Wheat Balls (Laddoo)

India...Is a Multi cultural society with many celebrations...Festivals...And  Laddoois an integral part of any Festival.
So here is a simple recipe for Wheat Laddu/Laddoo.This is a healthy Laddoo for kids especially. This recipe contains  wheat flour and nuts with some butter and sugar.Replace butter with low fat margarine and sugar with Jaggery/sugar substitute .Then this can be a completely healthy snack. So here we go.. Ingredients

Wheat flour (atta)- 2 cups
Sugar-Powdered-1 cup
Almonds-1/2 cup
Milk-2 tbsp
Butter/Margarine- 2-3 tbsp
Cardamom-2 nos

MethodOfPreparation  1.Heat a non stick pan and dry fry wheat for 3-5 minutes until light brown. 2.Now add the butter/margarine and mix well with a spatula.Butter should coat all the wheat flour nicely and let this fry for 3-4 minutes.Now a nice aroma emerges.

Chicken Dry Fry ~Low fat

Ingredients Chicken-500 gm Onion-1 big Ginger garlic paste-1 tbsp Coconut milk-2tbsp Tomato sauce-1 tbsp Oil-1-2 tsp Curry leaves Chilly powder-1tbsp Turmeric powder-1 tsp Coriander powder-1 tbsp Chicken masala powder- 1tbsp Salt- Method of Preparation Marinate chicken with Chilly powder,turmeric powder,coriander powder,salt and ginger-garlic paste. Pour 1-2 tsp oil in a grill pan and cook this marinated chicken really well.Now add chopped onion,curry leaves and chicken masala powder.Let this fry for a while. Now add 1-2 tbsp coconut milk and mix well.Stir continuously,after 3-4 minutes all the coconut milk will evaporate and you can find oil from the coconut milk. Now add in 1 tbsp tomato sauce. EGG PUFF..Everyone may have childhood memories connected with this snack?  Try this one at home,it's super simple and can be a good tea time snack. Serve hot egg puffs straight from the oven when your kids come back after school,what else can they ask for?Vegetarians,substitute egg with veg filling.So here is the recipe. Ingredients For the filling Eggs-3nos (Boiled) Onion-2 big Chilly powder-1tsp Pepper powder-1 tsp Salt-to taste Meat masala powder-1 tsp For the outer layer-Puff pastry sheets Method 1.Boil eggs.Cut them into half and sprinkle salt and pepper. 2.Saute chopped onion in 1 tsp oil.Add the powders and cook well.

Vanilla Cupcakes

Best and easy Vanilla cupcakes.Here is a recipe. Ingredients All purpose flour-1 1/2 cup Wheat flour-1/2 cup Baking powder -1 tsp Baking soda-1/4tsp Milk powder-2 tbsp Butter-2 tbsp Sugar-1/2 to 1 cup Vanilla essence-1tsp Chocolate chips-just for decoration. Method Whisk dry ingredients together. Beat butter,sugar and vanilla in a bowl. Add some(very little by little) water and combine the dry ingredients with this .Mix to get a fluffy thick batter.The quality of cupcakes depends on the amount of water you add. This is the consistency we need-
Now line paper cups in a muffin pan .Pour the batter to almost 3/4 of the cups .Add some chocolate chips on top for decoration.Flatten the top with a spoon.
Now bake at 190 degrees for 25 minutes. You will get well raised fluffy cupcakes.

Mutton Cutlet Recipe

Cutlets are a favorite evening snack..It is  perfect for an elegant dinner or lunch Party. This can be a healthy snack for kids,since here we are going to shallow fry these in very less oil. Ingredients Mutton Minced-200g Boiled Potato-1 big Ginger garlic paste -1 tbsp Onion -1 big chopped Green chilli-2 nos Cloves,Cardamom and Cinnamon-Powdered -1-2 tsp Turmeric powder-1 tsp Chilly powder-1tbsp Meat Masala Powder-(optional)-1 tbsp-This gives a very good flavor. Coriander leaves- Salt -to taste Oil-1 tbsp for shallow frying. Method 1.Cook minced meat with some salt and pepper. 2.Heat 1 tsp oil in a pan.Saute onion chopped ginger garlic paste and salt. Add minced meat.Now add in green chilly chopped,turmeric,chilly powder and meat masala powder. Saute well.After 2-3 minutes add in mashed potato and lots of chopped coriander leaves. Almond chocolate chip Cupcakes~Happy Mothers Day!

On this special day,I am very glad to share a very simple kids favorite recipe: Egg less Almonds&chocolate chip cupcakes.Really delicious and can be a great breakfast for the kids.

Ingredients All purpose flour-1 1/2 cups Whole meal-1/2 cup Milk-1/2 cup Sugar-1/4 cup Chocolate chips- Baking powder-1tbsp Soda-bi-carbonate-a pinch salt-a pinch Oil-2 tbsp Method Mix the dry ingredients with a fork except chocolate chips. Now add the milk and oil and mix well to a very smooth consistency just as cake batter.Add in chocolate chips,almond slices and mix carefully. Preheat the oven to 190 degree Celsius for 5-8 minutes. Pour the batter into muffin pan lined with paper cups and bake for 20-25 minutes. This is an healthy and tasty way to show your love for your kids on MOTHERS DAY...!! Also it's a great and easy job to decorate them if you have some extra time.


Vermicelli Rice

This is again a kid's favorite. Buttery rice with vermicelli .This can be a great and easy Party item too.So here's the recipe. Ingredients Long grain (Basmati) Rice-2 cups Vermicelli-3/4 cup Butter-1 tbsp Salt-to taste Method  Wash and soak rice for 10 minutes.Fry it in 2tsp butter ,add 31/2 cups of water and then cook on medium fire. Fry the Vermicelli in another spoon of butter.When it's brown,add very little water and let it cook well.Now add the cooked rice little at a time and mix well with the rice.Add salt to taste. You can add some more butter on top.Mix well and serve hot. Our special,delicious,buttery rice is ready !!!!

Fried Rice With Minced Meat

Fried rice comes from Chinese cuisine.But Chinese barely add minced meat to the Fried rice,but why not think out of the box? We can call this an Indo-Chinese fusion recipe. This particular dish turned out to be very tasty and satisfying.   Ingredients The Vegetables for Fried rice Onion- Spring onion Carrot-1no Bell pepper-1no Baby Corn- Ginger- Garlic-2 cloves And a)2 cups of Long grain rice. b)Garlic chopped c)Dry red chilly-crushed 2nos. d) Worcester sauce-1 tbsp For Keema(Minced Meat) Minced meat-250g Pepper-1 tbsp Salt- Ginger-garlic paste-1 tbsp Method 1.First cook Long grain rice. 2.Cook minced meat with salt,pepper,ginger-garlic paste and very little water .Keep aside. 3.In a wok,add 1 tbsp oil.Saute crushed garlic and dry red chilies. Now add all the veggies and 1 tsp Worcester sauce.When its half cooked add the prepared meat mixture and saute well until color changes to dark brown. South Indian Breakfast

Ingredients for dosa batter Raw Rice-3 cups Urad Dal-3/4 cup Fenugreek Seeds-2 tbsp Soak these ingredients in water for 5-6 hours. Grind into a thick batter.Add salt and keep it for fermentation (8-10 hrs).If you want to prepare this instantly you can add Eno fruit salt. Make small dosa on a tawa. For the chutney Coconut grated-1 cup Green chillies-2-4 no Garlic -2 cloves Ginger -1 small piece. Salt -to taste Shallots-2 nos Coconut oil-2 tsp Method of preparation Fry shallots and garlic in coconut oil.Add some curry leaves to this.Now grind all ingredients together.Very special delicious chutney is ready to serve with the dosa.
