Vegetarian Cacciatore Recipe

Vegetarian Cacciatore
Cacciatore is a classic Italian Sauce..( basic recipe Courtesy : Laura Vitale.)

Ingredients

Bell pepper : (Yellow) -1 no
Onion -1 big cut into cubes
Egg Plant- Cubes 1 cup
Garlic- 4 cloves
Red Wine/veg.stock - 2 tbsp
Italian Tomato pureed- 1 cup (I used  Sacla Italia )
If it is not available,just puree 2 big red tomatoes.
Fresh Basil-
Salt & Pepper-
Olive Oil

How To prepare this tangy nutritious sauce?

Heat a sauce pan and add 2 tbsp Olive oil and lightly fry eggplant pieces and onion slices. You can add some salt and basil at this stage.
Once it is half cooked add garlic and bell pepper cubes.
Once everything is browned add red wine,if you are using.Or else you can add the tomato puree.
Mix well and allow to cook with out lid.Add salt and pepper as required.When the sauce is thickened ,it is ready.GArnish with chopped basil.


Boil water with salt and cook your favorite pasta/spaghetti.
Serve veg Cacciatore with spaghetti.

Italian Risotto (With Chicken and Asparagus)

Try out something different today! Here'z a suggestion.
Exotic Italian main course  Item. Easy to make at home .
Ingredients:-
 Arborio rice - 200g
Chicken stock- 2cups
White Wine -    2 tabsp
Shallots -        8 nos
Garlic- 4 cloves
Rosemary - a pinch
Thyme -     a pinch
Parmesan cheese - Bountiful
Butter /Olive Oil   -1 tab sp.
 Method:-
Saute asparagus in butter(instead you can use Olive oil ) with shredded shallots .Sprinkle salt .Cook till asparagus turn tender.
Cut chicken into small cubes , cook well after adding shredded garlic , salt and rosemary .
Heat a pan  add 2 tbsp butter and lightly fry  minced shallots. No need to brown them.
Now add rice .Lightly fry rice till crisp.
That's the time for 2 tabsp white wine  . Take care to cook and absorb  the wine well to remove the smell of wine. 
Add 1/2 cup chicken stock-cook the rice constantly stirring .
When stock gets absorbed , add thyme .(You can use fresh Thyme leaves if available and discard them after cooking the rice )
Now add remaining stock and  cook  until rice is done 'al dente' .
Mix in asparagus and chicken .
Add Parmesan cheese and butter to make it creamy.Sprinkle salt and pepper on top.
Garnish with chopped Parsley .

Spicy Sausage Spaghetti

Italian,Spicy dinner with spaghetti

This Italian recipe demands sweet Italian sausage.But I have used chicken franks that is widely available.
Again,this is my personal recipe and I must confess,a personal favorite too.
A secret ingredient that I have added to bring THE REAL taste is hmm...Is the Bolognese spice mix.....did I really say that...!
Serve this spicy spaghetti with Garlic bread.
Ingredients
Italian Spaghetti-100g
Olive oil-
Dry Red chilly flakes-2 tsp
Garlic chopped-2cloves
Onion-1 medium,chopped
Chicken/beef sausage-100g
Oregano-1tsp
Bolognese spice mix-1tbsp
Tomato Puree-1/4 cup
Salt and pepper-
Parsely chopped
Grated Parmesan cheese-1tsp
Cooking Method
Cook spaghetti in salt water along with a pinch of Oregano.It should be done al dente.
Drain and keep aside.
Marinate sausages with salt,pepper and a pinch of oregano.Saute this in olive oil until crispy.

Now in a sauce pan,pour in olive oil,add crushed dry red chilies and garlic.After a minute saute in onion  and add the cooked pasta.
Mix well.Now add the tomato puree and some more oregano.When it is almost dry,add the sausages and bolognese spice mix.Add salt and pepper as needed.
Lastly add some grated Parmesan cheese(very little to get everything blended).
Serve hot.

Garlic cheese bread

Garlic bread is a favorite to almost all of us.Serve this along with Italian pasta/spaghetti and a healthy dinner is ready in minutes.
You can serve this with Spaghetti Bolognese.
Here I have made cheese garlic bread.Avoid cheese and it is still very tasty.Since we are using Olive oil,we can cut some calories there too.
Ingredients
Baguette (long thin Bread loaf )-1 no
Olive oil-tbsp
Garlic-2-3 cloves
Parsley-chopped 2 tbsp
Salt and pepper-to taste
 Mozzarella cheese-
Method of preparation
1.Cut Baguette  into 2 halves.Now slit each half longitudinally.
2.Make a Garlic Paste
Blend garlic cloves,a pinch of salt and parsley with 1 tbsp olive oil.
Make a fine paste.You can store this paste refrigerated  and can be used in many other recipes.
3.Apply this paste on the bread and toast it in an oven at maximum temperature.You can toast  on stove top too.
When it turns light brown ,add plenty of cheese(salt and pepper if you prefer) and cook until cheese is melted and bubbly.
Serve hot with Spaghetti or Lasagna.

Mortadella Sandwich

Ingredients
(Here is the ingredients for 2 sandwiches)
Mortadella-4 slices



Olive oil-1 tsp
Burger bun/Brioche buns sliced horizontally-
Lettuce leaves-
Chilly Mayonnaise-2 tsp
Mustard paste-2tsp
Boiled Chick peas-2 tbsp
Salt and Pepper-

Method
1.Toast the burger bun (after cutting it into 2 halves) in a splash of Olive oil.
2. Cook the mortadella slices on a hot dry skillet until brown.This will take almost 2 minutes on one side and then flip it and cook for 2 more minutes.
3.Apply mayo and mustard on the bun slices(I used chilly mayonnaise).
 Then top it with 2 slices of mortadella,chick peas,lettuce leaves and close the sandwich with the other half.

This is a very heavy and high calorie filling meal and esp for those who wish to gain weight.

Fettuccine Alfredo


Today,no diet plans or talks about healthy diet.Sharing this rich,creamy Italian pasta recipe.
Ingredients
Here measurements are according to your taste.You can add cheese and butter  generously as you like.
Fettuccine Alfredo- 5-6 no

Butter-
Shallots-4-6 no
Garlic-2 cloves
Cream-
Milk-2 tbsp
Thyme-1 tsp
Parsley-
Salt and Pepper-
Method of preparation
Step 1.
Boil fresh water with salt.Cook pasta till al dente.Additionally,I added 1 tsp Thyme and a tsp of olive oil to the water.
Step2.
Make Alfredo sauce.
For this heat a pan.Melt butter.Add in shallots chopped,garlic chopped and salt.Let it become tender.Now add in the cream and 2 tbsp milk.Season with more salt and pepper.Stir and boil the cream without burning it.
Finally add 1/2 of Parmesan cheese to this.


Step3.
Sieve Pasta and wash it with cold water.


Now pour the Alfredo sauce on the cooked pasta.


Add lots of Parmesan on top.Garnish with parsley chopped.

Lasagna recipe

There are zillions of methods and varieties of Lasagna.This is a simple basic method to make a superbly delicious lasagna with only Mozzarella cheese. Traditional Italian lasagna recipe uses another layer of cheese with ricotta and Parmesan.But I have replaced that layer too with Mozzarella cheese to cut off the calories.This was an experiment for me,but got the same taste as from the restaurants.
So here are the INGREDIENTS we need:-
Lasagna sheets-
Ground/minced beef-
Tomato puree-of 4-5 tomatoes
Oregano-
Garlic-2 cloves chopped
Onion-1 big chopped
Salt and Pepper
Quantities are according to the size of your baking dish.
Method of preparation
This is the basic recipe with minced beef.You can replace beef with vegetables of your choice.
Step1First make a meat sauce.
Take a pan,add some olive oil.Saute onion and garlic.
Add  minced beef,salt ,pepper and oregano.
Saute well and after 3-4 minutes,add in tomato puree ,mix well .
Close the pan with a lid and cook until done.
Meat sauce for lasagna is ready!
Same sauce can be used to make Spaghetti Bolognese.
Now the Step2
(You can buy these lasagna pasta sheets,we don't have to cook it before layering.But take care to keep the meat stock enough to drench the pasta to help it cook well.)
Take an oven proof dish.First make a layer of meat sauce.
Now the lasagna sheets layer.Then Mozzarella.Again repeat the layers .Finally give a thick layer of Mozzarella.Finally pour the stock over the whole mixture,this is for drenching the lasagna sheets well .This will help the pasta cook fast and easy.
Bake in preheated oven for 40 minutes at 200 degree.

Serve hot after cutting into squares.
This Lasagna uses the same bolognese (meat sauce) sauce as in Spaghetti bolognese recipe posted earlier.

Veg Pizza recipe

Homemade veg pizza

This is a simple version of Vegetable pizza,you can try at home.
I have made it as thin crest with a bit of Arabian Flavor .An interesting Arabian version of Pizza is  available in the Pizza-Hut  here in Middle east,an amazing twist to the traditional Italian Pizza.
Most of  my recipes are my experiments with a basic recipe which we try from restaurants.
Anyways,here are the
Ingredients
For the Pizza dough
1.All purpose flour-2 cups
2.Dry yeast -5g
3.sugar -2tsp
salt-to taste
Add 2 tbsp warm water to the yeast and 2 tsp sugar.Keep aside for 5 minutes.
Make a smooth dough with flour,yeast and salt by adding water carefully.
Keep aside for 30 minutes.
Now after 30 minutes beat the dough with the back of your hand .Make big balls out of this and keep aside for 10 more minutes.Now these balls will become double in size.
Ingredients for the Topping.
Olive oil-
Pizza sauce-
Veggies-Onion,Bell peppers,corn etc.
Mozzarella Cheese-Shredded
Salt-
Dry Oregano
Sumac(Optional)
Paprika -2tsp

Now we can start preparing the Topping.
Flatten one of the dough balls into thin/thick crest.Dust the surface with some flour before you do this.

Now heat a pan and cook the bottom side of the Pizza base for 2 minutes.Now its very easy to cook in the oven and also to handle the Pizza .This is a must step since we are not using Pizza stone(baking stone) to bake Pizzas.
Now,apply some Pizza sauce first.Then the Mozzarella.

Next the chopped veggies.Sprinkle Paprika,salt and Sumac(optional:Sumac is an Arabian spice ) on to these veggies.
Finally Mozzarella again.
Drizzle Olive oil on top.
Now pizza is ready to go to the oven.
Bake for 10 minutes (at max Oven temperature) until the color of the cheese is light brown.

Pasta with herbs~kids recipe

Pasta With Mixed Herbs n Cream

Pasta with Italian herbs …in cream..Yummy, right? Yeah, a bit heavy but a sure-fire kids pleaser.
And this would take hardly 5 minutes to prepare.
You can use fresh Italian herbs if you have it, great way to increase the flavor.
Very healthy preparation, very delicious…
Let’s start..
Ingredients
Wheat Pasta-1 cup
Mixed Italian Fresh Herbs-I used Thyme, Rosemary and Oregano-2tsp altogether.
(Try to include fresh Basil leaves, since it brings the real flavor of the cuisine.)
Butter-1tsp
Garlic-1 clove finely chopped
Heavy Cream-2tbsp
Onion-1/2 chopped
Walnuts crushed-Bountiful
Green Chili- 1 small   (Instead of chili,You can use white Pepper powder-)
Method of preparation
Cook Pasta according to packet instructions.
Heat a pan, add in 1 tsp butter.
Add garlic finely chopped.
Add in chopped onion and green chili.
Now add Salt to taste.
Next is herbs, mix for a while.
Add in Pasta and cream.
Now, add walnuts crushed to make this dish healthier.
Rich and creamy pasta ready in minutes.

Eggless Tiramisu

Planning for a week end party?
Make it more elegant with a mouth melting dessert .Coffee flavored, rich and creamy Tiramisu with crunchy walnuts and cocoa powder on top.Perfect end to a wonderful  meal.
Easiest recipe ever.This is the eggless version .
Here we go.
Ingredients
Lady Finger Biscuits - 10 nos
Mascarpone cheese/Any cream cheese - 1/2 cup
Fresh cream-1 cup
Sugar  - 1/2 cup
Walnuts
Cocoa powder.
Method Of Preparation
Make a cup of strong coffee and cool it.
Beat  fresh cream very well until you get stiff peaks.
Now add cream cheese and beat well to make a smooth fluffy mixture .Add some coffee to this.Mix well .
Now dip lady fingers in coffee and arrange them into a layer  in a rectangle dish .Start to distribute the cream to get a cream layer. Repeat the step with biscuit and cream .Now top with cream.
Garnish with walnuts and cocoa powder.
Refrigerate it for 6-8 hrs.
Yummy,mouth melting ,vegetarian Tiramisu is ready !!

Spinach and Broccoli in oregano Sauce


Spinach and Broccoli in Oregano Sauce


This is a very tasty and nutritious dish. You can serve cooked Pasta or Spaghetti topped with this creamy sauce .It’s a complete meal as such. Kids would love this since its creamy and less spicy.



Ingredients
Spinach – 1 cup
Broccoli – 5-6 florets
Pepper powder- 1 tsp
Salt –to taste
Garlic-2 cloves
Green Chilly- 2 no’s
For oregano sauce
Milk- 1 cup
Butter -2tabsp
Flour- 1-1/2 tbsp
Dry Oregano -2tsp
Pepper powder-1/2tsp
Salt-1/4tsp
Method of Preparation
Melt butter in a pan .Add in chopped Garlic and green chilly. Now sauté the veggies. Add salt and pepper .Cook for 3-4 minutes.
Oregano Sauce

Oregano White sauce
Mix butter and flour into a smooth paste. Heat a pan and sauté this paste until it gets cooked.
Now add in 1 cup milk and cook on a low flame .Add in dry oregano, salt and pepper.
Cook until its creamy consistency.
Add in the sautéed veggies mix well.
Serve with Pasta or Spaghetti.

Spaghetti Bolognese

Italian spaghetti with meat and bolognese sauce
Looking for a hot hearty meal for one of those rainy or winter nights?
Here is a suggestion.This is a quick method to make spaghetti bolognese.
Ingredients
Olive oil - 2tsp
Minced chicken sausages-5 nos
Onion-1 Large sized ,finely chopped
Garlic - 3 cloves
Green chillies-2
Tomatoes- 2 medium sized
Bay leaves-2
Thyme-1 tsp
Oregano-1tsp
Salt - to taste
Pepper powder -2 tsp
Preparation Method
1.Cook spaghetti in plenty of  boiling salted water.Till done al dente.
Drain and apply butter.
2.In a heavy-based saucepan add 2 tsp olive oil and saute  minced sausages ,bay leaves,chopped garlic, salt and thyme for 4- 5 minutes.(Instead, if you want to follow traditional method ,use minced meat or chopped bacon.)
Add finely chopped onion and green chillies.Cook until onion turns soft .Now puree 2 fresh tomatoes in a blender and add them .
Add pepper powder,cook for 3 -5 minutes.Finally add oregano.
Now pour this Bolognese sauce over the spaghetti.
Serve hot.
