Easy Microwave Cooking

Chocolate Mocha Cake
Here is a super simple recipe for a soft tasty chocolate mocha cake.  Soft and  rich eggless cake in less than 10 minutes.
This is my version of eggless chocolate cake, after trying all those recipes by others.
Step 1
Dry Ingredients
Cocoa powder    --- ½ cup
All purpose flour – 1-1/4 cup
Baking powder - 1 tsp
Baking soda   - 1 tsp
Salt                 - ¼ tsp
Whisk dry ingredients together with a fork. No need to sieve.
Step 2
Butter         - 75-80 g
Dark chocolate –20 g
Oil                     - 1 tab sp
Yogurt           -- 1 cup
Sugar              -- ¾ cup
Coffee           --- 1 tsp dissolved in 2 tab sp hot water.
Vanilla essence – 1tsp

In a sauce pan melt 80g butter, add chocolate and melt.
Cool the mix.
Combine dry ingredients, butter-chocolate mix, oil, sugar, yogurt and coffee, mix well.
Add enough water/buttermilk to get a dropping consistency.

Bake in a microwave high power for 6 minutes. You will get very high cake .
Frosting
Cool the cake very well before frosting.
Beat together 200g cream cheese and 1/2 cup powdered sugar .Add vanilla essence.
Cover the cake completely with cream on all sides and the top.Sprinkle chocolate bits or cocoa powder .

Khaman Dhokla(Spicy & Healthy Rice Cakes )

Khaman Dhokla.
(Khaman Dhokla is a healthy Breakfast Item from Indian State Gujarat.)
Today, I m going to introduce you to a very popular breakfast item in Gujarat (Indian State), but I think not many from other parts of the world would be acquainted with this snack.
Khaman Dhokla is a very healthy dish made from Raw Rice, Black gram (uraad daal) and Split Chickpeas (Chana daal).
Good part is that you can store the batter for 4-5 days...so all those working moms, this recipe is for you especially...
Ingredients
1. Raw Rice -- 1 cup

2. Split Chick peas (Chana daal) --- 1 cup
3. Black gram (Urad daal) --- 1/2 cup
4. Butter Milk - 1 cup
5. Ginger paste - 1 tsp
6.Green Chilly Paste - 1 tsp
7.Salt - According to the taste
8.Asafoetida  - 1/4 tsp
9.Baking Soda - 1/4 tsp
10.Turmeric powder - 1/4 tsp
11.Mustard Seeds - 1tsp
12.Grated Coconut - To Garnish

Soak the pulses in water along with the  rice  for 5-6 hours.
Then grind it adding sour butter milk,salt and Turmeric powder.
Batter should be thick, say dropping consistency.
(For better result,You can ferment this batter for 8 hours)



Now add Ginger paste 1 tsp and green chilly paste 1 tsp.
Add 1/4 tsp Baking Soda and pour 1 tsp hot water on the Soda ,mix the batter well.
Pour into greased baking tin, bake until done (3-4 minutes) on Microwave High power.
For Seasoning
Heat 1tabsp oil, splutter 1tsp Mustard seeds,add a pinch of asafoetida, Curry Leaves and slit green chillies.
Add 2tbsp water to this and pour the whole mixture over the Cake/Dhokla taken out from Microwave.

Cut this into squares and garnish with grated coconut and chopped Cilantro.

Enjoy Khaman Dhokla with Coconut-Cilantro chutney.


Very tasty, just try once then I am sure, you will accept it as one of your favourite snacks.
Please tell me how you find it. Then I can give you easier version of the same recipe.But this snack will taste way DELICIOUS if you follow this recipe than going  for the easier one!!!!!!
