  • It is said that Broccoli shortens the duration of common cold(Since Broccoli is rich in Vitamin C). Now,who said,there is no cure for cold!!
  • Contains both soluble and insoluble dietary fiber.Making it Diabetic friendly.
Selection of Broccoli


Select dark green  or even pale green.Never choose yellow.Greener the Broccoli,more beta-carotene it has.Stalk should be fat and woody.

 What you need ?

1. Broccoli florets blanched-
2. Olive oil
3.Garlic- 1 clove
4.Sesame seeds- Optional
6.Salt & Pepper
7.Vinegar- 1-2 tsp
8. Honey- 1 tsp
9.Almonds-

How to Prepare?

Make a dressing with Olive oil,vinegar and honey.Whisk well.
Add in salt,pepper and crushed garlic.
Mix well for a minute.
Toss in broccoli and serve topped with almonds and sesame seeds .

Sweet Potato Chilli

Sweet Potatoes....!!
They are healthy,you all know that. But they help in weight loss too..Yes.

1.Replace white rice with sweet potatoes to get the real benefits of carbohydrates.
2. Add one sweet potato to your breakfast and see the benefits.
3. Sweet potatoes contain high fiber .It has low glycemic index ,so a good carbohydrate choice for diabetics.
Sweet Potatoes are really tasty even steamed or boiled.But to make it more interesting,especially,if you have a crave for french fries,you can bake them just sprinkling olive oil,salt & pepper.
Another healthy alternative is "Sweet Potato Chilli" here is the recipe:-

This tastes great and even can be served as a healthy party item.

Ingredients

1.Sweet Potatoes Boiled (half cooked) - It is easy to peel off the skin when half cooked.
2. Red Chilli Powder- 2 tsp
3.Salt-
4.Bell pepper-
5.Onion-1 no
6. All purpose Flour-1 tbsp
7.Oil- 1 tbsp

How to cook ?

Cut half cooked sweet potatoes into wedges .Coat the wedges with all the dry ingredients .No need to add water.
Shallow fry until crispy after adding bell peppers and onion .
Serve hot.

Brown basmati rice pilaf


Prepare the perfect Kids Meal for his/her lunch box.

A meal packed with nutrition ,yet your kid enjoy? Challenging for any mom,right?
Here is such a recipe ,I guarantee your kid gonna gobble it up with out any complaints.
Brown Basmati Rice has a wonderful nutty taste. This is the healthy grain with low fat content and gluten-free too.
Basmati rice has low glycemic index which means energy is released slower, making it  diabetic friendly.
Brown rice has more complex carbohydrates which  powers up the body,especially suitable for young children.

What You Need for this Pilaf?

1. Good Quality Brown Basmati Rice - 2 cups
2. Your kids choice of vegetables - Chest nut Mushrooms,Cabbage,Carrot,Beans,Baby Corn,Asparagus and you name it.
But one secret idea I want to share to all those moms out there is that,you can add cabbage(violet cabbage) and it will get disguised in the pilaf that your picky eater would not even notice.
3. Butter/Olive Oil- 1 tbsp
4. Garlic - 2 cloves
5.Onion - 1 large
6. Vegetable stock- 
7. Cardamom Pods- 2,bruised 

To serve 
Natural Yogurt - 
Fresh Chives /Parsley -

Mix Yogurt with chives /parsley and serve with the pilaf.

HOW TO PREPARE THIS MEAL?

Fry garlic,onion and vegetables in the butter/olive oil for 5 minutes.
Add rice,stock and cardamom.Add enough stock to cover the rice.You may need to add a little more stock after 10-15 minutes.
Cover and cook until rice is done and water is absorbed and rice is tender.
Serve hot with the yogurt dip prepared above.

Ingredients
Lemon-2 nos
Green chilies-4-6 nos
Yogurt-1 tbsp
Coconut grated-2 tbsp
Mustard powder-2 tsp
Method of preparation
Wash and clean lemon.
Cut lemon into small pieces.Add salt and mix well.Keep aside.
Grind together coconut 2 tbsp,green chilies and mustard powder to a smooth paste.Mix this paste with yogurt and pour into the lemon mixture.
Tampering
Heat 1 tsp oil in a pan.Splutter mustard seeds.Add dry red chilly and curry leaves to the oil .Pour this over the curry.
Very tasty,tangy curry is ready...Health benefits are boundless as we already discussed...

Oats Balls


Oats Balls are delicious and diabetic friendly.Oat meal contains good amount of dietary fiber .They say that a bowl of oats in the morning lower cholesterol.So here is an anytime snack with oatmeal. Diabetic patients should use minimum (less than 1/4 cup)Jaggery. Jaggery is a substitute for sugar but only taken occasionally.

Ingredients
Oatmeal-2 cups
Jaggery-grated -1/2 cup
Coconut-1/4 cup
Cardamom powder-1 tsp
Method of Preparation
In a pan,.fry oat meal until crispy.Add in coconut,jaggery and cardamom powder.
Mix well.Let the jaggery melt a bit.Now when its still warm,make balls .
Delicious Oat meal Balls can be eaten as breakfast or tea time snack.

Fruit Salad with Yogurt and flax meal dressing~Diabetic Friendly.

Wishing All My Readers A Very Happy and Colorful ' HOLI '!!

Today,8th March is the first Anniversary of this blog ~ Deepsrecipes. 
My heart felt acknowledgment of appreciation to each and every one of you,who takes time to read and try out my recipes.
Today,I assure you that deepsrecipes will try to ameliorate in future.
This is a sequel to my previous post-if you haven't read it yet,take a peek here.
As I said earlier,there are dual reasons to fete today.So,here is a dessert recipe (Diabetic friendly). I have tried to include multiple food groups into this tasty no-sugar sweet,so that you can enjoy the luscious taste of a dessert ,still adhering to your diabetic diet.
This contains flax seed,which is good source of Omega3 fatty acids .

Ingredients
1.Plain Low fat Yogurt-1/2 cup(If needed,make it thin by adding some water)
2.Honey or Maple syrup-to taste
Apple-2 no(Cut into small pieces)(Use mixed fruits instead of just apple)
(Fruits are natural sugars,but contains micro nutrients essential for you.So those with high blood sugar level, consume fruits in small portions)
3.Whole Flax seeds-1 tbsp(Grind it before adding to the salad.If you are using flax meal,its already powdered so add 2 tbsp)
4.Vanilla essence-1tsp
5.Unsweetened chocolate sauce-
6.Crushed Almonds-1tbsp
Method of Preparation
Beat the yogurt well with all the ingredients other than fruits.Pour the dressing over the apple or mixed fruits.
If you like chocolate,you can top the dessert with unsweetened chocolate sauce and almonds.
3-4 minutes after mixing this fruit salad,flax seeds gets soggy and dessert turns to creamy and divine,you all must try this to get the real taste!!

Diabetes~Some Basic Information.

Diabetes is not a pleasant condition. But if you are one with a high blood sugar level, don’t get disheartened.
This is not the end of the world. If you give a little forethought before planning the diet,also change the cooking methods,then you can definitely control Diabetics.
Today,let us hash out  a thoughtful meal planning  for Diabetes-
Diet plans for diabetic patients.
1.       Reduce the intake of Protein, carbohydrate and Fat. These three food groups are not good for diabetic patients. This doesn’t mean that you ought to eat only boring food; instead follow a healthy and interesting diet plan. Deepsrecipes is trying to share some diabetic friendly recipes .I will continue sharing, if I am getting positive reviews.
2.       Limit the intake of milk and milk products.
3.       Include high fiber diet; like whole meal bread/flax seeds/Broccoli etc.
4.       What you can have in plenty is vegetables. So include raw salad vegetables as a snack even.
5.       Fruit intake should be limited and according to dietitians menu plan; since fruits are natural sources of sugar.
6.       Consume small meals throughout the day; avoid the normal 3 big meals in a day system.
7.       Diabetic cooking methods are very effective. This includes baking, steaming, poaching and stir frying.
8.       Use olive oil for stir frying and reduce the salt and fat contents.
9.       Use Avocado paste instead of mayonnaise.
10.   Eat fish (contains Omega 3 fatty acids) twice a week.
11.   Avoid Coffee; substitute with Green Tea.
112.   Drink plenty of water.

Keeping these points in mind let’s make a diabetes friendly dessert item to celebrate the Indian festival Holi and our blog’s first anniversary.

Flax seed Idly


Flax seed or Linseed is of two varieties; Brown and yellow. Both have equal nutritional values.
Flax seed is tiny; but it contains highest amounts of fibre, vitamins, minerals, and Omega3 fatty acids.
Low in carbohydrates, it is said that flax seed even reduces or stabilizes blood sugar levels for a long period.
It’s always better to consume flax seed in small quantities. This will benefit you in lowering cholesterol.
Storing flax seed is another important aspect.

 It is said that,its better to store flax seed in the refrigerator or freezer.

Another amazing use of flax seed is that we can use this as egg substitute while baking.

So sprinkle  flax seed to your salads, cheese, cakes, pan cakes, shakes or to almost anything, to make it a complete diet.
Today’s recipe is flax seed Idlis.Flax seed has got no special taste, so it’s the best thing to add to our idly batter to get fluffy, nutritious idlis.
Enjoy it with your favorite side dish.

Whole Flax seed is the best than flax seed meal,but I could find only powdered flax seed (flax seed meal).

Anyways,here we go...
Soak and grind whole flax seed with other ingredients for the Idly batter.
I added flax seed meal to the normal Idly batter.

Now make Idlis.

You'll find these Idlis are more fluffier and softer than usual.

Enjoy it with the curry or Chutney of your choice!!!

Okra in Yogurt (Bhindi Kadhi)



India is rich in its variety of culture, food habits and what not...
This recipe is called Kadhi and it is from the Indian state Gujarat. Basically, Kadhi means thick gravy using yogurt, chickpea flour etc.Kadhi is an every day food  in many  northern parts of India.

It’s very healthy, since it has Protein from the Chick pea flour, Calcium from yogurt and Vitamins from the veggies .It’s a good combination with plain rice.

Okra or Ladies finger is packed with nutrients.
Health Benefits of Lady's Finger:
1. The vegetable is a good provider of good bacteria called the probiotics. Probiotics helps in biosynthesis of vitamin B.
2. It is said that Ladies Finger is anti-diabetic. Means it helps to reduce the blood sugar.
3. It helps in healing acid reflux.
4. Also it helps in reducing he risks of diseases like Cancer.
This Curry is so very tasty; I got real appreciation from all in my family. So you can give it a try.
Ingredients
Okra (Ladies Finger) - 200 g
Yogurt – 1cup
Chick pea flour (Besan)-2 tbsp
Water – 3 cups
Salt – to taste
Oil – 2 tsp
Clarified Butter – 2 tsp
Mustard Seeds- 1 tsp
Turmeric powder-1/2 tsp
Clove, Cinnamon powder- 2 tsp
Green chilly paste- 1tsp
Ginger-garlic paste – 1 tsp
Fenugreek powder- ½ tsp
Curry leaves and Coriander leaves Chopped– 4 tbsp
Method of Preparation
Cut Okra  lengthwise.
1. Blend 1 cup yogurt, 2 tbsp chick pea flour, turmeric powder, salt and 3 cups water using a hand blender.
2. Heat oil along with clarified butter and splutter mustard seeds.
3. Add all the ingredients and okra.
4. Fry Okra and cook for 5 minutes
5. Finally add the yogurt-chickpea mixture.
6. Keep stirring on a low flame to prevent curdling.
7. Make sure the chick pea flour has cooked well .Simmer for 3-4 minutes. The sauce thickens.
8. Finally, u can add some chopped ginger.
9. Serve hot.
