Unniyappam recipe

Today I am going to share the secret of traditional Kerala Snack 'Unni Appam' or 'Karol Appam'.

Unni appam resembles small pancakes.
You can find the recipe  anywhere on Internet and many might have  succeeded in making these delicious and healthy dumplings.

But this is my recipe;after desperately  trying to bring back the taste of Unni appam that my Grand Mother (we call her Ammamma) used to make for us,children.She didn't know how to show her love for us,but with the taste of her special snacks, her love was conveyed to us.

I am sure it is impossible to recreate the same taste,since that special "kaipunyam" ended with her demise.
(Kaipunyam is a Malayalam word which  means 'having gifted hands')


So let's  try to bring back that taste... nostalgic to many of you ,today..

Ingredients
Raw rice -2 cups
Jaggery-200g
Banana-1 no
Plain Flour-2tbsp
Ghee-1tbsp
Black sesame seeds-2tsp
Coconut pieces-2tbsp
Method of preparation
Soak rice for 5-6 hrs.
Melt Jaggery into a thick liquid.
Grind together, rice and this liquid Jaggery (1tbsp at a time).When it's almost done ,add in banana and grind well.( need to add extra water,only if you feel that melted Jaggery is not enough)
Finally add in the flour and mix well to get a smooth batter of Idly batter consistency .
Heat ghee and fry coconut pieces and sesame seeds.And pour these along 
with the ghee to the batter.Mix well and keep aside for 4-5 hrs.
Now take a Karol (is the mould used to fry this snack) or you can even use Pancake griddle for this .
Pour oil into the holes and make fluffy tasty and more over, very  healthy Unni Appam.

Sweet Rice Balls

These are a healthy snack/Laddoo using brown rice and Jaggery. This is a tasty and healthy evening snack from the ancient recipe collections of south Indian state Kerala.

Wishing all Indians a very HAPPY DIWALI...!
It's again a festive season in our country INDIA.Diwali is the festival of lights.Every Indian around the world,celebrate this day,by  decorating their houses with lamps/diyas. Special sweets are also made on this auspicious day.
 This recipe is simple ,hardly takes 10-15  minutes to prepare.
Ingredients for Brown rice balls/Laddoos
Par Boiled rice-2 cups
Jaggery-1/2 cups grated
Coconut grated-3/4 cup
Cardamom powder-1 tsp
Method Of Preparation
Dry roast the rice until it crackles and turns golden completely.Refer the picture below for the exact texture.

Once you get the rice roasted,grind it well in a blender/grinder. Once the rice is powdered well add coconut,jaggery and cardamom and blend again well.
Make balls/ laddos using this mix.Add more coconut so that the mix is wet enough to make balls. Jaggery should be added according to your taste.(Above measurements will yield 15 Laddoos.)
Very healthy,Oil less snack is ready in minutes.

Fried Chicken -

This fried chicken is so much like Kentucky Fried Chicken,soft inside and crispy outside.

Ingredients
Chicken(Boneless& Skinless)-500g
Oil-To fry
Pepper-1 tbsp
Vinegar-1 tsp
Salt-
For Marination
Turmeric powder-1tsp
Chilly powder-1tbsp
Garlic paste-1 tbsp
Onion-1 no
Curry leaves-1 spring.
For coating
Flour-
Red chilly powder-1tsp
Salt-
Method Of Preparation
1.Boil chicken with salt ,pepper and 1 tsp vinegar.Add 1 tbsp water only,if necessary.
2.Make a paste of all the ingredients in the marination list.Marinate and refrigerate  it for 1 hour.
3.Mix dry flour,salt and chilly powder.
Roll the marinated chicken in the flour and fry in very hot oil until crispy and golden .
Serve it with rice.Here I have served it with Spinach and Lemon rice .

Butter Milk Scones.

Scones hail from Scotland.This is a quick breakfast bread recipe.Add 1/4 cup wheat flout to 1 cup Plain flour to make this recipe healthy.You can substitute wheat flour with oatmeal/flax meal or whole meal.
Adding buttermilk also makes it rich in nutrients.Quick and yummy breakfast in 20 minutes.
Ingredients
Flour-1 cup
Wheat flour-1/4-1/2 cup
Powdered sugar-4 tbsp(Only lightly sweetened)
Cold unsalted Butter-25 g
Buttermilk-3-4 tbsp
Baking powder-1/4 tsp
Method of preparation
Mix flour,wheat flour and baking powder well.Now mince cold unsalted butter to the dry ingredients and mix it well with fingers;Now the flour will resemble breadcrumbs.
Now add in sugar and mix once again.Slowly add buttermilk and mix everything into a ball.
Flatten the dough (in to 1 inch thick) and cut round or triangle shaped scones using a cookie cutter/scone cutter.
Bake in a preheated oven at 180 degrees for 20-25 minutes until golden brown.
Serve with cream//fruit jam.
(Add raisins or blue berry for variations.)

Mocha Cake (EGG LESS)

Here is a simple Cake recipe which can be a great accompaniment to TEA/Coffee.Chocolate and coffee flavor makes it more delicious and sour cream gives a unique taste that every one would love for.No toppings since this is purely for a simple evening coffee.
Ingredients
All purpose flour- 1 cup
Cocoa powder-4 tbsp
Sour cream -3 tbsp
Sugar-1 - 1 1/2 cup
Salt- a pinch
Baking powder- 2 tsp
Milk-2 tbsp
Hot coffee-1/4 cup (Or as much as to make a thick cake batter)
Vegetable Oil-1 tbsp
Method Of Preparation
1.Mix and sieve all the dry ingredients.  
2.Add in Milk,sour cream and 1 tbsp coffee.Slowly incorporate enough coffee to get a smooth and thick batter.
3.Preheat oven for 5 minutes at 180 degrees.
Bake the cake for 40 minutes.
Enjoy with a cup of Coffee/tea/Milk!

HAVE A BLESSED AND PROSPEROUS VISHU .....

Agriculture is the back bone of Indian sub continent.
Today, the people of KERALA celebrate their Harvest festival and  New Year called VISHU.
In Sanskrit, Vishu means equal.
VISHU KANI
Many states like Tamil nadu, Karnataka,West Bengal and Assam also celebrates New year on the same day.
In Mangalore and Uduppi districts of Karnataka(they call it as BISU) celebrate their new year, in their own way.
Up in the North and Punjab,their harvest festival is also on the same day and they call it Baisakhi.

In Kerala,it’s a big celebration with fire crackers,Feast and very fabulous Vishu Kani.
Every Malayali has their own nostalgia with Vishu.

Hey, it’s snack time!!!!
I always (to a certain extend) have tried to add some healthy recipes here .But snacking is real fun, and healthy snacking is good for our body also. Only thing is that, we should try to keep a time for snacking.
Avocado is Mexican in origin and packed with mono saturated fat.Avocado  speeds up metabolism and thus helps to loose weight.
Monounsaturated fats help lower LDL (bad) cholesterol while also boosting HDL (good) cholesterol.
This recipe is also called Guacamole.
You can serve this with Nachos/Tortilla corn chips.
Ingredients
Avocado – 2 numbers


Lime juice - 2 tsp


Jalapeno - 2 numbers
Salt- to taste
Onion- ½ medium sized
Cilantro – 1-2 tablespoon
Method
In a bowl, scoop out Avocado pulp; Mix lime juice and make it a smooth paste.
Add in finely chopped Onion, Jalapeno peppers, cilantro and salt. Make it a smooth mix using a fork.
If you are using picked Jalapeno (which is easily available), then pour in some of its syrup, to get more flavor.
(Optional: If you are planning this recipe  for a Party, then you can add 1table spoon cream to this dip, to make it rich and tastier)
Serve it chilled with Tortilla Chips/Nachos.

Chocolate Doughnuts Recipe

 Wonder what could be that tasty yet healthy snack in their tiffin  box?
Here is a choice . A healthy way to make doughnuts.

Ingredients

For the dough
Warm milk- 1 cup
Yiest       - 5 tsp
sugar   - 1/4 cup
Mashed potatoes -1/2 cup
Oil  -  2 tbsp
All purpose flour - 2 cups
salt     - 1/2 tsp
Oil to fry-

Instead you can bake them to make  healthier doughnuts .
Preparation 
Add 5 tsp yiest to 1 cup warm milk and add a tsp sugar to activate the yiest. Pour this mix to the flour , add 1/2 cup mashed potatoes,salt, 2tbsp oil ,sugar and knead well.
( Mashed potatoes make the snack more healthy.)
Keep aside for 10 minutes.
Deep fry on a medium heat until light golden brown colour.
Or bake them in preheated oven at 350 for 15-20 minutes .
For Chocolate glazing
Mix 2 tbsp warm milk with 1 tbsp cocoa powder and a tsp of butter .Make it thick creamy sauce.
Dip warm doughnuts into the glaze and lay them on a flat surface. Sprinkle powdered sugar or candy pieces.

Kachori Recipe

Kachori is a common snack in various parts of India,including UP,Delhi,Rajastan,Maharashtra,Gujarat etc.
It is one of our favorite snack from Chopatti. 
Chowpatti is a Marathi word with the meaning 'beach'.
In India we can find tasty snacks in small shops called Chowpatti at the beach sides and road sides.

 When we make these snacks at home,we can choose good quality oil and fresh ingredients.Kachories are available in a variety of textures and tastes, balancing sweetness with spice and tang. This recipe courtesy entirely goes to Manjula Aunty of Manjula's Kitchen . A Gujrati snack made of yellow Lentil filling .( Also called Khasta Kachori)
Ingredients
Plain Flour ( Maida ) -- 1 Cup
Salt
Oil - 2 tabsp for dough
Oil to fry kachories
For Filling
1/4 cup moong (yellow lentil) soaked
fennel seeds-1tsp
whole coriander - 2tabsp
chilli flakes-1 1/2 tsp
ginger-1 inch piece
Asafoetida/ hing- a pinch
Mango powder/Amchoor - 1 tsp
Preparation Method
Mix 1 cup Maida ( Plain Flour) , 1 tsp salt and 2 tabsp oil into a crumbly mixture.
Add water slowly and make a dough , not too soft. Keep it for 1/2 hr .
Filling
Crush  Moong bean, fennel seeds,coriander seeds,ginger,salt, mango powder,chilli,hing together  in a mixer/grinder .
Now heat a pan ,add 1 tabsp oil . Roast the filling to remove the raw taste.add 2 tsp water to the mix and keep aside for 5 minutes.
Now make small puris , place a spoon of filling , and enclose the puri ,make it as a dumpling.Gently  press the dumpling and give a kachori shape.
Fry on medium heat .It will come out puffy , then turn it carefully to other side.
Remove onto absorbent paper and serve warm along with a cup of chai.
