Vegetable curry
Here'z a vegetable curry using yam and pumpkin. This nutritious,mildly spicy,tangy curry can be served with rice.
Ingredients
Yam- 100 g
Pumpkin-100 g
Mustard seeds-1/2 tsp
Fenugreek seeds-1/2 tsp
Asafoetida -1/2 tsp
salt-to taste
Shallots-6-8 nos
Garlic -2 pods
Turmeric powder-1/2 tsp
Chilly powder-2tsp
Coriander powder-1 tsp
Coconut grated-1/2 cup
Cumin seeds-1 tsp
coriander leaves chopped
Tamarind -soaked 2 tbsp
Method Of Preparation
Add 2 tsp oil to a sauce pan.Splutter mustard seeds,fenugreek seeds and saute shallots.
Add the vegetables after cutting them in to cubes.Add turmeric,chilly ,asafoetida,salt and coriander powder and cook well in tamarind water.
Add the garlic pods .
Coarsely grind coconut and cumin seeds.
Once the veggies cooked well,add the coconut mixture,coriander leaves and saute well.
Finally add some coconut oil on top and close the lid to lock the flavors.
This is a really yummy side dish for rice.
