Appam (Kerala recipe)

Ingredients Fine Rice flour--1 1/2 cups Yeast- 1/2 tsp dry yeast Coconut milk- 2-21/2 cups. salt-2 pinches Sugar-2 tbsp Cooked rice-2 tbsp Grated Coconut -2 tbsp Method of preparation 1. Take  2 tbsp Luke warm water,add sugar and dry yeast.Keep aside for 5 minutes .When it becomes frothy,add this to a blender along with rice flour,salt and 2 tbsp sugar.Add enough coconut milk and blend well.Add cooked rice and coconut into this and grind in to a fine batter.Consistency should be thinner than dosa batter,not too watery.Keep aside for 5-6 hours or until it gets fermented. Now,heat *Appam griddle.Keep it in simmer and add 1 big ladleful of batter.Swirl it and cook appam closing the lid.After swirling the griddle ,keep it on medium flame. Sweet Rice Balls

These are a healthy snack/Laddoo using brown rice and  Jaggery.   This is a tasty and healthy evening snack from the ancient recipe collections of south Indian state Kerala. Ari Unda/Rice balls Wishing all Indians a very HAP PY DIWALI. ..! It's again a festive season in our country INDIA.Diwali is the festival of lights.Every Indian around the world,celebrate this day,by  decorating their houses with lamps/diyas. Special sweets are also made on this auspicious day.  This recipe is simple ,hardly takes 10-15  minutes to prepare. Ingredients for Brown rice balls/Laddoos Par Boiled rice-2 cups Jaggery-1/2 cups grated Coconut grated-3/4 cup Cardamom powder-1 tsp Method Of Preparation Dry roast the rice until it crackles and turns golden completely.Refer the picture below for the exact texture. Fall has given way to winter.It's early winter this year.Pleasant climate almost all over the world...though there is worry and concern for the natural traumatic events in many parts of the world,life has to go on... Culinary world is one of those places where you are serene;here people are not prejudice in any ways nor there is thoughts of devastation... So for the next few minutes let's bask in some real cooking .. This time of the year is perfect for something spicy---This spicy Chicken curry is well known to many,but deepsrecipes is trying to simplify the method. Recipe for spicy chicken curry---Ingredients Chicken-200 g Onion-2 big Ginger garlic paste-1 tbsp Freshly powdered Garam masala-2tsp Coconut oil/cooking oil-2 tbsp Mint leaves-4-6 tbsp Coriander leaves-2tbsp Yoghurt-1 tbsp Meat Masala powder-1 tbsp Coriander powder-2 tbsp Chilly powder-1 tbsp(or less) Pepper powder- 1 tsp Green chilly ...

Vegetable curry

Here'z a vegetable curry using yam and pumpkin . This nutritious,mildly spicy,tangy curry can be served with rice. Ingredients Yam- 100 g Pumpkin-100 g Mustard seeds-1/2 tsp Fenugreek seeds-1/2 tsp Asafoetida -1/2 tsp salt-to taste Shallots-6-8 nos Garlic -2 pods Turmeric powder-1/2 tsp Chilly powder-2tsp Coriander powder-1 tsp Coconut grated-1/2 cup Cumin seeds-1 tsp coriander leaves chopped Tamarind -soaked 2 tbsp Method Of Preparation Add 2 tsp oil to a sauce pan.Splutter mustard seeds,fenugreek seeds and saute shallots. Add the vegetables after cutting them in to cubes.Add turmeric,chilly ,asafoetida,salt and coriander powder and cook well in tamarind water. Add the garlic pods . Coarsely grind coconut and cumin seeds. Once the veggies  cooked well,add the coconut mixture,coriander leaves and saute well. Finally add some coconut oil on top and close the lid to lock the flavors. This is a really yummy side dish for rice. ENJOY!

Prawns and mango curry recipe

Prawns are the tastiest sea food according to me.Easy to cook,hardly needs 3-4 minutes cooking time.Though toasted prawns are really divine,today,sharing a yummy curry with Prawns which can be served with chapati/rice. Ingredients Prawns -500g Garlic paste-1/2tsp Mustard seeds-1 tsp Fenugreek seeds-1tsp Raw Mango-1 no Shallots-8-10 nos Coriander leaves- Curry leaves- Garlic -1 clove Salt and pepper Turmeric powder-1/2 tsp Dry red Chilly-4 nos Coconut oil-2tsp Grated coconut-1 cup salt-to taste Kokum-2 nos soaked in water-(discard the water after soaking)-OPTIONAL Method of preparation 1.Marinate Prawns with salt,pepper and garlic paste. 2.In a sauce pan ,heat 1 tsp oil and add mustard and fenugreek seeds.When it starts to splutter,add dry red chilies,shallots,1 garlic clove,salt,pepper,curry leaves and turmeric powder. In Sanskrit, Vishu means equal. VISHU KANI Many states like Tamil nadu, Karnataka,West Bengal and Assam also celebrates New year on the same day. In Mangalore and Uduppi districts of Karnataka(they call it as BISU) celebrate their new year, in their own way. Up in the North and Punjab,their harvest festival is also on the same day and they call it Baisakhi. In Kerala,it’s a big celebration with fire crackers,Feast and very fabulous Vishu Kani. Indian Rice Pudding

I ndia is rich in its tradition and its festivals. We have a potpourri of festivals, not only connected with Gods and Goddesses, but also with wind, harvest and so on. Colors, sweets, firecrackers and flowers are an integral part of any festival in India. Sharing an Indian Rice Pudding recipe,apt for any occasion. This is a quick and easy method to make this dessert, which could take an hour to cook otherwise, if we follow the usual method. But taste is the same, I must say! So here we go! Ingredients Raw Rice -    ¾ cup Milk         - 1-1/2 liters Sugar – 1-1/4 cup Ghee – 2 tsp Cardamom – 2tsp Cashew nuts, Raisins – To garnish Method of Preparation Wash the rice and soak for 15 minutes. In a pressure cooker, add in milk, sugar, rice and powdered cardamom. Cook on high flame until 1 whistle. Simmer and cook for 20 minutes. Allow the pressure cooker to cool.
