Vegetarian Cacciatore Recipe

Vegetarian Cacciatore
Cacciatore is a classic Italian Sauce..( basic recipe Courtesy : Laura Vitale.)

Ingredients

Bell pepper : (Yellow) -1 no
Onion -1 big cut into cubes
Egg Plant- Cubes 1 cup
Garlic- 4 cloves
Red Wine/veg.stock - 2 tbsp
Italian Tomato pureed- 1 cup (I used  Sacla Italia )
If it is not available,just puree 2 big red tomatoes.
Fresh Basil-
Salt & Pepper-
Olive Oil

How To prepare this tangy nutritious sauce?

Heat a sauce pan and add 2 tbsp Olive oil and lightly fry eggplant pieces and onion slices. You can add some salt and basil at this stage.
Once it is half cooked add garlic and bell pepper cubes.
Once everything is browned add red wine,if you are using.Or else you can add the tomato puree.
Mix well and allow to cook with out lid.Add salt and pepper as required.When the sauce is thickened ,it is ready.GArnish with chopped basil.


Boil water with salt and cook your favorite pasta/spaghetti.
Serve veg Cacciatore with spaghetti.

Chicken Biriyani


'Thalassery Biriyani' is said to be the best biriyani in the world.Malabar cuisine itself is so delectable.
Biriyani is my favorite and after tasting all those varieties from different regions,here I have tried to renovate the best flavor of them all.This is my own  recipe with very very less oil. 
We can even make no oil  biriyani,but we have to compromise on the taste.So here the trial is without compromising on the taste how to recreate a healthy and simplified version of Biriyani.

Ingredients
rice- 2 cups(Basmati Rice/Khaima rice/if not available,use any long grain rice)
Chicken -8 pieces
Onion-4-6 nos
Ginger garlic paste-2 tbsp
Green chilly paste-1 tbsp
Fried cashew nuts and raisins-your choice
Pineapple-1/2 cups
Ghee-1 tbsp
Oil-2 tbsp
Milk-1 cup
Coriander and Mint leaves-chopped -bountiful
Mixed spice-freshly ground Cardamom,cloves,cinnamon,fennel seeds and black cardamom -2 tbsp
Salt-to taste
Yogurt-2 tbsp
Fried Onions-1 cup
Method
1.Soak rice for 15 minutes.Now wash it properly.Drain.
Khaima rice is perfect for this biriyani.
Now take a sauce pan,add 1 tbsp oil.Add the mixed spice powder.Now add 1 tsp ginger-garlic paste,1/2 tsp green chilly paste .
Add in rice and let it slightly fry for 2 minutes.
Add water enough to cover the rice .Add 1 tsp ghee,fried onion and pineapple pieces.
When this water drains,pour the milk and cook the rice.Do not let it cook well.
2. In a pressure cooker,add cleaned and cut chicken.Add Onion 1 chopped,ginger-garlic paste 1 tbsp,green chilly paste 1 tsp,turmeric powder 1/2 tsp,chilly powder 1 tbsp,mixed spice powder-1 tbsp,coriander powder-1 tbsp and salt.
Mix well with hands and cook it until 2 whistles.
Take a pan and add 1 tbsp oil.Add the cooked chicken and let the sauce thicken.Add  cup chopped mint leaves and coriander leaves,yogurt and 1/2 cup fried onion.Let it cook for 5 minutes.Finally add some mixed spice powder on top.
3.Now in an oven proof dish,layer 1/2 the portion of rice.Add 1 -2 tsp oil .Now add the chopped leaves,spice powder.Now arrange the chicken as the second layer .Next the rest of the rice ,fried onion,chopped leaves and 1 tbsp ghee.Close the dish and bake for 20 minutes at 180 degrees.
YUMMY ,slightly sweet rice with flavorful chicken is ready! Best for a holiday.

Spicy Sausage Spaghetti

Italian,Spicy dinner with spaghetti

This Italian recipe demands sweet Italian sausage.But I have used chicken franks that is widely available.
Again,this is my personal recipe and I must confess,a personal favorite too.
A secret ingredient that I have added to bring THE REAL taste is hmm...Is the Bolognese spice mix.....did I really say that...!
Serve this spicy spaghetti with Garlic bread.
Ingredients
Italian Spaghetti-100g
Olive oil-
Dry Red chilly flakes-2 tsp
Garlic chopped-2cloves
Onion-1 medium,chopped
Chicken/beef sausage-100g
Oregano-1tsp
Bolognese spice mix-1tbsp
Tomato Puree-1/4 cup
Salt and pepper-
Parsely chopped
Grated Parmesan cheese-1tsp
Cooking Method
Cook spaghetti in salt water along with a pinch of Oregano.It should be done al dente.
Drain and keep aside.
Marinate sausages with salt,pepper and a pinch of oregano.Saute this in olive oil until crispy.

Now in a sauce pan,pour in olive oil,add crushed dry red chilies and garlic.After a minute saute in onion  and add the cooked pasta.
Mix well.Now add the tomato puree and some more oregano.When it is almost dry,add the sausages and bolognese spice mix.Add salt and pepper as needed.
Lastly add some grated Parmesan cheese(very little to get everything blended).
Serve hot.

Masala Chicken

masala chicken is a spicy kerala recipe

Masala Chicken is a special recipe from deepsrecipes.Here we are preparing a masala which gives all the taste to the curry.This masala is closely related to the dry masala that Tribal people make and carry with them when they travel from one place to another in the forest.Once they get any animal they mix the masala and cook it right away.But the taste is so authentic and lip smacking.
But this recipe is just a trial from deepsrecipes.We can make the masala beforehand and can store it refrigerated.

Ingredients
Chicken-500 g 
For the Special masala-
Onion-2big
Ginger-1 small piece
Garlic-4-5 cloves
Tomato-1 big
Coriander dry seeds-1tbsp
Red chilly dry-8-9 no
Pepper corns-1 tsp
Salt-to taste
Curry leaves-
Fry all these ingredients in 1 tbsp oil.Grind it into a fine paste.
Coat the chicken with the masala.

Pour 1/2 cup water and cook well in a nonstick pan.Stir occasionally.
Cook until all the water dries up and then pour some oil and lightly fry it.

Fish Curry (Sardine Curry)

Sardine is a small oily fish,rich in nutrients.
Ingredients
Sardines -500 g
Onion-1 big (make a paste)
Ginger-paste -1 tbsp
Chilly powder-1tbsp
Fenugreek(Methi seeds)-1 tsp
Mustard seeds-1 tsp
Curry Leaves-
Dry red chilly-2-3 nos
Raw mango- 1 cut into small pieces.
(Use Kokum(2-3 nos) if you don't find raw mango.)
Oil-2 -3 tsp
Method Of Preparation
Heat a non stick skillet or sauce pan.Add 2 tsp oil-Splutter mustard seeds.Now add in fenugreek seeds,dry red chilly and curry leaves.When they become slightly brown,add in the ginger paste.Fry this well.
Now add in onion paste.After 2 minutes add in turmeric powder,chilly powder and salt.Keep stirring until oil separates .Now add the fish pieces.Coat the fish with the sauteed masala.Let fish fry a little.
Lightly Fry the fish with all the masala-
Now add 11/2 cups of warm water,mango pieces and more salt if needed.
Once its cooked well(in 3-4 minutes) and gravy is thick,add 1 big spoon of coconut oil and curry leaves on top.
Close the lid to lock the flavors.

Yummy,tangy,delicious and nutritious fish curry is ready to serve!!!

Lemon Chicken


Home made Lemon chicken recipe
Grilled Lemon Chicken 
Lemon chicken is a classic American recipe.
This is a very healthy low carbohydrate diet.So those on weight loss programs can have this with out guilt.
Very simple and delicious.Serve it with a bowl of salad.
Ingredients
Chicken-500 g cut into big pieces
Freshly Crushed Pepper-1tbsp (or according to your taste.)
Salt-
Olive oil-2 tbsp
Lemon juice-1/4 cup
Lemon zest- 1tsp
Parsley-2tbsp finely chopped
Garlic-2cloves finely chopped
Method of preparation
Rub the chicken pieces with freshly crushed pepper and salt.
You can bake this if you want.I did pan grilling.
Heat the grill pan.Pour 1 tbsp Olive oil and grill the chicken pieces until half done.


Now,mix 1/4 cup freshly squeezed lemon juice,1 tbsp olive oil,lemon zest,garlic chopped and finely chopped parsley .
Pour this mix on the chicken and grill it until done.


Lemon juice changes the color of the chicken to light brown .
Check whether the chicken is cooked.
"Oh,yes..Chicken is well done.."
Kids will enjoy this .Serve it with your favorite salad and bread of your choice.

Chicken Majboos Recipe

Chicken Majboos Arabic
Arabic Chicken Majboos
Majboos is an Arabic rice dish with lamb or chicken.
In the traditional method,they boil water in a big pot and after adding all the spices and onion into the boiling water,they add full chicken.Once the chicken is done, take it out and rice is cooked in the same stock.
But I have changed that method a bit.
Here I am partially frying the chicken first and then cooking the rice and fried chicken together in the same pot.
All Arabic dishes are very healthy;Majboos is a very tasty rice dish like biriyani.You can serve it with raita or any other accompaniment of your choice.I serve it with Pomegranate raita.
Ingredients
Long grain Basmati rice-2 cups
Chicken-500 g
Dried Lemon-5 no (If its big sized lemon ,use 3 no)
Pepper powder-to taste
Olive oil- 1 tbsp
Whole spices-Cardamom (2),Cinnamon(1/2 inch),Cloves(2)
Bay leaves-2 no
Onion-2 big
Water-3 1/2 cups
Salt-to taste
Method of preparation
Marinate the chicken pieces with salt,pepper and cinnamon powder.
Fry partially in 1tbsp Olive oil.
Now in a big pot boil 3 1/2 cups of water.Add the whole spices,bay leaves,Onion chopped,salt,Pepper powder,Cumin powder 1tsp,extra cinnamon powder 1tsp and dried lemons.
You can get dry lemon from the grocery store.It looks like this-
After washing the dry lemons,make a hole on this to get the real flavor . 
Once the water starts boiling,add in chicken and rice .
Water level should be 1 inch above the rice.
Cook well .
Healthy delicious dinner/lunch is ready with in minutes!!!

Crispy Potato Wedges~kids recipe

Today I am going to talk about that wonder vegetable. Since Potatoes contain mounds of carbohydrate, it is easy to digest. Potatoes are really magical not only in its taste, but it is used to relieve a number of diseases like high blood pressure due to tension, indigestion etc.
Juice of Potato can be used for the treatment of burns and skin problems.
But it's better to know that green potatoes are poisonous and so are its leaves.
Diabetic, obese and those who are on slimming regime should avoid Potatoes since it is high in energy and sugar content.
It’s always better to avoid deep fried Potato dishes. So let’s make these crispy grilled/shallow fried Wedges.
Ingredients
Potatoes    - 2 Big
Butter - 1 tsp
Corn flour - 1 tab sp
Chilly Powder - 2 tsp
Salt - To taste
Thyme -1 tsp
Olive Oil/Butter - 2 tsp
Method of Preparation
Boil whole potatoes  until just done (do not over cook). This step is for a fluffy interior after grilling.
Now cut them into wedges.
In a bowl, mix dry corn flour, thyme, salt and chilly powder.
Coat potato wedges with some melted butter. Now dip buttered potato pieces in the dry flour mix.
Toss it on a grill or on a pan with just 1-2 tsp Olive oil until it’s crispy and golden.
This recipe makes the wedges extra crispy with fluffy interior .Kids gonna love it and this can be a healthy lunch for them too.
Serve  the yummiest snack with anything you like.
