Chocolate coated Strawberries

Today's recipe is a very simple but so very a delicious dessert.
Chocolate and Strawberries..!!! This combination itself is so divine .

How To Prepare Chocolate Coated Strawberries??

Strawberries-
Good quality baking Chocolate-
Butter-1 tsp
Liquid Glucose-1 tsp








1.Wash strawberries under  running  water.Pat dry.
2. In a double boiler,melt  chocolate and butter and add in 1 tsp liquid glucose to this.
3.Dip strawberries in melted chocolate.Dip only 1/3rd of the strawberries.
If you don't get strawberries with the stem,you can use toothpicks for holding  them.
4.Freeze for 30 minutes.

That's it...Enjoy the rich,chocolaty  heart shaped Strawberry is the best dessert on your special day.Roll them in crushed nuts for a different variety.Also you can use white chocolate as an option.

Butterscotch Cherry Cake

This is the Christmas cake I baked for this Christmas...Hope you all enjoyed watching it.. :P
An extremely buttery cake as it contains lot of butter along with brown sugar,both dried and fresh Cherries,nuts and so on.

Now it's quite some time since I have baked something new.I find cooking interesting only to experiment new things.Otherwise,I must confess,day to day cooking is always boring for me,but I have to do it,since I try and stick to healthy diet.

If you believe me,I never plan a recipe. When I feel to bake,I randomly  shop some ingredients;which ever  I find interesting in the store.Then using them,how to make a new variety?This will be my next thought.
I rely on my intuition mostly..
A retrospective | 2013

The Year 2013 has reached it's end,soon it is going to be another chapter in our memories.
But,I feel that these dates and time are nothing of much important.What really matters are the Moments--How much we lived here....
I have some moments in 2013 to treasure for my whole life.Some moments that made me grow up as a person,when I learned some positive lessons to move forward...When I was motivated to change my perception of life.
Yes,it takes only a moment  for some people to influence us for a life time.I hope I too have sprinkled some positivism, on my dearest readers.

This year,I did experience certain negative things too,but I have forgotten them all;or may be I do not want to think about it.But I remember one lesson I learned from one such experience,for sure.When I met with an accident in 2013 and miraculously escaped,I learned that life is really momentary,so I must enjoy it rather than living in the past.

Beautiful,isn't it? Let's all try to stick to this resolution in the coming years.

With out any further delay,let us check the recipe for Butterscotch Cherry Cake
We need
1. Dry cherries- 4 tbsp
2. Almonds-2 tbsp
3.Apple Juice-1/2cup
4.Milk-2 tbsp
5.Butter- 1/2 cup
6. Brown Sugar-1 cup
7. Vanilla Essence- 1 tsp
8. Flour- 2 cups
9. Baking powder- 1 1/2 tsp
How to Prepare Butterscotch Cherry Cake?
1. Soak Dry cherries Cashews and almonds in Apple juice for 10-12 hours.

2. Beat butter and brown sugar until soft and really fluffy.
Now mix the soaked dry fruits into this and add vanilla essence.

3. Fold in the flour (sieved after adding baking powder ).If needed,add in 2 tbsp milk to adjust the consistency. Batter should be thicker than dropping consistency.
4. Bake in Pre-heated oven at 180 degrees  for 40-45 minutes.
I was thinking to give white frosting on the cake as it is Christmas. But the cake tasted very sweet and special with a butterscotch effect.So I avoided any kind of extra decor on it.

Mango Pudding


Today is 15th August 2013.67th Independence day for the countries INDIA & Pakistan.

Deepsrecipes wishes all , a very Happy Independence Day 2013:
Celebrate this great day with a simple dessert ,CHINA GRASS MANGO PUDDING.
China grass mango pudding
Mango Pudding
Wishing you all an independent, peaceful & better days ahead.
Ingredients:
Milk-4 cups
China grass (AGAR AGAR)- 1 cup (10 gms)
Mango - 2 nos
Cream - 2 tbsp
Sugar- 1 cup
 Vanilla Essence- 1 tsp
Biscuit crumbs- 1-2 cups

Method Of Preparation
Boil Milk .Cut china grass into very small pieces using scissors. Add these pieces into the milk and boil until china grass melts.
Stir the boiled milk well so that china grass dissolves completely. Sieve this mix to remove any undissolved china grass.
After cooling the milk,add vanilla essence and cream.
Blend/whisk this mix well until frothy.

Arrange biscuit crumbs as the first layer in the pudding dish.

Now arrange mango slices and strawberries(if you like).

Now pour in the whole milk mixture .

Finally Arrange Mango slices evenly on top.
Refrigerate this for 2 hours or until the pudding sets.
Cut into your preferred shape and serve as an elegant,mild & delicious dessert.
A must try recipe.It is easy to make,smooth and satisfying.

* Agar agar (China Grass) is a replacement for gelatin.It is available in any super market.

Baklava Recipe

Baklava recipe for  turkish dessert
Baklava is a Turkish delight easily available in Middle east,especially during the Holy Month of Ramadan.
It's a royal dish enjoyed at celebrations in Middle East,especially the Iranian Baklava,the one with Pistachio nuts filling.
The word Baklava in Farsi means 'many leaves' and to make it,layers of Phyllo pastry sheets are baked along with mixed nuts filling.It may seem to be a job only can be done by big Chefs,but anyone can make it as I tried it and came out very delicious and easy.
Many varieties of Baklava is available,secret of some recipes are also said to be passed down with in traditional family members only.
Anyways,I tried this recipe and I got the same taste as the one I found in the stores in Middle east.
Please try this,its worth the effort.

Ingredients
Phyllo pastry sheets-
Butter-3/4-1 cup melted
For filling
Almonds,Pistachio crushed-1/2 cup
Breadcrumbs- 2tbsp.(very important to add this-)
Sugar-2tbsp
Cinnamon powder-1tsp(Most important for the real flavor)

For syrup
Sugar-1/2 cup
Honey-1/2 cup
Water-1/2 cup
Cinnamon powder-1tsp
Method of Preparation
This is how I made the sweet and came out really good.
1.Apply butter and prepare the baking dish.
2.Preheat the oven to 180 degrees.
3.Mix all the ingredients given under filling.
4.Layer 2 sheets of Phyllo pastry (1 sheet cut into 2 equal halves can be used),in our buttered baking dish.
Cut the sides if they are not fitting inside the baking dish.Brush butter on these sheets liberally and layer 2 more sheets and again repeat the process until 8 sheets .
Now spread the entire filling evenly and pour some butter on the filling.

Place 2 more layers and brush butter on the layers.Repeat this process until you get ten layers of pastry sheets for top layer.
Cut pastry into square or diamond shape.

Pour all the remaining butter on top and bake at 180 degrees until the top gets a golden brown color.
It took almost 50-55 minutes in my oven.(But check in between since each oven is different. )
5.Now make a syrup with sugar,water and honey.Add cinnamon powder to this and pour on hot,freshly baked Baklava to soak it in syrup.
6.Keep aside for 1/2 an hour-2 hours.
Garnish with crushed pistachios.
You will get the most delicious,royal dessert in the world!!

Kesari Recipe

Kesari recipe
Rava Kesari or Kesari bhath is a common dessert from South India using Semolina.
You can use broken wheat for a healthier version.
Indian food has a tradition of 1000s of years of using clarified butter/Ghee with lots of different kinds of nuts.Our grandmas were so sure about the desserts they used to cook for the young children to make them really fit and strong;while they gobble the sweet without always knowing about the benefits they are getting though.
Ghee/clarified butter  has got many health benefits.We only need a dash of ghee for very flavorful Indian desserts,so we can consider its use as healthy.

After a good lunch/dinner,don't feel guilty to have some Kesari to satisfy your sweet tooth.
It contains all healthy ingredients.
Here'z the ingredients and the method of preparation.
Ingredients
Semolina-1 cup
Water-2 cups
Sugar-1/4 cup
Cardamom powder-1 tsp
Saffron-(Kesari color/orange color)
Crushed Cashew nuts-
Ghee-1 tbsp
Method
Boil 2 cups of water.Add saffron,cardamom powder and nuts to this.


Once the water starts boiling,simmer.

To this,add in 1 cup semolina.Mix really well without lumps.Now after a minute you can see the semolina has been cooked.Add in the sugar and the ghee.
Cook until dry,continuously stirring.
Well,that's it.
Now you can serve this in ramekins or you can spread this on a plate to cut it in desired shapes.

Lebanese Dessert (Aish Al Saraya)

" HAPPY FATHER'S DAY...To All !!!
On the occasion of Father's day,deepsrecipes shares a different and very tasty dessert.
This is a very easy Lebanese dessert recipe,which is similar to Indian Royal Hyderabadi dessert "Shahi Tukra" or "Double Ka Meeta".
Actually,History says that Hyderabad royal cuisine is a fusion of Arabic and other rich tastes.
So here is a special,easy dessert for my dear readers .Please try this at home and enjoy.
This is my own version of the recipe,your comments  awaited.
Ingredients
Bread-5 no
Milk-2 cups
Sugar-1/2 cup
Cardamom Powder-a pinch
(This is my addition)
Clarified Butter-to shallow fry the bread pieces.
Crushed Pistachios - 
Method of Preparation
Shallow fry bread pieces (cut into squares) in butter.

Boil milk,add sugar and reduce it to a thick creamy consistency.Add cardamom.

Arrange fried bread pieces in a dish.Pour the milk sauce on top.
Garnish with crushes Pistachios.


A very delicious,rich & creamy bread pudding is ready in minutes.

Eggless Tiramisu

Italian Dessert Tiramisu Eggless recipe

Planning for a week end party?
Make it more elegant with a mouth melting dessert .Coffee flavored, rich and creamy Tiramisu with crunchy walnuts and cocoa powder on top.Perfect end to a wonderful  meal.
Easiest recipe ever.This is the eggless version .
Here we go.
Ingredients
Lady Finger Biscuits - 10 nos
Mascarpone cheese/Any cream cheese - 1/2 cup
Fresh cream-1 cup
Sugar  - 1/2 cup
Walnuts
Cocoa powder.
Method Of Preparation
Make a cup of strong coffee and cool it.
Beat  fresh cream very well until you get stiff peaks.
Now add cream cheese and beat well to make a smooth fluffy mixture .Add some coffee to this.Mix well .
Now dip lady fingers in coffee and arrange them into a layer  in a rectangle dish .Start to distribute the cream to get a cream layer. Repeat the step with biscuit and cream .Now top with cream.
Garnish with walnuts and cocoa powder.
Refrigerate it for 6-8 hrs.
Yummy,mouth melting ,vegetarian Tiramisu is ready !!
This is the eggless version of the recipe I had already posted in March 2011.
