Eggplant curry(Tamil style)


Indian curry tamil style


Another eggplant curry for Chapati/rice.Eggplant curry is a delicious side dish for chapati/Roti.
I used this Madras curry powder (1 tbsp) to get the real tamil restaurant flavor.

Indian cuisine uses a plethora of spices.Let us check out the ingredients for this quick curry.
Use Eggs if you don't like eggplant;yes,you can prepare a mouth watering egg curry using the same recipe.



What do we need ?
Eggplant- 4-5 nos (I used whole eggplant;make 2 slits with out breaking the eggplant as in the picture.This helps it to absorb the gravy )

Oil- 1-2 tsp
Cumin seeds- 1 tsp
Chilly powder- 2-3 tsp
(Mother's recipe)Madras Curry Powder- 2 tsp(use a mixture of  Fenugreek powder+Asafoetida,coriander powder if you can't find this ready made.)
Turmeric powder- 1/2 tsp
Tamarind puree-1tbsp
                                                        Salt-

For The Paste

Tomatoes-2 nos
Coriander leaves-
Green Chilly- 1 or 2 nos
Garlic cloves-4 nos
Blend them into a fine paste.

How To Prepare?
It needs very few ingredients and the method of preparation is quite simple.
1.Heat 1 tsp oil and splutter cumin seeds.
2.Add red chilly powder,turmeric powder and our special curry powder to the oil .
3.Now add eggplants and allow them to fry for a minute.
4.Then add the paste and coat eggplants with it and allow to cook until oil separates.

5.Add 1 tbsp tamarind paste,salt and enough water for the gravy.Close with the lid and cook well.
6.Add chopped coriander leaves and wait until you get a thick saucy consistency.
Serve hot with your favorite bread/rice.

Spicy Chicken Curry

Kerala's authentic spicy chicken curry

How about some spicy Chicken Curry with Ghee rice?


Fall has given way to winter.It's early winter this year.Pleasant climate almost all over the world...though there is worry and concern for the natural traumatic events in many parts of the world,life has to go on...
Culinary world is one of those places where you are serene;here people are not prejudice in any ways nor there is thoughts of devastation...
So for the next few minutes let's bask in some real cooking..
This time of the year is perfect for something spicy---This spicy Chicken curry is well known to many,but deepsrecipes is trying to simplify the method.
Recipe for spicy chicken curry---Ingredients
Chicken-200 g
Onion-2 big
Ginger garlic paste-1 tbsp
Freshly powdered Garam masala-2tsp
Coconut oil/cooking oil-2 tbsp
Mint leaves-4-6 tbsp
Coriander leaves-2tbsp
Yoghurt-1 tbsp
Meat Masala powder-1 tbsp
Coriander powder-2 tbsp
Chilly powder-1 tbsp(or less)
Pepper powder- 1 tsp
Green chilly -slit into half-1 no
Coconut milk-1/4 cup
Tomato- 1 big
Salt-to taste
Marinate
After cleaning the chicken with salt and vinegar,marinate with ginger garlic paste,freshly prepared garam masala,salt,mint leaves and some red chilly powder.
Method of preparation
Heat oil in a sauce pan.Saute onion chopped.Add some salt.When it turns to brown,add the tomato.Let it cook for a while.Now add half of the leaves chopped and the chicken.
Add the chilly powder,pepper powder,meat masala powder and coriander powder.
Keep stirring with out adding water for 5 minutes.
Now you can see the oil separates from the chicken.Now add 1 tbsp yoghurt and green chilly.
Pour very little water and cook the chicken well after closing the lid.
When chicken is fully done,pour in the coconut milk with the rest of the leaves and more pepper powder if you prefer.
Close the lid again until the gravy thickens and oil starts appearing on top.
Serve this with Ghee rice or coconut rice

Radish Kofta

Middle eastern Koftas,Indian Koftas with Radish

Kofta is a Middle eastern and South Asian delicacy using ground meat(also called Meat balls.)
This recipe is Radish Koftas;a vegetarian version of Kofta.
Dry Koftas are served as appetizers ;but you can easily make a delicious curry,with  tomato or cream based gravy  served with koftas.
My suggestion for the gravy which really goes well with kofta is here.
Substitute Paneer in the above recipe with these Koftas and you will get a delicious ,rich party item.
Ingredients
Radish-2 nos
Potato -2 nos
Corn flour-2 tsp
Salt ad pepper-
Oil-2 tbsp for shallow frying
Coriander powder-1 tbsp
Cinnamon Powder-1tsp
Cumin powder-1/2 tsp
Ginger-garlic paste-1tsp
Coriander leaves/mint leaves chopped
Method Of Preparation
Grate radish and you will get about 2 cups of the vegetable.
Boil potatoes and remove skin.
Heat a non stick pan and dry fry grated radish to remove excess water from the vegetable;radish contains lot of water in it.

Now add boiled and mashed potatoes and all other ingredients.Mix well and let it cook for a while.

Now if needed ,add the corn flour for easy binding.
Make balls from this and grill until golden brown.



If you are planning for Kofta curry,add Koftas to the gravy only at the time of serving.
ENJOY with Nan/rotis.

Theeyal Recipe (A spicy curry from Kerala)

This curry is called "Theeyal " ; One of the very delicious, spicy and savory curries from traditional recipe collections of Kerala. Kerala food is famous and much admired by all around the world. This particular recipe is popular in southern Kerala.
We can make theeyal with different vegetables or with Prawns instead of veggies.Today, I am giving you the basic Theeyal recipe with a combination of veggies.Here I use Bringal,bitter gourd and Onion.
INGREDIENTS
Bringal -cut into longitudinal sections-1/2 cup
Bitter gourd -cut into longitudinal sections -1/4 cup
Shallots (Or if its not available use Onion 1 big) -1/2 cup
Green chilies -4 nos-(slit into two).
Coconut oil-4tbsp
Grated coconut-1cup
Turmeric powder-1tsp
Chili powder-1tbsp
Coriander powder-2tbsp
Salt-to taste
Tamarind paste-1tbsp
Method of preparation
Step1
Make a masala paste.
In a shallow pan,pour 1 tbsp oil.Roast coconut.When its light brown in color,add in 1 tbsp coriander powder.Keep this on low flame for 10 more minutes.
Let it cool down a bit,then grind this into a fine paste.
Step2
Take a big vessel and pour 2 tbsp coconut oil. Lightly fry the cut veggies with green chilies.
Add in salt,turmeric,chili powder and remaining 1 tbsp coriander powder.Mix well and simmer.
Now pour in the tamarind paste along with 2 cups of water.
Let this boil and cook well.
Finally add in the coconut paste we have prepared.
Switch off once it starts to boil.
Tampering
Heat 1 tsp oil ,splutter mustard seeds and fenugreek seeds.Add in 2-3 dry red chilies and curry leaves.
Pour this over the curry and keep the lid on for 10 more minutes .
This curry is best with Prawns instead of veggies and served with white rice traditionally.

Punjabi Chole Recipe


Chole or Chana Masala
I got the typical Punjabi Chole recipe from SanjeevKapoor Khazana.Sharing this with you all.Punjabi vegetarian food is one of our favorite cuisines.Enjoy this mouth watering curry with butter-garlic nan or any bread of your choice.
Ingredients
Chole(white Chick pea or Garbanzo beans-1 cup soaked overnight)
ginger garlic paste -2tsp
Amchoor powder(Dry Mango powder)-1tsp
Onion big -2 no
Green chili-2 nos
Green Cardamom-2no,Cloves-2,cinnamon-1/2 inch piece.
Tomato paste-1/2 cup(Paste 2 big tomatoes in your blender)
Turmeric powder-1tsp
Red chili powder-1tbsp
Coriander powder-1tbsp
Cumin powder-1tsp
Method of preparation
Step1
In a pressure cooker,add 1 cup chickpeas,salt ,dry mango powder and 2 t-bags.
Add water.Water level should be  just above the chickpeas.
Cook until well done.
Discard the t-bags after cooking.This is to get a nice brown color to the peas.
Step2
In a sauce pan,add oil.Add the whole spices and ginger garlic paste.Saute well .Now add in chopped coriander leaves (1/4 cup).
Make a fine paste with Onion and green chili..Pour this in to the oil .
Mix all together .Add in tomato paste.Now add in the powders and salt.
Now add  1 tsp sugar and keep on medium flame until oil separates from the masala mix.

Now add the cooked chick peas with its stock.Check the salt and bring it to boil.When the gravy thickens remove from fire.
Tampering
Heat 1tbsp clarified butter .Add in some ginger and green chili .Pour it over this delicious Chole masala.
Garnish with Coriander chopped or ginger julienne.


Serve hot with any bread of your choice.

Eggplant Curry (North Indian Style)

Indian eggplant curry

Baingan Ka Bharta is a very simple North Indian eggplant dish eaten with rice or Indian breads.

Ingredients for the curry

Eggplants- 3 nos
Ginger-one very small piece
Garlic –3 cloves
Crushed garam masala-(Clove-2, Cardamom-2, cinnamon -2*1” piece)
Onion – 1 small size
Tomatoes- 2
Greenchilli-2
Chilli powder-1-1/2 tsp
Turmeric -1/2 tsp
Salt – to taste
Lemon juice-1 tsp

Preparation

Drizzle some olive oil/canola oil on the eggplants. Keep them in microwave high temperature for 4 minute. Cool and peel the skin. Mash them to a fine paste.

Now in a sauce pan, add 1 tabsp olive oil. Add crushed (Clove-2, Cardamom-2, cinnamon -2*1” piece) spices, ginger and garlic paste and fry well.
Add onion finely chopped. Add tomatoes, green chillies, turmeric powder, and chilli powder.
Fry for 2 minutes .Add mashed eggplant and salt.

This is the time you have to be really careful. Stir the mix and wait until the oil separates from it.

Now put a tsp of sugar and cook for 2 more minutes or until the colour turns dark brown.
Serve hot with Indian bread (Roti) or Rice.

(Variation:- You can add some cream to this to  make it more rich and creamy.)
