very Indian,delicious and flavorful. Lean Beef i s said to be very healthy; high in iron,protein and B-complex vitamins. This recipe uses very less oil.Beef supplies abundant amount of key nutrients needed for us especially children. Kerala beef ularth   is a must try dish when ever you get a chance.This is the same recipe;I had acquired from an expert cook and family friend. Well,those who don't eat beef,please ignore this post. INGREDIENTS Beef-250 g Whole Garam masala-powdered Ginger-garlic paste-1tbsp Onion-1 no Shallots -8-10 nos Curry leaves- Chilly powder-1-2 tbsp(as per your taste) Salt- Turmeric-1/2 tsp Coriander powder-2tbsp Meat Masala powder-1 tbsp Coconut -grated/pieces if available Mix all the ingredients with the beef (mixing with the hands is the best for this) Now in a pressure cooker,pour in 2 tsp oil(preferably coconut oil)and add the mix. Potato salad with pineapple recipe

Ingredients Potato-1 big boiled and cut into chunks Fresh Pineapple pieces-4 tbsp Cucumber-1 cut into small pieces Peanuts- Salt and pepper- Mayo-2 tbsp Milk-2 tsp Method Of preparation Mix all the veggies and drizzle some salt and pepper. Beat Mayonnaise and add in the veggies. Add some milk to adjust the thickness if needed. Serve topped with pea nuts ,to add the extra crunchiness. Very healthy and elegant salad is ready in minutes. Prawns and mango curry recipe

Prawns are the tastiest sea food according to me.Easy to cook,hardly needs 3-4 minutes cooking time.Though toasted prawns are really divine,today,sharing a yummy curry with Prawns which can be served with chapati/rice. Ingredients Prawns -500g Garlic paste-1/2tsp Mustard seeds-1 tsp Fenugreek seeds-1tsp Raw Mango-1 no Shallots-8-10 nos Coriander leaves- Curry leaves- Garlic -1 clove Salt and pepper Turmeric powder-1/2 tsp Dry red Chilly-4 nos Coconut oil-2tsp Grated coconut-1 cup salt-to taste Kokum-2 nos soaked in water-(discard the water after soaking)-OPTIONAL Method of preparation 1.Marinate Prawns with salt,pepper and garlic paste. 2.In a sauce pan ,heat 1 tsp oil and add mustard and fenugreek seeds.When it starts to splutter,add dry red chilies,shallots,1 garlic clove,salt,pepper,curry leaves and turmeric powder. After 2 minutes add in the coconut and fry it for a while. Now grind it to a fine paste

One pot meal recipe

This is an Indian Pulao with soya chunks.Really easy to make and with less oil too.For those who crave for biriyani, this one is for you: You can have this less oil pulao with out guilt.Replace rice with Pearl Barley  for a healthier treat. Mixing shallow fried soya chunks make this rich in protein. Soya chunks are so yummy,so,I prefer it as a side dish along with this the pulao rather than mixing it into the rice.. Spicy Sausage Spaghetti

This Italian recipe demands sweet Italian sausage.But I have used chicken franks that is widely available. Again,this is my personal recipe and I must confess,a personal favorite too. A secret ingredient that I have added to bring THE REAL taste is hmm...Is the Bolognese spice mix.....did I really say that...! Serve this spicy spaghetti with Garlic bread. Ingredients Italian Spaghetti-100g Olive oil- Dry Red chilly flakes-2 tsp Garlic chopped-2cloves Onion-1 medium,chopped Chicken/beef sausage-100g Oregano-1tsp Bolognese spice mix-1tbsp Tomato Puree-1/4 cup Salt and pepper- Parsely chopped Grated Parmesan cheese-1tsp Cooking Method Cook spaghetti in salt water along with a pinch of Oregano.It should be done al dente. Garlic cheese bread

Garlic bread is a favorite to almost all of us.Serve this along with Italian pasta/spaghetti and a healthy dinner is ready in minutes. You can serve this with Spaghetti Bolognese. Here I have made cheese garlic bread.Avoid cheese and it is still very tasty.Since we are using Olive oil,we can cut some calories there too. Ingredients Baguette (long thin Bread loaf )-1 no Olive oil-tbsp Garlic-2-3 cloves Parsley-chopped 2 tbsp Salt and pepper-to taste  Mozzarella cheese- Method of preparation 1.Cut Baguette  into 2 halves.Now slit each half longitudinally. 2.Make a Garlic Paste Blend garlic cloves,a pinch of salt and parsley with 1 tbsp olive oil. Make a fine paste.You can store this paste refrigerated  and can be used in many other recipes. 3.Apply this paste on the bread and toast it in an oven at maximum temperature.You can toast  on stove top too.
