Simple Lunch recipe-Phulka with Vegetable curry

Phulka with Veg Curry-
Simple phulka with vegetable curry.What's new in it? Yes,I know. But,today's curry is a little bit different from the usual veg curry. It's thick with a variety of vegetables and packed with nutrition.We are serving this with Phulka and kheer/payasam as dessert.

Trust me,this combination when served hot, is really mind blowing and this is definitely  my son's favorite lunch.

Since phulka recipe is already there,let's check what's the little twist in veg curry.

Ingredients for Veg.Curry
Violet cabbage- 1/2 piece
Onion-1 medium
Carrot-1-2 nos
Bell pepper- 1 big
Green Peas (Mattar)- 1/2 cup
Thick Coconut milk- 4 tbsp
Red chilly powder - 1/2 tsp
Garam Masala powder with coriander powder- 2 tsp
Mint leaves-
salt-
Turmeric powder- 
Method Of Preparation
Chop all vegetables-Cut carrot in to cubes.
Now Stir fry everything in Olive oil.
Close the lid and allow it to cook.If needed,add 1/2 cup of water.
When the veggies are half cooked ,add salt and all the spices.
Again close the lid and cook until done.It will take hardly five minutes to cook .
Finally add some coocnut milk and serve hot with Phulkas or any bread of your choice.

Palak Paratha(Spinach Bread)

Spinach Paratha


India is famous for its varieties of flat breads called Chapatis or Parathas.We can make this in many ways.Here I am showing a very simple version of Spinach Paratha.This is similar to Spinach pie.
Ingredients
Whole wheat flour-2 cups
Warm water-2 tbsp
Salt
Spinach leaves-1 bunch
Coriander powder-1tsp
Cumin Powder(Optional)-1/2 tsp
Method Of Preparation
1. Boil water after adding some salt.Wash the spinach leaves and when water starts boiling ,add spinach into this and turn off the heat.
After 2 minutes take spinach from the water and allow it to cool.
2. Make a smooth paste with spinach,add in the coriander and cumin powders,mix well.
3. Make a smooth chapati dough with Wheat flour,salt,spinach paste and warm water.Add the water only if it is needed.
Now make small balls from the dough and roll it flat into Parathas.
Place it over a skillet and cook on both sides.Add butter as needed.

Lamb Keema Kathi Rolls

Lamb Keema Kathi Roll
 Kathi rolls are fast food popular in the Northern part of India.
I had tried Paneer(Cottage Cheese) Kathi rolls, and  thought to prepare it at home, with Mutton/Lamb Keema.
Keema is the minced Lamb or meat.
This is very simple and extremely delicious!!! 
Method of preparation
For Lamb Keema
Minced Lamb-400 g
Ginger -garlic-green chilly paste- 2 tbsp
Onion-2 no
Tomato- 1 big
Cloves, Cardamom, Fennel seeds, black cardamom-All powdered together-2 tsp
Salt –to taste
Red chilly powder-2 tsp
Coriander powder-1 tbsp
Pressures cook all the above ingredients after mixing thoroughly.
You can add ½ cup water also.
After  4-5 whistles ,Keema gets cooked.
Now open the cooker and you can evaporate any excess water. Now add 2 tsp oil and fry this mix in the same cooker. Add some pepper on top and keep it on medium flame for 6-7 minutes.
Now let’s make the Paratha.
Ingredients
Wheat flour-1/2 cup
All purpose flour-1/2 cup
Salt-
Water
Make thin Paratha’s or Chapattis .
Now keep the stuffing inside and pour some lemon juice and add some onion slices and chopped coriander leaves.
You  can add any salad vegetable, you prefer,Lettuce,greenchillies,bell pepper slices..Choice is yours. But don’t forget to add  raw onion slices and lemon juice since it enhances the taste.
Serve hot.

Phulka

Indian Puffed bread ,Phulka,Chapati

This is the daily bread in Indian houses as part of our dinner.

Method of Preparation
1. Make Chapatti dough with out Milk or oil. Add warm water to knead the wheat flour.
2. Cook them on hot dry griddle.
3. Now lift the chapatti from the griddle and roast on both sides over an open flame.
4. Serve hot with Egg Curry in Bell Pepper sauce or any curry of your choice
