Chinese Stuffed Bell Peppers




Today,at this happy occasion, sharing a Party recipe .
Stuffed Bell Peppers,Chinese version.We have many varieties of Stuffed Bell Peppers from different cuisines around the world.We have Spanish,Indian,Italian,Arabic,Mediterranean,Mexican,American and many more varieties with ingredients from their particular cuisine.

Let's go for the Chinese version.I am using potato and white rice as the filling,but traditionally,they use ground pork for this.So,all those vegetarians out there,this recipe is for you and of course,others can replace with pork/beef.
As always,I am not sticking to traditional recipe. I can guarantee the taste,Chinese flavor of the dish and also that this is cooked healthy.
Stuffed Bell Peppers Chinese


Ingredients we need
Bell peppers-Use more than one color (4 nos)
Cooked white rice-1 cup
Cooked &Mashed Potato- 1 cup
Soy Sauce-2 tsp
Oyster sauce- 1 tbsp
Salt & Pepper- to taste
Oil- 1 tbsp
Method Of Preparation

Step1


Cut bell pepper  and remove seeds.Steam it or bake it in preheated oven (at 180 degree C).Steaming them for 3-4 minutes would be perfect.
Step2
For  the filling 
Heat 1 tsp oil .Saute shallots and garlic in this hot oil.

Add in mashed potato and rice.



After adding the sauces,salt and pepper ,mix it well.Check the flavors.Stuffing is ready.
Step 3

Now stuff peppers with the filling,tight.



Now heat a non stick skillet,pour some oil (very little oil is needed).Place the peppers inverted with the top side in oil.
Alternatively,you can place the filled peppers in baking dish ,cover it with foil and bake for 20-25 minutes in the oven.

If you are using the stove top method as in the picture above,then after 2-4 minutes cook all sides of the pepper,lightly in the oil and serve hot.
You can even use slow cooker method for the preparation.Then you don't have to steam the pepper beforehand,cook them with the filling for 1/2 to 1 hour.

 Red bell peppers contain more Vitamins and nutrients,also contain antioxidant lycopene.Level of carotene is 9 times higher in red pepper than green.
Vitamin C helps in weight loss.So,incorporating boiled capsicum in your diet ,boosts metabolism ,hence weight loss.

Sweet Potatoes....!!
They are healthy,you all know that. But they help in weight loss too..Yes.

1.Replace white rice with sweet potatoes to get the real benefits of carbohydrates.
2. Add one sweet potato to your breakfast and see the benefits.
3. Sweet potatoes contain high fiber .It has low glycemic index ,so a good carbohydrate choice for diabetics.
Sweet Potatoes are really tasty even steamed or boiled.But to make it more interesting,especially,if you have a crave for french fries,you can bake them just sprinkling olive oil,salt & pepper.
Another healthy alternative is "Sweet Potato Chilli" here is the recipe:-

This tastes great and even can be served as a healthy party item.

Ingredients

1.Sweet Potatoes Boiled (half cooked) - It is easy to peel off the skin when half cooked.
2. Red Chilli Powder- 2 tsp
3.Salt-
4.Bell pepper-
5.Onion-1 no
6. All purpose Flour-1 tbsp
7.Oil- 1 tbsp

How to cook ?

Cut half cooked sweet potatoes into wedges .Coat the wedges with all the dry ingredients .No need to add water.
Shallow fry until crispy after adding bell peppers and onion .
Serve hot.

Spiced Finger Chips with Garlic Mayo

Spiced Finger Chips with Garlic Mayo-french fries

Another easy recipe from deepsrecipes-
But not a low fat recipe,this time.But this is a grilled version of the french fries,so,there is an excuse.
Break all the rules and binge.
This is extremely tasty,starter item.French fries are anybody's  favorite, especially kids.
Ingredients
Potato-2 nos
Chilly powder(Paprika )-1 tbsp or more according to your taste.
Salt-to taste
Plain flour-1 tbsp
Garlic powder-1 tsp
Oil-1 tbsp
Method of preparation
1.Cut the potatoes into  longitudinal strips.Boil water with salt and cook the potato strips for 3-4 minutes.
Remove from water and pat dry.
2.Mix all the dry ingredients with this potatoes and grill in 1 tbsp oil.
3.Serve hot with Garlic Mayo.

*Garlic mayo can be prepared by adding garlic powder into mayonnaise.
*You can use  frozen french fries to cheat the first step in this recipe.

Hot Fudge Pudding Cake


Hot chocolate fudge pudding recipe is a very simple dessert.Serve it with Ice cream if you like.But this as such is so delicious.Very few ingredients and so quick to cook.Here is the recipe.
90% of this recipe is adapted from Betty Crocker's recipe.
Ingredients
1.All purpose flour- 11/2cup
2.Sugar-3/4 cup
3.Baking powder-2tsp
4.Cocoa powder-2tbsp
5.Salt-1 pinch

6.Milk-1/2 cup
7.Veg.Oil-2tbsp
Brown Sugar-2tbsp
Cocoa-1/4 cup (for topping)
Hot water-1/4 cup
Method Of Preparation
1.Preheat oven to 180 degrees.
2. Mix dry ingredients from 1-5 very well.
Add in veg.oil and then milk and make a smooth batter.
3.Now spread this in an ungreased baking dish.
4.Make a layer of cocoa and brown sugar on this batter.
5.Now pour 1/4 cup very hot water on to this.Do not stir.


6.Now bake this for 30-40 minutes,until top part gets dry.
Serve this with Ice cream.

HAPPY MOTHER'S DAY TO ALL ..

On this special day,I am very glad to share a very simple kids favorite recipe:
Egg less Almonds&chocolate chip cupcakes.Really delicious and can be a great breakfast for the kids.




Ingredients
All purpose flour-1 1/2 cups
Whole meal-1/2 cup
Milk-1/2 cup
Sugar-1/4 cup
Chocolate chips-
Baking powder-1tbsp
Soda-bi-carbonate-a pinch
salt-a pinch
Oil-2 tbsp
Method
Mix the dry ingredients with a fork except chocolate chips.
Now add the milk and oil and mix well to a very smooth consistency just as cake batter.Add in chocolate chips,almond slices and mix carefully.
Preheat the oven to 190 degree Celsius for 5-8 minutes.
Pour the batter into muffin pan lined with paper cups and bake for 20-25 minutes.
This is an healthy and tasty way to show your love for your kids on MOTHERS DAY...!!
Also it's a great and easy job to decorate them if you have some extra time.

Vermicelli Rice

This is again a kid's favorite. Buttery rice with vermicelli .This can be a great and easy Party item too.So here's the recipe.
Ingredients
Long grain (Basmati) Rice-2 cups
Vermicelli-3/4 cup
Butter-1 tbsp
Salt-to taste
Method 
Wash and soak rice for 10 minutes.Fry it in 2tsp butter ,add 31/2 cups of water and then cook on medium fire.
Fry the Vermicelli in another spoon of butter.When it's brown,add very little water and let it cook well.Now add the cooked rice little at a time and mix well with the rice.Add salt to taste.
You can add some more butter on top.Mix well and serve hot.
Our special,delicious,buttery rice is ready !!!!

Short Bread Cookie

Classic Short Bread Fingers
This is the simplest cookie recipe .Rich,buttery,a bit crumbly and very tasty.I always wanted to try this recipe and finally  made it.
Ingredients
Flour-2 cups
Butter-125g
Powdered Sugar-1/4 cup
Vanilla essence-1 tsp

That's it..simple isn't it?
Method of Preparation
1.Beat butter and sugar until smooth and fluffy.Add in vanilla essence and mix well.



2.Add flour little at a time and mix a soft dough.


 Arrange a parchment paper in a baking tray.Spread the dough evenly on it.


3.Now with a knife make short bread fingers on the dough as you can see in the picture below.

4.  Prick each cookie with a fork.Picture explains this step well.

4.Sprinkle some powdered sugar on top.Bake at 170 degrees for 30-40 minutes or until the top is golden.Cool well so that it gets harden a bit .As you know,this should be not at all crispy,but soft and crumbly.

Serve it with Tea or a glass of Milk.

Yogurt Brownies (eggless )

Brownie recipe

Brownies contain no baking powder or baking soda.So considered to be healthier than cakes.
Combine different flours with all purpose flour thus making it a good wholesome meal.Kids love Brownies and it is so easy to make too.
Ingredients
Butter - 50 g
Powdered Sugar-3/4 cup
Chocolate syrup-1/4 cup
Flax meal-1 tbsp(You can use 1 egg instead of flax meal)
Yogurt-1/4 cup
Almonds crushed
All purpose flour-1 cup
Vanilla essence-1 tsp
Method of preparation
Melt butter and beat with powdered sugar and chocolate syrup.
Add in flax meal and yogurt .Beat well.Now add in vanilla essence ,finally flour.Beat well.
Fold in crushed almonds.
Bake at 180 degrees for 30-40 minutes or until a tooth pick inserted to the center,comes out clean.

Soft and delicious Brownies are ready to serve along with some Coffee.You can serve these brownies warm even with a scoop of Ice cream. So what are you waiting for! Binge yourself on some scrumptious brownies today.

Bell Pepper Dip

Nutritious yellow bell pepper dip and nachos..Excellent appetizer right? Easy party item especially for  kids party.
You can serve this dip with baguette slices,so that this can be given as a snack in their tiff-in box even.So I hope those who are looking for kids recipes would be happy with this.

Ingredients 
Bell Pepper-Red/Yellow
Mayonnaise/cream cheese-
Salt-
Garlic-1 clove
Dry Oregano-1 tsp
Onion-1/2 no
Paprika -2tsp
Lime juice-2tsp
(I am not mentioning the quantity of ingredients because in this recipe,leaving it to your taste)


Method of preparation
So easy to prepare.
Grill the bell pepper on direct flame or in microwave until blacked on all sides.
Once its roasted,remove its skin.Now grind all ingredients to a sauce.
Excellent creamy delicious dip is ready.
Serve it with Nachos or any other crackers or the veggies of your choice!!!.

Pasta with herbs~kids recipe

Pasta With Mixed Herbs n Cream
Wish you all a wonderful New Year 2012..

Pasta with Italian herbs …in cream..Yummy, right? Yeah, a bit heavy but a sure-fire kids pleaser.
And this would take hardly 5 minutes to prepare.
You can use fresh Italian herbs if you have it, great way to increase the flavor.
Very healthy preparation, very delicious…
Let’s start..
Ingredients
Wheat Pasta-1 cup
Mixed Italian Fresh Herbs-I used Thyme, Rosemary and Oregano-2tsp altogether.
(Try to include fresh Basil leaves, since it brings the real flavor of the cuisine.)
Butter-1tsp
Garlic-1 clove finely chopped
Heavy Cream-2tbsp
Onion-1/2 chopped
Walnuts crushed-Bountiful
Green Chili- 1 small   (Instead of chili,You can use white Pepper powder-)
Method of preparation
Cook Pasta according to packet instructions.
Heat a pan, add in 1 tsp butter.
Add garlic finely chopped.
Add in chopped onion and green chili.
Now add Salt to taste.
Next is herbs, mix for a while.
Add in Pasta and cream.
Now, add walnuts crushed to make this dish healthier.
Rich and creamy pasta ready in minutes.

Paneer Butter Masala


Paneer in Hindi means Cottage Cheese.
 “Paneer Butter Masala”is rich and creamy. You can serve it in Kids Party, since it’s mild and a bit sweet if you are following my recipe.
You can also make it spicy, the choice is yours.
This recipe is almost similar to Butter chicken in taste.
This recipe, is again, very simple since, I like to cook very fast and simple, I had to find out a short cut for this.
Try this out; it tastes the same as the one we get from restaurants.
Ingredients
Cottage cheese or Paneer – Cut into cubes-250 g
Cashew nuts-25g
Onion-2 medium
Tomato-2 medium
Green chilly-1no
Ginger-Garlic paste-1tsp
Cumin powder-1tsp
Kasuri methi or dry fenugreek leaves-bountiful
This flavor should be more in the curry.
Milk-1/2 cup
(I wanted to avoid extra calories to the dish; If You like, you can replace milk with cream to get richer and tastier royal dish)
Salt
Red chilly powder/Paprika-2tsp
Coriander powder-1tsp
Turmeric powder-1/2 tsp
Sugar-1tsp
Butter-20g
Preparation
Step1
Grind raw onion in a blender along with a green chilly to a smooth paste.
Now grind Tomato to smooth paste.
No need to blanch the tomatoes. As I already said, we are cooking in a hurry, you know...Don’t worry there is no compromise in the taste, I can tell you.
Step2
Melt Butter and fry the cashews. Keep aside.
Now lightly fry Paneer in the same butter and remove from the pan.
To the same butter add ginger garlic paste. Sauté for 2 minutes. Now add in onion paste and 1 tsp salt.
Let it fry in butter for a minute. Now add tomato paste and again fry this for a minute. Add in
Red chilly powder, coriander powder ,cumin powder and turmeric powder.
Now add 1 tsp sugar .Now add some kasuri methi leaves. These are dry Fenugreek leaves which are easily available in the market.
Now on medium high flame, keep the mix for 2-3 minutes. Oil (Butter) would start separating from it.
Now add ½ cup water and ½ cup milk.
Let it boil and then add Paneer cubes.
When the sauce thickens, add in Kasuri methi and bring to boil once more.
Serve hot with any kind of bread.

Triple Chocolate Pudding

Triple Chocolate Pudding

This is again an innovated recipe.
This is a very simple but very delicious Pudding for kid’s .As the name suggests, there are three kinds of chocolate flavor in this recipe.
Ingredients
1. Chocolate Biscuits- 8-10 (as per the size of the pudding dish)
2. Dark Cooking chocolate –
3. Melted Chocolate – 4 tbsp
4. Cream- 150g
5. Sugar – ½ cup
6. Vanilla essence- 1tsp
Method of preparation
It’s so simple. Beat cream with sugar until fluffy. Add in vanilla essence.
Arrange chocolate biscuits in a pudding dish; slowly pour ½ of the cream mix on top of the biscuits without disturbing them.
Now pour in a layer of melted chocolate.
Again very slowly, pour in the remaining cream mix .Now cover the pudding with grated chocolate.
Freeze for ½ an hour.
Delicious triple chocolate pudding is ready to serve.

Hey, it’s snack time!!!!
I always (to a certain extend) have tried to add some healthy recipes here .But snacking is real fun, and healthy snacking is good for our body also. Only thing is that, we should try to keep a time for snacking.
Avocado is Mexican in origin and packed with mono saturated fat.Avocado  speeds up metabolism and thus helps to loose weight.
Monounsaturated fats help lower LDL (bad) cholesterol while also boosting HDL (good) cholesterol.
This recipe is also called Guacamole.
You can serve this with Nachos/Tortilla corn chips.
Ingredients
Avocado – 2 numbers


Lime juice - 2 tsp


Jalapeno - 2 numbers
Salt- to taste
Onion- ½ medium sized
Cilantro – 1-2 tablespoon
Method
In a bowl, scoop out Avocado pulp; Mix lime juice and make it a smooth paste.
Add in finely chopped Onion, Jalapeno peppers, cilantro and salt. Make it a smooth mix using a fork.
If you are using picked Jalapeno (which is easily available), then pour in some of its syrup, to get more flavor.
(Optional: If you are planning this recipe  for a Party, then you can add 1table spoon cream to this dip, to make it rich and tastier)
Serve it chilled with Tortilla Chips/Nachos.
