Avocado Salad


Avocado Salad

Healthy Salad recipes can be a treat .Experiment this quick Avocado salad with ingredients you prefer like almonds,pine nuts etc.
Avocado contains good cholesterol (HDL) with great taste.

Preparation time: 10 mins
Cooking time: No Cooking( takes 2 minutes to blanch Broccoli if using)
Serves: 4
Ingredients

1.            Mixed salad veggies- Broccoli,Cucumber,Baby spinach, ,red Onion
2.            1 Avocado , peeled, cubed
3.            Coriander leaves
4.            1 tbs Lime Juice
5.            Salt & Pepper
6.            Garlic- 1 clove
7.            Olive oil- 1-2 tbsp
8.            Strawberries

Blanch Broccoli
Boil water with a pinch of salt and vinegar.
Let broccoli florets blanch in this boiling water for a minute.

Salad Dressing- Cilantro Lime Vinaigrette
Cilantro Lime Vinaigrette is a simple yet delicious as well as healthy salad dressing.

Method

1.            Cut all the veggies into small cubes. Add blanched broccoli. 
2.            To make Cilantro-Lime Vinaigrette
Puree coriander leaves, garlic,lime juice, salt ,pepper and olive oil in a blender until smooth.

3.            Top the veggies with this dressing and serve chilled.

Select dark green  or even pale green.Never choose yellow.Greener the Broccoli,more beta-carotene it has.Stalk should be fat and woody.

 What you need ?

1. Broccoli florets blanched-
2. Olive oil
3.Garlic- 1 clove
4.Sesame seeds- Optional
6.Salt & Pepper
7.Vinegar- 1-2 tsp
8. Honey- 1 tsp
9.Almonds-

How to Prepare?

Make a dressing with Olive oil,vinegar and honey.Whisk well.
Add in salt,pepper and crushed garlic.
Mix well for a minute.
Toss in broccoli and serve topped with almonds and sesame seeds .

Tabouli Recipe

Tabouli is very healthy Arabic salad using Parsley leaves as main ingredient along with cracked wheat( burgol),olive oil,garlic ,mint leaves and other ingredients.Parsley leaves are rich in anti oxidants,vitamins and fibre.Medical science say that this magic herb helps in controlling blood cholesterol.
Ingredients

Parsley leaves -finely chopped 1-2 cups
mint leaves-2 tbsp
Garlic-1 clove crushed
Olive oil- 1 tbsp
Cracked wheat (burgol)-1/2 cup (Soak in warm water and it absorbs water and gets soft.No need to cook)
Tomatoes-1-2 as per your taste
Onion-1 chopped
Cucumber,Lettuce -
Olives-Black/green-chopped
Lemon juice-
Mix all vegetables with salt and lemon juice.Drizzle Olive oil and add burgol and toss well.
Serve chilled.

Potato salad with pineapple recipe

Ingredients
Potato-1 big boiled and cut into chunks
Fresh Pineapple pieces-4 tbsp
Cucumber-1 cut into small pieces
Peanuts-
Salt and pepper-
Mayo-2 tbsp
Milk-2 tsp
Method Of preparation
Mix all the veggies and drizzle some salt and pepper.
Beat Mayonnaise and add in the veggies.
Add some milk to adjust the thickness if needed.
Serve topped with pea nuts ,to add the extra crunchiness.
Very healthy and elegant salad is ready in minutes.
Serve this in parties too .

I used Cucumber,Carrot,strawberries,grapes and Kidney beans-1 cup

3.Honey-1tsp
4.Salt-a pinch
5.Vinegar/lime juice-1tsp

Cut all the veggies and fruits.Sprinkle salt,honey and Vinegar .Add almonds.Mix everything well.

Potato Salad with Mint and Veggies

Healthy Salad with Potato-Classic American salad
This Potato Salad is an innovated recipe inspired from the Classic Potato Salad, just to make it healthier with many veggies, rather than only Potatoes. And the Mint gives it a unique flavor that no one can resist.
Ingredients
Potatoes – 2 Large ( Cooked and Mashed)
Chopped Veggies (of your choice) – 1 small cup
(I used Cucumber, carrot & Bell Pepper)
Mint leaves chopped – ¼-1/2 cup
Mayonnaise – 1 -2 tbsp
Hard Boiled Eggs – 4 no
Salt
Paprika
Method of Preparation
Mix all the veggies with mashed potatoes. Don’t forget to slightly crush the mint leaves while mixing.
Add in salt.
Mix this with 2 tbsp of Mayonnaise .
Mix  in eggs.
Sprinkle Paprika powder on top.
Cover and refrigerate to blend flavors.
