Simple Lunch recipe-Phulka with Vegetable curry

Phulka with Veg Curry-
Simple phulka with vegetable curry.What's new in it? Yes,I know. But,today's curry is a little bit different from the usual veg curry. It's thick with a variety of vegetables and packed with nutrition.We are serving this with Phulka and kheer/payasam as dessert.

Trust me,this combination when served hot, is really mind blowing and this is definitely  my son's favorite lunch.

Since phulka recipe is already there,let's check what's the little twist in veg curry.

Ingredients for Veg.Curry
Violet cabbage- 1/2 piece
Onion-1 medium
Carrot-1-2 nos
Bell pepper- 1 big
Green Peas (Mattar)- 1/2 cup
Thick Coconut milk- 4 tbsp
Red chilly powder - 1/2 tsp
Garam Masala powder with coriander powder- 2 tsp
Mint leaves-
salt-
Turmeric powder- 
Method Of Preparation
Chop all vegetables-Cut carrot in to cubes.
Now Stir fry everything in Olive oil.
Close the lid and allow it to cook.If needed,add 1/2 cup of water.
When the veggies are half cooked ,add salt and all the spices.
Again close the lid and cook until done.It will take hardly five minutes to cook .
Finally add some coocnut milk and serve hot with Phulkas or any bread of your choice.

Fish Curry (Sardine Curry)

Sardine is a small oily fish,rich in nutrients.
Ingredients
Sardines -500 g
Onion-1 big (make a paste)
Ginger-paste -1 tbsp
Chilly powder-1tbsp
Fenugreek(Methi seeds)-1 tsp
Mustard seeds-1 tsp
Curry Leaves-
Dry red chilly-2-3 nos
Raw mango- 1 cut into small pieces.
(Use Kokum(2-3 nos) if you don't find raw mango.)
Oil-2 -3 tsp
Method Of Preparation
Heat a non stick skillet or sauce pan.Add 2 tsp oil-Splutter mustard seeds.Now add in fenugreek seeds,dry red chilly and curry leaves.When they become slightly brown,add in the ginger paste.Fry this well.
Now add in onion paste.After 2 minutes add in turmeric powder,chilly powder and salt.Keep stirring until oil separates .Now add the fish pieces.Coat the fish with the sauteed masala.Let fish fry a little.
Lightly Fry the fish with all the masala-
Now add 11/2 cups of warm water,mango pieces and more salt if needed.
Once its cooked well(in 3-4 minutes) and gravy is thick,add 1 big spoon of coconut oil and curry leaves on top.
Close the lid to lock the flavors.

Yummy,tangy,delicious and nutritious fish curry is ready to serve!!!

Punjabi Chole Recipe


Chole or Chana Masala
I got the typical Punjabi Chole recipe from SanjeevKapoor Khazana.Sharing this with you all.Punjabi vegetarian food is one of our favorite cuisines.Enjoy this mouth watering curry with butter-garlic nan or any bread of your choice.
Ingredients
Chole(white Chick pea or Garbanzo beans-1 cup soaked overnight)
ginger garlic paste -2tsp
Amchoor powder(Dry Mango powder)-1tsp
Onion big -2 no
Green chili-2 nos
Green Cardamom-2no,Cloves-2,cinnamon-1/2 inch piece.
Tomato paste-1/2 cup(Paste 2 big tomatoes in your blender)
Turmeric powder-1tsp
Red chili powder-1tbsp
Coriander powder-1tbsp
Cumin powder-1tsp
Method of preparation
Step1
In a pressure cooker,add 1 cup chickpeas,salt ,dry mango powder and 2 t-bags.
Add water.Water level should be  just above the chickpeas.
Cook until well done.
Discard the t-bags after cooking.This is to get a nice brown color to the peas.
Step2
In a sauce pan,add oil.Add the whole spices and ginger garlic paste.Saute well .Now add in chopped coriander leaves (1/4 cup).
Make a fine paste with Onion and green chili..Pour this in to the oil .
Mix all together .Add in tomato paste.Now add in the powders and salt.
Now add  1 tsp sugar and keep on medium flame until oil separates from the masala mix.

Now add the cooked chick peas with its stock.Check the salt and bring it to boil.When the gravy thickens remove from fire.
Tampering
Heat 1tbsp clarified butter .Add in some ginger and green chili .Pour it over this delicious Chole masala.
Garnish with Coriander chopped or ginger julienne.


Serve hot with any bread of your choice.

Okra in Yogurt (Bhindi Kadhi)



India is rich in its variety of culture, food habits and what not...
This recipe is called Kadhi and it is from the Indian state Gujarat. Basically, Kadhi means thick gravy using yogurt, chickpea flour etc.Kadhi is an every day food  in many  northern parts of India.

It’s very healthy, since it has Protein from the Chick pea flour, Calcium from yogurt and Vitamins from the veggies .It’s a good combination with plain rice.

Okra or Ladies finger is packed with nutrients.
Health Benefits of Lady's Finger:
1. The vegetable is a good provider of good bacteria called the probiotics. Probiotics helps in biosynthesis of vitamin B.
2. It is said that Ladies Finger is anti-diabetic. Means it helps to reduce the blood sugar.
3. It helps in healing acid reflux.
4. Also it helps in reducing he risks of diseases like Cancer.
This Curry is so very tasty; I got real appreciation from all in my family. So you can give it a try.
Ingredients
Okra (Ladies Finger) - 200 g
Yogurt – 1cup
Chick pea flour (Besan)-2 tbsp
Water – 3 cups
Salt – to taste
Oil – 2 tsp
Clarified Butter – 2 tsp
Mustard Seeds- 1 tsp
Turmeric powder-1/2 tsp
Clove, Cinnamon powder- 2 tsp
Green chilly paste- 1tsp
Ginger-garlic paste – 1 tsp
Fenugreek powder- ½ tsp
Curry leaves and Coriander leaves Chopped– 4 tbsp
Method of Preparation
Cut Okra  lengthwise.
1. Blend 1 cup yogurt, 2 tbsp chick pea flour, turmeric powder, salt and 3 cups water using a hand blender.
2. Heat oil along with clarified butter and splutter mustard seeds.
3. Add all the ingredients and okra.
4. Fry Okra and cook for 5 minutes
5. Finally add the yogurt-chickpea mixture.
6. Keep stirring on a low flame to prevent curdling.
7. Make sure the chick pea flour has cooked well .Simmer for 3-4 minutes. The sauce thickens.
8. Finally, u can add some chopped ginger.
9. Serve hot.

Egg Curry in Bell Pepper sauce

Egg Curry

Today's recipe is a very simple Egg Curry with a twist from usual recipes.
This one is the result of my experiment with bell pepper,eventually turned out very tasty.
Serve this thick delicious curry with Chapatti or Phulka (Puffed Indian bread)
Bell Peppers!!!They are packed with Vitamin A, C&B6 with a significant amount of folate in it.
Red bell pepper has lot more nutritive value than the green variety.
They are even considered as fat burning food, due to its high fiber content. There is no Fat, No Sodium, and No Cholesterol in Bell Peppers.
However, I don’t think the taste of bell pepper is appealing to the kids.
So today let’s make a curry sauce rich in all the above nutrients.
So shall we start?
Ingredients
Bell pepper-1 no medium sized
Onion-1 no medium sized
Powdered spices:Clove,cinnamon and fennel seeds.
Garlic paste-1tsp
Chopped Coriander-1/2 cup
Turmeric powder-1/4tsp
Chili powder-1-2tsp
Fenugreek powder-1/2 tsp
Sugar-1tsp
Coconut milk-2tbsp
Eggs-
Method of Preparation
1. First grind 1 raw, medium sized pepper into a paste.
2. Now make a paste from 1 raw onion.
3. Heat 2 tsp oil in a saucepan.
Add powdered Clove, Cinnamon & Fennel seeds.
4. Add 1 tsp Garlic paste.
5. Add in onion & capsicum paste. Mix and fry with Salt to taste.
6. Add turmeric powder, chilly powder, coriander powder and a pinch of Fenugreek powder.
7. Add 1/2 cup of chopped coriander leaves.
8. Add some water and 1 tsp sugar. Wait until oil separates.
9. Add enough water for thick gravy and boil it well.
10. Add boiled & peeled eggs.
11. Finally add in 2tbsp thick coconut milk.

Serve hot with Chapatti,Phulka or any Bread of your choice.

Soy Chunks Curry

Here is a simple recipe using Meal maker or Soya Chunks.
Is Soy healthy? It’s a topic of debate today. In my opinion, we can take it once in a while, not making it part of our every day diet. This fact applies to Tofu or any other Soy product.
Soy has good Protein content in it. Let’s enjoy a simple and delicious curry, which can be served with any kind of Bread.
Shall we start?
Ingredients

Soya chunks – 1 cup
Onion - 1 big
Tomato - 1 Big
Ginger-Garlic paste- 1 tsp
Cardamom and cinnamon – powdered 2 tsp
Turmeric powder- ½ tsp
Red chilly powder- 2 tsp
Coriander powder – 1 tbsp
Tomato sauce – 1 tsp
Cilantro – To taste
Sugar - 1 tsp
Milk-4tbsp
Salt - To taste
Method of preparation
Step1
Wash Soy chunks and soak it in cold water for 15 minutes. Squeeze the water off .
Boil a cup of water with a pinch of Salt. Cook Soy chunks well, squeeze off any remaining water from it.
Or, you can Pressure cook it until 1 whistle on high flame.
Step2
Blanch 1 big sized onion and a Tomato in 1 cup of boiling water for 5 minutes.
Cool and grind them separately to a fine paste.
Step3
In a sauce pan, heat 1 tbsp vegetable oil (Canola oil).
Add ginger-garlic paste, fry well.
Add in onion paste, cook for 3 minutes. To this add Salt and Cilantro chopped.
Mix in Tomato paste and all other powdered Spices, cook for 2-3 minutes. Add one tsp of sugar and keep it on low flame until oil separates. To this, add 1 tsp tomato sauce.

Mix cooked Soya chunks into this paste and add 1 cup of water to it.


When it starts boiling, add 4 tbsp Milk and cover and cook for 5 minutes on low flame until gravy is thick.
Garnish with Fresh Cream and serve it with Chapati,Nan or any other bread.
