Chicken Biriyani


'Thalassery Biriyani' is said to be the best biriyani in the world.Malabar cuisine itself is so delectable.
Biriyani is my favorite and after tasting all those varieties from different regions,here I have tried to renovate the best flavor of them all.This is my own  recipe with very very less oil. 
We can even make no oil  biriyani,but we have to compromise on the taste.So here the trial is without compromising on the taste how to recreate a healthy and simplified version of Biriyani.

Ingredients
rice- 2 cups(Basmati Rice/Khaima rice/if not available,use any long grain rice)
Chicken -8 pieces
Onion-4-6 nos
Ginger garlic paste-2 tbsp
Green chilly paste-1 tbsp
Fried cashew nuts and raisins-your choice
Pineapple-1/2 cups
Ghee-1 tbsp
Oil-2 tbsp
Milk-1 cup
Coriander and Mint leaves-chopped -bountiful
Mixed spice-freshly ground Cardamom,cloves,cinnamon,fennel seeds and black cardamom -2 tbsp
Salt-to taste
Yogurt-2 tbsp
Fried Onions-1 cup
Method
1.Soak rice for 15 minutes.Now wash it properly.Drain.
Khaima rice is perfect for this biriyani.
Now take a sauce pan,add 1 tbsp oil.Add the mixed spice powder.Now add 1 tsp ginger-garlic paste,1/2 tsp green chilly paste .
Add in rice and let it slightly fry for 2 minutes.
Add water enough to cover the rice .Add 1 tsp ghee,fried onion and pineapple pieces.
When this water drains,pour the milk and cook the rice.Do not let it cook well.
2. In a pressure cooker,add cleaned and cut chicken.Add Onion 1 chopped,ginger-garlic paste 1 tbsp,green chilly paste 1 tsp,turmeric powder 1/2 tsp,chilly powder 1 tbsp,mixed spice powder-1 tbsp,coriander powder-1 tbsp and salt.
Mix well with hands and cook it until 2 whistles.
Take a pan and add 1 tbsp oil.Add the cooked chicken and let the sauce thicken.Add  cup chopped mint leaves and coriander leaves,yogurt and 1/2 cup fried onion.Let it cook for 5 minutes.Finally add some mixed spice powder on top.
3.Now in an oven proof dish,layer 1/2 the portion of rice.Add 1 -2 tsp oil .Now add the chopped leaves,spice powder.Now arrange the chicken as the second layer .Next the rest of the rice ,fried onion,chopped leaves and 1 tbsp ghee.Close the dish and bake for 20 minutes at 180 degrees.
YUMMY ,slightly sweet rice with flavorful chicken is ready! Best for a holiday.

One pot meal recipe


vegetable Pulao with soya chunks,Indian pulao

This is an Indian Pulao with soya chunks.Really easy to make and with less oil too.For those who crave for biriyani,this one is for you: You can have this less oil pulao with out guilt.Replace rice with Pearl Barley for a healthier treat.
Mixing shallow fried soya chunks make this rich in protein. Soya chunks are so yummy,so,I prefer it as a side dish along with this the pulao rather than mixing it into the rice..

Here are the stuffs you need for making this wonderful dish.
1.Basmati rice/Pearl Barley-1cup
2.Mixed vegetables of your choice-(Potato,carrot,Beet root,beans,cauliflower,peas)-1cup
3.Yoghurt-2tbsp
4.Oil-1tsp
5.Ghee-1tsp
6.Coriander leaves,Mint leaves-
7.Fried Onion-(Optional.But it adds the flavor)-2 tbsp
(Croutons- 1/2 cups-optional)
8.Sugar-a pinch
9.Onion-1small chopped
10.Ginger garlic and green chillly paste-1-2 tsp
11.Salt ,pepper-
12.Soya chunks-1/2 cup
(Chilli garlic sause-1tbsp)
13.Biriyani Masala/Garam masala
14.Fried raisins and cashew nuts
Method of preparation
Soak rice for 10 minutes,wash and drain.
In a big non stick pot,add 1 tsp oil and saute ginger garlic and green chilly paste.Now add the rice and fry it for a minute.Add all the cut vegetables,salt and biriyani masala/garam masala.
Now add the leaves ,yoghurt,salt,pepper powder and sugar.Add 31/2 cups of water .Add some fried onion and croutons into this ,close the lid and cook the rice until done.
When  the rice along with all the vegetables is cooked together,add the 1 tsp ghee and some more fried onion along with leaves.

Soak soy chunks in water. Squeeze off the absorbed water and repeat the soaking process 2-3 times.
This is to remove the unpleasant smell from the soy chunks.
Now marinate dry (water should be squeezed off well from the chunks)soy with salt,pepper and chilly garlic sauce.

Now in another pan ,shallow fry this using very little oil.
Shallow Fried soya
Mix this along with the rice or serve as a side dish.
Garnish with croutons,raisins and cashew nuts.
ENJOY with Raita/Yoghurt salad.
