Vegetable hakka noodles

Hakka noodles is my favorite food.Recipe is solely my innovation.Please try this and enjoy,it's so simple and extremely delicious.
I use a grill pan for assorting veggies and noodles so that I get a fried texture even with very less oil.
I have used dark soy sauce hence the color.
Ingredients
Noodles-3 packs
Veggies-Carrots,Peas,Bell peppers,Sprouts and spring onion
Oil-1 -2 tsp
Soy sauce-1-2 tsp
Worcester sauce-1 tsp
Vinegar- 2 tsp
Salt- 1 tsp
Green chilles-2 nos
Garlic-2 cloves
Ginger -Cut longitudinally
Red chillies(dry)-1 no
Method of preparation
Cook noodles according to packet instructions.
Heat oil in a grill pan and saute crushed garlic and dry red chilly.
Saute veggies in this  oil.
Add ginger and green chillies.
Now add the noodles along with 1 cup water in which it was cooked.
When everything get cooked and dried,add the sauces and allow it to fry for 3-4 minutes.
Garnish with spring onions.

Chop Suey(Only Veg)

Classic American chop suey consists of elbow macaroni and bits of cooked ground beef with sautéed onion and green pepper in a thick tomato-based sauce.Though this decidedly American comfort food is clearly influenced by Italian-American cuisine, it is known as a chop suey because it is a combo meal with meat and vegetables.
 But my recipe is Chinese-American Chop Suey with only vegetables and Noodles instead of Pasta.
You can add chicken or meat and chicken stock instead of vegetable stock.
(Chop suey has become a prominent part of American Chinese cuisine, Filipino cuisine, Canadian Chinese cuisine, Indian Chinese cuisine, and Polynesian cuisine. In Indonesian Chinese cuisine it is known as Cap cai)
This recipe consists of simple 3 step process.
Step1
Cook the noodles with salt.
Heat oil in a frying pan and deep fry this cooked noodles.
Noodle should be added little by little and in a way that after frying it should resemble a bird’s nest.
Step2.
This step is making the Chop suey sauce with all the veggies and chicken if you are using.
Ingredients
1. Ginger-1tsp finely chopped
2. Garlic-1tsp finely chopped
3. Onion-1 medium sized
4. Carrot-1 no
5. Bell Pepper-1 no
6. Spring Onion /celery- 2 tbsp
7. Cabbage-4 tbsp
8. Veg stock/water-2tbsp
9. Salt & Pepper
Sugar-1tsp
10. Tomato sauce-bountiful
 & Worchester sauce-1tsp
Method of preparation
In a wok, add in 1tbsp oil.
Add in chopped ginger, garlic, onion and spring onion and sauté well.
Now add all the veggies (you can add your selection of veggies), just sauté in high flame.
Add 1 tsp sugar.
Add generous amount of Tomato sauce and just 1 tsp Worchester sauce.
Add in salt, pepper and stock.
Cook until al-dente.
Step3
In another pan add 1 tsp oil and fry 1 egg .This is served as a topping to the chop suey.
Serve hot.

Spaghetti Bolognese

Italian spaghetti with meat and bolognese sauce
Looking for a hot hearty meal for one of those rainy or winter nights?
Here is a suggestion.This is a quick method to make spaghetti bolognese.
Ingredients
Olive oil - 2tsp
Minced chicken sausages-5 nos
Onion-1 Large sized ,finely chopped
Garlic - 3 cloves
Green chillies-2
Tomatoes- 2 medium sized
Bay leaves-2
Thyme-1 tsp
Oregano-1tsp
Salt - to taste
Pepper powder -2 tsp
Preparation Method
1.Cook spaghetti in plenty of  boiling salted water.Till done al dente.
Drain and apply butter.
2.In a heavy-based saucepan add 2 tsp olive oil and saute  minced sausages ,bay leaves,chopped garlic, salt and thyme for 4- 5 minutes.(Instead, if you want to follow traditional method ,use minced meat or chopped bacon.)
Add finely chopped onion and green chillies.Cook until onion turns soft .Now puree 2 fresh tomatoes in a blender and add them .
Add pepper powder,cook for 3 -5 minutes.Finally add oregano.
Now pour this Bolognese sauce over the spaghetti.
Serve hot.
