Butter Chicken

Butter Chicken Punjabi
Butter Chicken with Jeera(Cumin flavored) Rice.

Butter chicken is one of the most popular dish from India.

Silky,creamy gravy with boneless chicken pieces.What else you can ask for!This sinful curry has always been one of the kid's favorites.
You can get thousand's of recipes for butter chicken on the internet with slight variations.But this recipe of mine is really simple ,developed by sheer experimenting.I can guarantee that the taste is just the same as the one you get from restaurants.
So here we go..
Ingredients
Boneless chicken -500g
Butter-25g
Onion -2 medium sized
Green Chili -2 nos
Ginger Garlic paste-2 tsp
Cardamom powder-1tsp
sugar-1tsp
Tomato puree-1 cup
Yogurt-1tbsp
Red food color-(Optional )-2 drops
Dry Fenugreek leaves-a pinch
Cream-2 tbsp
Red chili powder-1 -2 tsp
Coriander powder-1 tsp
Fresh Cilantro- bountiful
Cumin powder-1 tsp
Method of preparation
Step1
Marinate boneless chicken with a pinch of chili powder and salt.(Keep aside for 1/2 hr )
Lightly fry this in 1 tsp butter.Keep aside.
Step2
Make a fine paste of onion and green chili.
In a sauce pan,melt butter.Add in ginger garlic paste.Fry it until light brown.Now saute onion paste for 3 minutes.Now saute 1 cup tomato puree.Add salt,red chili powder,cumin powder,coriander powder.
Add yogurt into this and saute until oil separates.Add the chicken pieces.
Now add in 1 tsp sugar and fenugreek leaves(Kasuri methi).
Add in enough water for a thick gravy .
Boil until chicken is well done and the gravy starts thickening.
Add 1tsp cardamom powder and 2 tbsp cream(U can reduce the amount of cream,or even replace it with milk)
Add plenty of cilantro.

Finally add 2 drops of food color if you feel the gravy is not very reddish.

Easy Vegetable Rice~kids recipe

This is a quick and simple biriyani or very healthy, vegetable rice.
My son was told to bring vegetable pulao for a potluck kid’s party. I made this item for the kids.
They enjoyed it, since it’s less spicy and having an appealing smell of Mint leaves and other spices.
This is nicer when it’s cold, so u can even send this in the lunch box for the kids who like rice.
Ingredients
Vegetables-Carrot, beans, corn, Onion, Tomato, Cabbage-1/2 cup
Rice-2cups
Ghee-2tsp
Oil-1tsp
Mint leaves-1/2 cup
Yogurt-1tbsp
Ginger-garlic-green chili paste-1tbsp
Salt-to taste
Sugar-1tsp
Saffron-4-5 strands (Optional)
Cashews, Raisins-
Black Cardamom, cloves, Fennel seeds, Cinnammon-Powdered 1-2 tsp
Method
Cook rice after adding water just to cover it.
Don’t overcook.
In a non stick cookware, add 1 tsp ghee and fry cashews and raisins and keep aside.
Add 1 tsp oil to the same dish; now add ginger-garlic-green chili paste.
Now add the spice powder.
Add in the chopped veggies. No need to add water. Instead add 1 tbsp yogurt and cook the veggies. Add in salt and plenty of mint leaves.

Add a pinch of turmeric, red chili powder and coriander powder. (This step is optional, if adding, just add only very little)
Don't forget to add 1 tsp sugar,this step gonna enhance the flavor.
When it’s almost dry, add cooked rice, saffron, salt and remaining ghee.
Mix well.
Once it’s warm, serve with raita (Yogurt Salad).
Your family would love this delicious rice.
