Lamb Keema Kathi Roll
 Kathi rolls are fast food popular in the Northern part of India.
I had tried Paneer(Cottage Cheese) Kathi rolls, and  thought to prepare it at home, with Mutton/Lamb Keema.
Keema is the minced Lamb or meat.
This is very simple and extremely delicious!!! 
Method of preparation
For Lamb Keema
Minced Lamb-400 g
Ginger -garlic-green chilly paste- 2 tbsp
Onion-2 no
Tomato- 1 big
Cloves, Cardamom, Fennel seeds, black cardamom-All powdered together-2 tsp
Salt –to taste
Red chilly powder-2 tsp
Coriander powder-1 tbsp
Pressures cook all the above ingredients after mixing thoroughly.
You can add ½ cup water also.
After  4-5 whistles ,Keema gets cooked.
Now open the cooker and you can evaporate any excess water. Now add 2 tsp oil and fry this mix in the same cooker. Add some pepper on top and keep it on medium flame for 6-7 minutes.
Now let’s make the Paratha.
Ingredients
Wheat flour-1/2 cup
All purpose flour-1/2 cup
Salt-
Water
Make thin Paratha’s or Chapattis .
Now keep the stuffing inside and pour some lemon juice and add some onion slices and chopped coriander leaves.
You  can add any salad vegetable, you prefer,Lettuce,greenchillies,bell pepper slices..Choice is yours. But don’t forget to add  raw onion slices and lemon juice since it enhances the taste.
Serve hot.

Kachori Recipe

Kachori is a common snack in various parts of India,including UP,Delhi,Rajastan,Maharashtra,Gujarat etc.
It is one of our favorite snack from Chopatti. 
Chowpatti is a Marathi word with the meaning 'beach'.
In India we can find tasty snacks in small shops called Chowpatti at the beach sides and road sides.

 When we make these snacks at home,we can choose good quality oil and fresh ingredients.Kachories are available in a variety of textures and tastes, balancing sweetness with spice and tang. This recipe courtesy entirely goes to Manjula Aunty of Manjula's Kitchen . A Gujrati snack made of yellow Lentil filling .( Also called Khasta Kachori)
Ingredients
Plain Flour ( Maida ) -- 1 Cup
Salt
Oil - 2 tabsp for dough
Oil to fry kachories
For Filling
1/4 cup moong (yellow lentil) soaked
fennel seeds-1tsp
whole coriander - 2tabsp
chilli flakes-1 1/2 tsp
ginger-1 inch piece
Asafoetida/ hing- a pinch
Mango powder/Amchoor - 1 tsp
Preparation Method
Mix 1 cup Maida ( Plain Flour) , 1 tsp salt and 2 tabsp oil into a crumbly mixture.
Add water slowly and make a dough , not too soft. Keep it for 1/2 hr .
Filling
Crush  Moong bean, fennel seeds,coriander seeds,ginger,salt, mango powder,chilli,hing together  in a mixer/grinder .
Now heat a pan ,add 1 tabsp oil . Roast the filling to remove the raw taste.add 2 tsp water to the mix and keep aside for 5 minutes.
Now make small puris , place a spoon of filling , and enclose the puri ,make it as a dumpling.Gently  press the dumpling and give a kachori shape.
Fry on medium heat .It will come out puffy , then turn it carefully to other side.
Remove onto absorbent paper and serve warm along with a cup of chai.
