Easy Vegetable Rice~kids recipe

This is a quick and simple biriyani or very healthy, vegetable rice.
My son was told to bring vegetable pulao for a potluck kid’s party. I made this item for the kids.
They enjoyed it, since it’s less spicy and having an appealing smell of Mint leaves and other spices.
This is nicer when it’s cold, so u can even send this in the lunch box for the kids who like rice.
Ingredients
Vegetables-Carrot, beans, corn, Onion, Tomato, Cabbage-1/2 cup
Rice-2cups
Ghee-2tsp
Oil-1tsp
Mint leaves-1/2 cup
Yogurt-1tbsp
Ginger-garlic-green chili paste-1tbsp
Salt-to taste
Sugar-1tsp
Saffron-4-5 strands (Optional)
Cashews, Raisins-
Black Cardamom, cloves, Fennel seeds, Cinnammon-Powdered 1-2 tsp
Method
Cook rice after adding water just to cover it.
Don’t overcook.
In a non stick cookware, add 1 tsp ghee and fry cashews and raisins and keep aside.
Add 1 tsp oil to the same dish; now add ginger-garlic-green chili paste.
Now add the spice powder.
Add in the chopped veggies. No need to add water. Instead add 1 tbsp yogurt and cook the veggies. Add in salt and plenty of mint leaves.

Add a pinch of turmeric, red chili powder and coriander powder. (This step is optional, if adding, just add only very little)
Don't forget to add 1 tsp sugar,this step gonna enhance the flavor.
When it’s almost dry, add cooked rice, saffron, salt and remaining ghee.
Mix well.
Once it’s warm, serve with raita (Yogurt Salad).
Your family would love this delicious rice.
