Fish Fry ~Another Method

 Fish Fry.
As you can well understand from the picture,this fish fry is divine..Actually,the recipe was just a trial.But I think because of the right choice of fish ,the result came out to be a big wow.
I used skinless pieces of Trevally Fish.Try this out and enjoy.
Ingredients
Boneless skinless Trevally fish-500 g
Shallots -6-8 nos
Red chilly powder-1 tsp
Dry red chilies-5-6 nos
Turmeric powder-1/2 tsp
Garlic-1 clove
Coconut oil-1 tbsp
Salt
Method Of preparation
For Marination
In a pan add 1 tsp oil.Fry shallots,dry red chilies and garlic .
Add salt,1 tsp chilly powder and turmeric powder.Blend in to a smooth paste.
Marinate fish pieces for 1/2 an hour in this masala.
Grill or fry using very little oil.
BINGO!!  Serve hot.

Mixed Fruit Jam



Ingredients
Fruits-Apple,pear,kiwi,pineapple and orange.-2 cups
Sugar-1 cup
Lemon juice-1tbsp
Vanilla essence/nutmeg powder-
Method of Preparation
Blend all the fruits to a paste in a blender.
Heat a pan.Pour the fruit puree into the pan.Stir well after adding sugar.
Add 1 tbsp lemon juice to prevent crystallization of sugar.You can add vanilla essence or nutmeg powder for more flavor.
Cook until it thickens to dropping consistency.

Once its cooled,it gets more thick and you can store it in a sterilized jar.
Serve this with home made whole meal buns for a very healthy breakfast.

Fish Curry (Sardine Curry)

Sardine is a small oily fish,rich in nutrients.
Ingredients
Sardines -500 g
Onion-1 big (make a paste)
Ginger-paste -1 tbsp
Chilly powder-1tbsp
Fenugreek(Methi seeds)-1 tsp
Mustard seeds-1 tsp
Curry Leaves-
Dry red chilly-2-3 nos
Raw mango- 1 cut into small pieces.
(Use Kokum(2-3 nos) if you don't find raw mango.)
Oil-2 -3 tsp
Method Of Preparation
Heat a non stick skillet or sauce pan.Add 2 tsp oil-Splutter mustard seeds.Now add in fenugreek seeds,dry red chilly and curry leaves.When they become slightly brown,add in the ginger paste.Fry this well.
Now add in onion paste.After 2 minutes add in turmeric powder,chilly powder and salt.Keep stirring until oil separates .Now add the fish pieces.Coat the fish with the sauteed masala.Let fish fry a little.
Lightly Fry the fish with all the masala-
Now add 11/2 cups of warm water,mango pieces and more salt if needed.
Once its cooked well(in 3-4 minutes) and gravy is thick,add 1 big spoon of coconut oil and curry leaves on top.
Close the lid to lock the flavors.

Yummy,tangy,delicious and nutritious fish curry is ready to serve!!!

Short Bread Cookie

Classic Short Bread Fingers
This is the simplest cookie recipe .Rich,buttery,a bit crumbly and very tasty.I always wanted to try this recipe and finally  made it.
Ingredients
Flour-2 cups
Butter-125g
Powdered Sugar-1/4 cup
Vanilla essence-1 tsp

That's it..simple isn't it?
Method of Preparation
1.Beat butter and sugar until smooth and fluffy.Add in vanilla essence and mix well.



2.Add flour little at a time and mix a soft dough.


 Arrange a parchment paper in a baking tray.Spread the dough evenly on it.


3.Now with a knife make short bread fingers on the dough as you can see in the picture below.

4.  Prick each cookie with a fork.Picture explains this step well.

4.Sprinkle some powdered sugar on top.Bake at 170 degrees for 30-40 minutes or until the top is golden.Cool well so that it gets harden a bit .As you know,this should be not at all crispy,but soft and crumbly.

Serve it with Tea or a glass of Milk.

HAVE A BLESSED AND PROSPEROUS VISHU .....

Agriculture is the back bone of Indian sub continent.
Today, the people of KERALA celebrate their Harvest festival and  New Year called VISHU.
In Sanskrit, Vishu means equal.
VISHU KANI
Many states like Tamil nadu, Karnataka,West Bengal and Assam also celebrates New year on the same day.
In Mangalore and Uduppi districts of Karnataka(they call it as BISU) celebrate their new year, in their own way.
Up in the North and Punjab,their harvest festival is also on the same day and they call it Baisakhi.

In Kerala,it’s a big celebration with fire crackers,Feast and very fabulous Vishu Kani.
Every Malayali has their own nostalgia with Vishu.

Chilly Idlies

Chilly Idlies are Indo-Chinese fusion recipe.I tasted this from one elegant vegetarian restaurant in Dubai.
Here I have tried to bring the same taste .Please try this at home and tell me how you find it.This is so easy to make and you can serve it as a starter.
Ingredients
Idlies-Cut idlies into wedges.
Dry chilly flakes-1 tsp
Oil-2 tbsp
Garlic-2 cloves chopped
Onion-1 chopped
Bell peppers-1 big
Spring onion/scallion-1 small bunch
Red chilly sauce-1 tbsp
Soy sauce 1 tsp
Method Of Preparation
1. Fry Idlies in 1 tsp oil until crisp.You can sprinkle some salt on the Idlies to enhance its taste.


2.In a wok/pan add in 1 tbsp oil.Saute garlic and red chilly flakes.

Now add onion and scallions .Its now time for bell peppers to pop in.
Saute well and let the vegetables cook a bit.Now add the sauces,mix for 2 minutes .


Finally mix the fried Idlies and garnish with scallions chopped. Trust me this is really delicious!!

World Health Day -7th April.

The World Health Organisation (WHO) observes APRIL 7 as the World Health Day  to draw attention to their priorities for global health.April 7 is also the anniversary of founding of WHO in 1948.
This year their slogan of the day is : "Good health adds life to years".This shows how good health through out life can help older men and women lead full and productive lives.

So,this year 2012,WHO highlights "Ageing and Health" as their theme for Global Health Day. Above picture is

Yogurt Brownies (eggless )

Brownie recipe

Brownies contain no baking powder or baking soda.So considered to be healthier than cakes.
Combine different flours with all purpose flour thus making it a good wholesome meal.Kids love Brownies and it is so easy to make too.
Ingredients
Butter - 50 g
Powdered Sugar-3/4 cup
Chocolate syrup-1/4 cup
Flax meal-1 tbsp(You can use 1 egg instead of flax meal)
Yogurt-1/4 cup
Almonds crushed
All purpose flour-1 cup
Vanilla essence-1 tsp
Method of preparation
Melt butter and beat with powdered sugar and chocolate syrup.
Add in flax meal and yogurt .Beat well.Now add in vanilla essence ,finally flour.Beat well.
Fold in crushed almonds.
Bake at 180 degrees for 30-40 minutes or until a tooth pick inserted to the center,comes out clean.

Soft and delicious Brownies are ready to serve along with some Coffee.You can serve these brownies warm even with a scoop of Ice cream. So what are you waiting for! Binge yourself on some scrumptious brownies today.

Theeyal Recipe (A spicy curry from Kerala)

This curry is called "Theeyal " ; One of the very delicious, spicy and savory curries from traditional recipe collections of Kerala. Kerala food is famous and much admired by all around the world. This particular recipe is popular in southern Kerala.
We can make theeyal with different vegetables or with Prawns instead of veggies.Today, I am giving you the basic Theeyal recipe with a combination of veggies.Here I use Bringal,bitter gourd and Onion.
INGREDIENTS
Bringal -cut into longitudinal sections-1/2 cup
Bitter gourd -cut into longitudinal sections -1/4 cup
Shallots (Or if its not available use Onion 1 big) -1/2 cup
Green chilies -4 nos-(slit into two).
Coconut oil-4tbsp
Grated coconut-1cup
Turmeric powder-1tsp
Chili powder-1tbsp
Coriander powder-2tbsp
Salt-to taste
Tamarind paste-1tbsp
Method of preparation
Step1
Make a masala paste.
In a shallow pan,pour 1 tbsp oil.Roast coconut.When its light brown in color,add in 1 tbsp coriander powder.Keep this on low flame for 10 more minutes.
Let it cool down a bit,then grind this into a fine paste.
Step2
Take a big vessel and pour 2 tbsp coconut oil. Lightly fry the cut veggies with green chilies.
Add in salt,turmeric,chili powder and remaining 1 tbsp coriander powder.Mix well and simmer.
Now pour in the tamarind paste along with 2 cups of water.
Let this boil and cook well.
Finally add in the coconut paste we have prepared.
Switch off once it starts to boil.
Tampering
Heat 1 tsp oil ,splutter mustard seeds and fenugreek seeds.Add in 2-3 dry red chilies and curry leaves.
Pour this over the curry and keep the lid on for 10 more minutes .
This curry is best with Prawns instead of veggies and served with white rice traditionally.

Malabar Fried Chicken

Malabar chicken fry
MALABAR FRIED CHICKEN 

Ingredients
Chicken-500 g cut into Big pieces
Whole pepper corns-1/4 cup
Garlic-Ginger paste-1 tbsp
Turmeric powder-1/4 tsp
Onion-1 small
Vinegar-1tsp
Curry leaves-
Method Of preparation
Clean the chicken with salt and vinegar.
Now add some salt,ginger garlic paste and turmeric powder .Cook until done.

Now the marination 
Make a paste with pepper,1 garlic,salt,vinegar,onion and curry leaves .Apply this to the cooked chicken and keep refrigerated for 2 hours.

Make a thin batter of all purpose flour after adding a  pinch of salt and a pinch of garlic paste.

Shallow fry these marinated pieces after dipping in the batter.

Exotic Kerala Malabar chicken fry is ready..!!!!
