Happy Valentine's Day ...Chocolate cake with cream cheese frosting (EGG LESS)

Chocolate cake with cream cheese frosting

Wish you all a very HAPPY VALENTINE'S DAY-2014.
This cake in the above picture is a chocolate & coffee cake popularly known as Chocolate Mocha Cake.
Recipe for this low fat cake is available in the link above.Very simple recipe,suitable as a tea cake if made less sweet.
But for this Valentines day, I have given a cream cheese frosting with Rose flavor.
Read the recipe for the cake from the other post.Here goes the recipe for frosting.

Mocha cake with rose cream cheese frosting.


Frosting Recipe

Cream cheese- 200 g
Powdered Sugar- 3/4 cup
Rose water -1 tbsp

Whisk all these ingredients together.Finely coat the cake with this romantic,rose flavored frosting.
Just give a touch of heart shaped strawberries on top.
Serve chilled.

Butterscotch Cherry Cake

This is the Christmas cake I baked for this Christmas...Hope you all enjoyed watching it.. :P
An extremely buttery cake as it contains lot of butter along with brown sugar,both dried and fresh Cherries,nuts and so on.

Now it's quite some time since I have baked something new.I find cooking interesting only to experiment new things.Otherwise,I must confess,day to day cooking is always boring for me,but I have to do it,since I try and stick to healthy diet.

If you believe me,I never plan a recipe. When I feel to bake,I randomly  shop some ingredients;which ever  I find interesting in the store.Then using them,how to make a new variety?This will be my next thought.
I rely on my intuition mostly..
A retrospective | 2013

The Year 2013 has reached it's end,soon it is going to be another chapter in our memories.
But,I feel that these dates and time are nothing of much important.What really matters are the Moments--How much we lived here....
I have some moments in 2013 to treasure for my whole life.Some moments that made me grow up as a person,when I learned some positive lessons to move forward...When I was motivated to change my perception of life.
Yes,it takes only a moment  for some people to influence us for a life time.I hope I too have sprinkled some positivism, on my dearest readers.

This year,I did experience certain negative things too,but I have forgotten them all;or may be I do not want to think about it.But I remember one lesson I learned from one such experience,for sure.When I met with an accident in 2013 and miraculously escaped,I learned that life is really momentary,so I must enjoy it rather than living in the past.

Beautiful,isn't it? Let's all try to stick to this resolution in the coming years.

With out any further delay,let us check the recipe for Butterscotch Cherry Cake
We need
1. Dry cherries- 4 tbsp
2. Almonds-2 tbsp
3.Apple Juice-1/2cup
4.Milk-2 tbsp
5.Butter- 1/2 cup
6. Brown Sugar-1 cup
7. Vanilla Essence- 1 tsp
8. Flour- 2 cups
9. Baking powder- 1 1/2 tsp
How to Prepare Butterscotch Cherry Cake?
1. Soak Dry cherries Cashews and almonds in Apple juice for 10-12 hours.

2. Beat butter and brown sugar until soft and really fluffy.
Now mix the soaked dry fruits into this and add vanilla essence.

3. Fold in the flour (sieved after adding baking powder ).If needed,add in 2 tbsp milk to adjust the consistency. Batter should be thicker than dropping consistency.
4. Bake in Pre-heated oven at 180 degrees  for 40-45 minutes.
I was thinking to give white frosting on the cake as it is Christmas. But the cake tasted very sweet and special with a butterscotch effect.So I avoided any kind of extra decor on it.

Banana Chocolate Muffins

Banana Muffins are very popular recipe.But here,we are trying a variation to the recipe,making it healthier and egg less too.

Banana Muffins are muffin version of banana bread.Muffins ,as you all know,are  a quick bread of American Origin.
Here ,I have mixed all purpose flour with some whole wheat flour ,to make it healthier.

Banana muffins can be a great after school snack or a good breakfast item for kids.These are healthy as it contains eggs,butter,banana & wheat flour.
Muffin with Red Raspberry Spread

What We Need to make Banana Chocolate Muffins:

Preheat the oven to 180 degree Celsius. 

Dry Ingredients

All purpose flour - 150 g
Whole wheat flour (whole meal/flax seed powder)- 100 g
Sugar- 4 tbsp
Baking Powder- 1 tsp
Baking soda- 1/4 tsp
Salt- 1/4 tsp
chopped nuts- 100 g
Mix all dry ingredients with a wire whisk.


Wet Ingredients

These are Eggless Muffins ,so,I used ,2 tbsp Condensed Milk instead.
Vanilla essence- 1 tsp
Banana- 1 big
Butter - 100 g
Chocolate melted- 2 tbsp
Whisk all wet ingredients in a separate bowl.


Combine wet ingredients into dry ingredients well. Don not over stir.Batter should be very thick.
(It should be thick,sticky batter,unlike cake batter).Add 1-2 tsp milk if the batter is too thick to scoop out.
Add blueberries or chocolate chips according to your choice.

Isn't this egg less muffin recipe so simple? And the results are awesome if you follow the mesurements.

Scoop the batter into muffin cups and bake for 20-25 minutes at 180 degress. (Until a toothpick inserted into the center of the muffin comes out clean)


We can store this for 3-4 days. Soon ,out of oven , the top of muffins will be crispy,but as you store them,it becomes soft and nice.

Serve it with a topping if you prefer,since we have adjusted the sweetness to minimum.That's why muffins are quick bread,not cup cakes.So here is my delicious muffin with a topping of my choice.

No-bake Cheesecake

no-bake cheese cake,

Cheesecake has two or more layers. The main, thickest layer is soft, creamy cheese, sometimes contains eggs,and sugar; the bottom layer is often a crust or base made from crushed cookies, graham crackers, pastry, or sponge cake.Cheese cake may be baked or unbaked. We can use fresh fruits,fruits sauce or syrup as topping.

This recipe contains no-egg. We need spring form pan for this,but you can also use disposable tray if you wish to.

Egg less,no-bake cheese cake .

Ingredients

Digestive Biscuits/graham crackers-
You can even use Marie Biscuits if you like the taste.
Butter- 150 g
Cream cheese- 200 g
Thick Fresh cream- 150 g
Vanilla essence- 1 tsp
Sugar- 1 cup
Topping
Fresh fruits,berries;Here I have used red raspberry fruit spread.
Method Of preparation
Crush biscuits /crackers and mix well with butter.This is the base/crust for our cake.So press it well into the mold or  disposable tray.
Cover this with plastic wrap and keep refrigerated for 15 minutes.Meanwhile we can make the filling.
Beat/whisk cream cheese,fresh cream and sugar together.
Add vanilla essence and whisk until really smooth and fluffy.
Now,pour this on the biscuit base and again cover with plastic wrap.

Refrigerate for 2 hours or over night.Remove from the mold and Serve with desired toppings.

Strawberry Short Cake Recipe

Today,Deepsrecipes is sharing,the MOST FAMOUS STRAWBERRY SHORT CAKES...!!!
Short cake recipe has many variations.This one is a very quick ,delicious method, tried and tested and the results were great.Sharing this wonderful recipe here.
You can even use this as a simple birthday cake.

Ingredients
For the short cake
Flour-2cups
Baking powder-1tbsp
Sugar-5tbsp
Butter-80 g
Oil-1tbsp
Buttermilk-1 cup 
Vanilla essence-2tsp
For Filling
Fresh Strawberry-8-10 no
Sugar-2tbsp
Heavy Cream-1cup
Vanilla essence-1tsp
Icing sugar-2 tsp
Crush the strawberries with fingers and add in the sugar.Keep this refrigerated for 30 minutes-1 hr.

Method of preparation
Mix all dry ingredients for the cake.
Cut  the butter into the dry flour mixture and mix with fingers until the mixture is coarse.
Pour in the buttermilk little by little and make a thick batter.(Thicker than usual cake batter)
Now bake for 30-40 minutes in a preheated oven at 180 degrees or until the top turns golden brown.
Cool the cake well.

Filling
Beat the cream,icing sugar and vanilla until you get fluffy peaks.
Cut the cake horizontally with a serrated knife into 2 or 3 layers.I made 2 cakes at a time,using the same batter above.
Add one layer of crushed strawberry filling on the cake layer.Then whipped cream,now,close this with another layer of cake.Repeat the layering process.You can serve this chilled topped with whipped cream.
But,I have coated the whole cake with whipped cream.

Mocha Cake (EGG LESS)

Here is a simple Cake recipe which can be a great accompaniment to TEA/Coffee.Chocolate and coffee flavor makes it more delicious and sour cream gives a unique taste that every one would love for.No toppings since this is purely for a simple evening coffee.
Ingredients
All purpose flour- 1 cup
Cocoa powder-4 tbsp
Sour cream -3 tbsp
Sugar-1 - 1 1/2 cup
Salt- a pinch
Baking powder- 2 tsp
Milk-2 tbsp
Hot coffee-1/4 cup (Or as much as to make a thick cake batter)
Vegetable Oil-1 tbsp
Method Of Preparation
1.Mix and sieve all the dry ingredients.  
2.Add in Milk,sour cream and 1 tbsp coffee.Slowly incorporate enough coffee to get a smooth and thick batter.
3.Preheat oven for 5 minutes at 180 degrees.
Bake the cake for 40 minutes.
Enjoy with a cup of Coffee/tea/Milk!

Hot Fudge Pudding Cake


Hot chocolate fudge pudding recipe is a very simple dessert.Serve it with Ice cream if you like.But this as such is so delicious.Very few ingredients and so quick to cook.Here is the recipe.
90% of this recipe is adapted from Betty Crocker's recipe.
Ingredients
1.All purpose flour- 11/2cup
2.Sugar-3/4 cup
3.Baking powder-2tsp
4.Cocoa powder-2tbsp
5.Salt-1 pinch

6.Milk-1/2 cup
7.Veg.Oil-2tbsp
Brown Sugar-2tbsp
Cocoa-1/4 cup (for topping)
Hot water-1/4 cup
Method Of Preparation
1.Preheat oven to 180 degrees.
2. Mix dry ingredients from 1-5 very well.
Add in veg.oil and then milk and make a smooth batter.
3.Now spread this in an ungreased baking dish.
4.Make a layer of cocoa and brown sugar on this batter.
5.Now pour 1/4 cup very hot water on to this.Do not stir.


6.Now bake this for 30-40 minutes,until top part gets dry.
Serve this with Ice cream.

Vanilla Cupcakes

Best and easy Vanilla cupcakes.Here is a recipe.
Ingredients
All purpose flour-1 1/2 cup
Wheat flour-1/2 cup
Baking powder -1 tsp
Baking soda-1/4tsp
Milk powder-2 tbsp
Butter-2 tbsp
Sugar-1/2 to 1 cup
Vanilla essence-1tsp
Chocolate chips-just for decoration.
Method
Whisk dry ingredients together.
Beat butter,sugar and vanilla in a bowl.
Add some(very little by little) water and combine the dry ingredients with this .Mix to get a fluffy thick batter.The quality of cupcakes depends on the amount of water you add.
This is the consistency we need-

Now line paper cups in a muffin pan .Pour the batter to almost 3/4 of the cups .Add some chocolate chips on top for decoration.Flatten the top with a spoon.

Now bake at 190 degrees for 25 minutes.
You will get well raised fluffy cupcakes.

Almond chocolate chip Cupcakes~Happy Mothers Day!

HAPPY MOTHER'S DAY TO ALL ..

On this special day,I am very glad to share a very simple kids favorite recipe:
Egg less Almonds&chocolate chip cupcakes.Really delicious and can be a great breakfast for the kids.




Ingredients
All purpose flour-1 1/2 cups
Whole meal-1/2 cup
Milk-1/2 cup
Sugar-1/4 cup
Chocolate chips-
Baking powder-1tbsp
Soda-bi-carbonate-a pinch
salt-a pinch
Oil-2 tbsp
Method
Mix the dry ingredients with a fork except chocolate chips.
Now add the milk and oil and mix well to a very smooth consistency just as cake batter.Add in chocolate chips,almond slices and mix carefully.
Preheat the oven to 190 degree Celsius for 5-8 minutes.
Pour the batter into muffin pan lined with paper cups and bake for 20-25 minutes.
This is an healthy and tasty way to show your love for your kids on MOTHERS DAY...!!
Also it's a great and easy job to decorate them if you have some extra time.

Yogurt Brownies (eggless )

Brownie recipe

Brownies contain no baking powder or baking soda.So considered to be healthier than cakes.
Combine different flours with all purpose flour thus making it a good wholesome meal.Kids love Brownies and it is so easy to make too.
Ingredients
Butter - 50 g
Powdered Sugar-3/4 cup
Chocolate syrup-1/4 cup
Flax meal-1 tbsp(You can use 1 egg instead of flax meal)
Yogurt-1/4 cup
Almonds crushed
All purpose flour-1 cup
Vanilla essence-1 tsp
Method of preparation
Melt butter and beat with powdered sugar and chocolate syrup.
Add in flax meal and yogurt .Beat well.Now add in vanilla essence ,finally flour.Beat well.
Fold in crushed almonds.
Bake at 180 degrees for 30-40 minutes or until a tooth pick inserted to the center,comes out clean.

Soft and delicious Brownies are ready to serve along with some Coffee.You can serve these brownies warm even with a scoop of Ice cream. So what are you waiting for! Binge yourself on some scrumptious brownies today.

Easy Microwave Cooking

Chocolate Mocha Cake
Here is a super simple recipe for a soft tasty chocolate mocha cake.  Soft and  rich eggless cake in less than 10 minutes.
This is my version of eggless chocolate cake, after trying all those recipes by others.
Step 1
Dry Ingredients
Cocoa powder    --- ½ cup
All purpose flour – 1-1/4 cup
Baking powder - 1 tsp
Baking soda   - 1 tsp
Salt                 - ¼ tsp
Whisk dry ingredients together with a fork. No need to sieve.
Step 2
Butter         - 75-80 g
Dark chocolate –20 g
Oil                     - 1 tab sp
Yogurt           -- 1 cup
Sugar              -- ¾ cup
Coffee           --- 1 tsp dissolved in 2 tab sp hot water.
Vanilla essence – 1tsp

In a sauce pan melt 80g butter, add chocolate and melt.
Cool the mix.
Combine dry ingredients, butter-chocolate mix, oil, sugar, yogurt and coffee, mix well.
Add enough water/buttermilk to get a dropping consistency.

Bake in a microwave high power for 6 minutes. You will get very high cake .
Frosting
Cool the cake very well before frosting.
Beat together 200g cream cheese and 1/2 cup powdered sugar .Add vanilla essence.
Cover the cake completely with cream on all sides and the top.Sprinkle chocolate bits or cocoa powder .

Chocolate Nutty Cake

Egg less Cakes
This  is a very simple ,basic recipe for a good cake without butter or  eggs .
Ingredients

All purpose Flour- 1 -1/4 Cup
Cocoa Powder – ½ Cup
Baking Powder -1 tsp
Baking Soda – 1tsp
Salt- ¼ tsp
Whisk all these Ingredients Well with a fork.


Oil- ½ cup
Sugar -1 cup
Hot coffee – 2tbsp
Milk- As required
Cashew nut- 100g
Method Of preparation
Beat oil, sugar and coffee. Add in dry ingredients and incorporate well.
Now add milk to get a batter of dropping consistency. Finally mix in Cashews.
Bake at 170 degree for 30-35 minutes.
Chocolate Nutty Cake is ready!!!!

Lemon Cake

Yogurt Lemon CakeEasy Recipe for Lemon cake
This is a very quick and easy recipe to make a very delicious Lemon Cake.
Ingredients
Yogurt -- 1 Cup (Plain or Lemon Flavored)
Flour – 1 Cup
Baking Powder- 1/2 tsp
Sugar- 1 Cup
Lemon zest –1-1/2 tbsp
Vanilla Essence/Lemon Essence
Egg – 1
Oil- ¼ Cup
Salt – a pinch
Method of Preparation
1. Beat 1 Egg with sugar till fluffy. Add in lemon zest, this will give a very delicious lemon flavor to the cake.
2. Add in yogurt, Vanilla essence, salt and oil. Beat well until very soft and smooth.
3. Sieve flour and baking powder into the mix and fold it with a spatula.


Add some water if needed.


If you want, you can add 1tbsp lemon extract, but I found the cake is getting very good lemon flavor even with out that.


Bake and serve with/with out lemon glaze on top. This is very tasty even without any frosting/glaze.
( I have drizzled a bit of cocoa on the cake)
This Cake is a very good accompaniment for Tea/Coffee.

Flax Seed Muffins recipe


Flax seed muffins,Low carb diet

One of the readers requested me to post some recipes with flax seed.So I hope she is reading this .
Flax seeds are the most nutritious meal .Its very low in Cholesterol and Sodium. It contains high levels of dietary fiber. Flax seeds lower cholesterol. It has a great medicinal value.
So include flax seeds in your every day diet. Every morning, you can even take a tablespoon of flax seed powder dissolved in water.
Add some flax seed powder with any other flour in any of your recipes such as pan cake or baked items.
Enough of health talks. Now let’s begin.
Ingredients
Flax seed powder-1 cup
Plain Flour -1/2 cup
Salt- a pinch
Baking soda-1 tsp
Oil- 2 tab sp
Warm water/butter milk – 1 cup
Cinnamon powder-1tsp
Vanilla essence-1tsp
Blue berries-1/2 cup
Brown sugar-3/4 cup
Method of preparation
Using a fork, mix flax seed powder, flour, salt, brown sugar, cinnamon powder and baking soda well.
Add in buttermilk and oil to the dry ingredients and mix well with a spoon, care to be taken to avoid lumps. Mix in blue berries.
Fill muffin moulds lined with paper cups to 2/3 full, and bake for 17 minutes at 180 degrees.
Enjoy it with Tea or Coffee.
