Mint Chicken Recipe (Low-Fat)

Another very quick and easy dry chicken recipe.You can serve this with Coconut-Rice  or curried chicken or veggies. Ingredients Skinless Chicken- 200g Onion- 1 big sliced Ginger- ½ inch piece Garlic – 2 cloves Mint leaves – bountiful Chilly powder – 2 tsp Coriander powder – 2 tsp Salt – To taste Spices crushed- 1 tsp (Cardamom, Cinnamon, Cloves and Fennel seeds) Optional Potato – 1 medium cut into cubes Coconut small pieces -2 tbsp Method of Preparation Clean and cut chicken. Make a paste of ginger, garlic and mint leaves. Marinate chicken with onion slices, Spices, Chilly, coriander, salt and the mint paste .Add in potatoes and coconut pieces. Rub in this marinade well into the chicken and keep aside for 2 hours. Cook this well (in a pressure cooker) Now, heat a skillet, add in a tsp of oil. Coconut Rice Recipe

  Coconut rice is a good option when you want to give a twist to the normal rice dishes. This is  similar to Thai Coconut rice. Rich in coconut milk, this is a real relish with any accompaniment you like.My suggestion ,this delicious chicken curry is a great combo. Ingredients White Rice – 1 cup Coconut milk – 2 cups Salt- To taste Cumin seeds – ½ tsp Ghee - 1 tsp (Optional) Method Of Preparation Soak and clean white rice. In a heavy bottom pan, cook rice with good quality coconut milk. When rice turns almost done, add crushed cumin seeds and salt. Cook well. Add 1 tsp ghee on top. Garnish with dry grated coconut. Serve hot with chicken curry.

Indian Rice Pudding

I ndia is rich in its tradition and its festivals. We have a potpourri of festivals, not only connected with Gods and Goddesses, but also with wind, harvest and so on. Colors, sweets, firecrackers and flowers are an integral part of any festival in India. Sharing an Indian Rice Pudding recipe,apt for any occasion. This is a quick and easy method to make this dessert, which could take an hour to cook otherwise, if we follow the usual method. But taste is the same, I must say! So here we go! Ingredients Raw Rice -    ¾ cup Milk         - 1-1/2 liters Sugar – 1-1/4 cup Ghee – 2 tsp Cardamom – 2tsp Cashew nuts, Raisins – To garnish Method of Preparation Wash the rice and soak for 15 minutes. In a pressure cooker, add in milk, sugar, rice and powdered cardamom. Cook on high flame until 1 whistle. Simmer and cook for 20 minutes. Allow the pressure cooker to cool. Heat Ghee in a pan. Fry cashew nuts and Raisins.   Pour in the ghee along with the fried items.

Garlic-Butter Rice

So another quick recipe, my family loves it and I am sure, your kids too will. No one can resist the aroma of garlic sauteing in butter. So here we go ! Ingredients Butter- 1 tb sp Garlic – 4 cloves finely chopped Onion-1 medium Cashew nuts - Rice -1 cup Cardamom, cloves, cinnamon –crushed 1 tsp Spring onion- to your taste Salt- to taste Sugar-1tsp Preparation Melt butter in a heavy bottomed pan .Add 1 tsp sugar, when it turns brown, add onion sliced. Add the crushed spices and rice. Let the rice fry for 2 minutes .Add cashew nuts and spring onion. Now pour in water and add salt .Cook until done. Garnish with spring onion. Serve hot. I served it with 'Dal Makhni (Creamy Lentils) "
