Falafel Recipe

Another simple recipe for weight loss ....

The word Falafel means fritters itself or sandwich filled with it.
Falafel is common not only in Middle East,but also in Greece,Iraq,Egypt,Sudan,Yemen etc.
You can make it very easily and can serve with Pita bread and Hummus, along with any vegetables.

This snack is made with Chick peas, so it’s really low in fat and high in Protein and fiber.
Chick pea contains no Cholesterol.
Key nutrients are Calcium, Iron, Magnesium, Phosphorus, Potassium, Zinc, Copper, Manganese, Vitamin C, Thiamine, Pantothenic acid, Vitamin B and Folate.

Falafel is often recommended for use in weight control programs.

Ingredients
Chick Pea or Garbanzo beans- 1 cup
Onion-1 large
Garlic- 1 clove
Flour-2 tsp
Cumin-1tsp
Coriander-1tsp
Salt
Pepper-1/2 tsp
Method of Preparation
Soak Chick peas or Garbanzo beans overnight.
Combine the  ingredients in a food processor. Make it a coarse paste.No need to boil the chick peas.




Form the mixture into small balls, about the size of a Lemon. Slightly flatten.

Fry in 1 tbsp  oil until golden brown (5-7 minutes).
Serve hot with Cucumbers or Lettuce.
You can even fill Falafel in a burger bun if you like instead of Pita bread.

Hummus

This recipe gave me the real authentic taste of arabic Hummus.Serve this along with Khubbus or any flat bread for a very healthy protein rich breakfast.
Hummus is a healthy Middle eastern dip or spread made from cooked Chick peas(Garbanzo beans),Tahini,Garlic&Lime.
Though its very common in Middle east,I am trying to share the recipe with the people around other parts of the Globe.
As an appetizer and dip, hummus is scooped with flat bread  (such as pita ).

Ingredients
1. Garbanzo Beans or Chickpeas - 100g soaked all night
(Easily available as canned,but please avoid using canned Garbanzo beans)
2. Tahini  paste - 4tbsp
(Tahini is white sesame seeds available as canned paste.Instead,you can soak white sesame seeds over night and grind it to a paste along with olive oil)
3.Garlic paste- 2 tbsp
4.Lime juice - 2tsp
5.Salt   - to taste
6.Olive oil - 4 tbsp
7.(Cherry tomatoes , Olives for garnishing )
Method Of Preparation
Boil the chick peas adding salt and water until they are very soft. Drain and reserve the stock for later use.
Transfer the chickpeas to a blender along with tahini paste,garlic,1/2 tsp salt and 1tsp lime juice.Blend until a smooth paste ,adding olive oil gradually.Add reserved stock if needed to make a fine paste.
Adjust the lime juice/garlic to suit your taste.Transfer this to a serving dish.
Pour 2 tsp of olive oil  on top.Drizzle some paprika in to the oil.
Garnish with Cherry tomatoes and  Olives .
Serve Hummus with Pita bread or Khubbus(Lebanese Pita bread) ,or any bread of your choice.Or you can use it as a dip for veggies or chips.

Radish Kofta

Middle eastern Koftas,Indian Koftas with Radish

Kofta is a Middle eastern and South Asian delicacy using ground meat(also called Meat balls.)
This recipe is Radish Koftas;a vegetarian version of Kofta.
Dry Koftas are served as appetizers ;but you can easily make a delicious curry,with  tomato or cream based gravy  served with koftas.
My suggestion for the gravy which really goes well with kofta is here.
Substitute Paneer in the above recipe with these Koftas and you will get a delicious ,rich party item.
Ingredients
Radish-2 nos
Potato -2 nos
Corn flour-2 tsp
Salt ad pepper-
Oil-2 tbsp for shallow frying
Coriander powder-1 tbsp
Cinnamon Powder-1tsp
Cumin powder-1/2 tsp
Ginger-garlic paste-1tsp
Coriander leaves/mint leaves chopped
Method Of Preparation
Grate radish and you will get about 2 cups of the vegetable.
Boil potatoes and remove skin.
Heat a non stick pan and dry fry grated radish to remove excess water from the vegetable;radish contains lot of water in it.

Now add boiled and mashed potatoes and all other ingredients.Mix well and let it cook for a while.

Now if needed ,add the corn flour for easy binding.
Make balls from this and grill until golden brown.



If you are planning for Kofta curry,add Koftas to the gravy only at the time of serving.
ENJOY with Nan/rotis.

Baklava Recipe

Baklava recipe for  turkish dessert
Baklava is a Turkish delight easily available in Middle east,especially during the Holy Month of Ramadan.
It's a royal dish enjoyed at celebrations in Middle East,especially the Iranian Baklava,the one with Pistachio nuts filling.
The word Baklava in Farsi means 'many leaves' and to make it,layers of Phyllo pastry sheets are baked along with mixed nuts filling.It may seem to be a job only can be done by big Chefs,but anyone can make it as I tried it and came out very delicious and easy.
Many varieties of Baklava is available,secret of some recipes are also said to be passed down with in traditional family members only.
Anyways,I tried this recipe and I got the same taste as the one I found in the stores in Middle east.
Please try this,its worth the effort.

Ingredients
Phyllo pastry sheets-
Butter-3/4-1 cup melted
For filling
Almonds,Pistachio crushed-1/2 cup
Breadcrumbs- 2tbsp.(very important to add this-)
Sugar-2tbsp
Cinnamon powder-1tsp(Most important for the real flavor)

For syrup
Sugar-1/2 cup
Honey-1/2 cup
Water-1/2 cup
Cinnamon powder-1tsp
Method of Preparation
This is how I made the sweet and came out really good.
1.Apply butter and prepare the baking dish.
2.Preheat the oven to 180 degrees.
3.Mix all the ingredients given under filling.
4.Layer 2 sheets of Phyllo pastry (1 sheet cut into 2 equal halves can be used),in our buttered baking dish.
Cut the sides if they are not fitting inside the baking dish.Brush butter on these sheets liberally and layer 2 more sheets and again repeat the process until 8 sheets .
Now spread the entire filling evenly and pour some butter on the filling.

Place 2 more layers and brush butter on the layers.Repeat this process until you get ten layers of pastry sheets for top layer.
Cut pastry into square or diamond shape.

Pour all the remaining butter on top and bake at 180 degrees until the top gets a golden brown color.
It took almost 50-55 minutes in my oven.(But check in between since each oven is different. )
5.Now make a syrup with sugar,water and honey.Add cinnamon powder to this and pour on hot,freshly baked Baklava to soak it in syrup.
6.Keep aside for 1/2 an hour-2 hours.
Garnish with crushed pistachios.
You will get the most delicious,royal dessert in the world!!

Lebanese Dessert (Aish Al Saraya)

" HAPPY FATHER'S DAY...To All !!!
On the occasion of Father's day,deepsrecipes shares a different and very tasty dessert.
This is a very easy Lebanese dessert recipe,which is similar to Indian Royal Hyderabadi dessert "Shahi Tukra" or "Double Ka Meeta".
Actually,History says that Hyderabad royal cuisine is a fusion of Arabic and other rich tastes.
So here is a special,easy dessert for my dear readers .Please try this at home and enjoy.
This is my own version of the recipe,your comments  awaited.
Ingredients
Bread-5 no
Milk-2 cups
Sugar-1/2 cup
Cardamom Powder-a pinch
(This is my addition)
Clarified Butter-to shallow fry the bread pieces.
Crushed Pistachios - 
Method of Preparation
Shallow fry bread pieces (cut into squares) in butter.

Boil milk,add sugar and reduce it to a thick creamy consistency.Add cardamom.

Arrange fried bread pieces in a dish.Pour the milk sauce on top.
Garnish with crushes Pistachios.


A very delicious,rich & creamy bread pudding is ready in minutes.

Sumac Chicken

Sumac Chicken

Sumac is a Middle Eastern Spice.
Arabic Zaatar contains Sumac as one of its ingredients.
Sumac is the fruit of a shrub (Rhus coriaria) that grows throughout the Middle East and the Mediterranean. Just sprinkle this purple spice to get a tangy flavor to the food. It’s an essential ingredient in Middle Eastern cuisine, available in the spice section of all supermarkets in Middle East.
You can use this spice with Chicken, Fish or even in Salads just as a substitute for lemon.
Today’s Recipe:-Sumac Chicken
Ingredients
Chicken – 500gms
Turmeric Powder- 1tsp
Paprika – 1tbsp
Red Chili powder- 2 tsp
Cinnamon powder-1tsp
Corn flour – 1 -2 tsp
Garlic paste – 1 tsp
Salt- to taste
Sumac- As per your taste.
Preparation
Marinate Chicken with all the above ingredients and finally sprinkle Sumac .Keep refrigerated for 2 hrs.
Grill or fry in oil.
Yummy, tangy very tasty Chicken is ready. It’s worth a trip to Middle East to buy this spice, Sumac.
