Appam (Kerala recipe)

Ingredients Fine Rice flour--1 1/2 cups Yeast- 1/2 tsp dry yeast Coconut milk- 2-21/2 cups. salt-2 pinches Sugar-2 tbsp Cooked rice-2 tbsp Grated Coconut -2 tbsp Method of preparation 1. Take  2 tbsp Luke warm water,add sugar and dry yeast.Keep aside for 5 minutes .When it becomes frothy,add this to a blender along with rice flour,salt and 2 tbsp sugar.Add enough coconut milk and blend well.Add cooked rice and coconut into this and grind in to a fine batter.Consistency should be thinner than dosa batter,not too watery.Keep aside for 5-6 hours or until it gets fermented. Now,heat *Appam griddle.Keep it in simmer and add 1 big ladleful of batter.Swirl it and cook appam closing the lid.After swirling the griddle ,keep it on medium flame. Chicken Cafreal

Chicken cafreal is a Goan recipe. This dish is greenish brown in color.Here I have not followed the exact recipe,innovated to get more taste.Please try out and comment. Ingredients Chicken -1 full chicken cut into medium sized pieces. Onion- 2big cut into rings Salt and sugar. Oil- 1 tbsp for grilling Marinade Garlic-ginger paste-1 tbsp Coriander-1/2 bunch Tamarind paste-or Vinegar-2 tbsp Green Chillies-4 no Pepper corns- 1 tbsp Coriander powder- 1 tbsp (Optional-not in the original recipe) Garam Masala-1 -2 tsp Method of preparation 1. Make a cafreal marinade and marinate the chicken for 4 hours. for the marinade  Grind all the ingredients under marinade. This will give you a green color paste.Use chicken stock if needed.Coat the chicken with marinade and salt.Keep refrigerated for 4 hours. Vegetable hakka noodles

Hakka noodles is my favorite food.Recipe is solely my innovation.Please try this and enjoy,it's so simple and extremely delicious. I use a grill pan for assorting veggies and noodles so that I get a fried texture even with very less oil. I have used dark soy sauce hence the color. Ingredients Noodles-3 packs Veggies-Carrots,Peas,Bell peppers,Sprouts and spring onion Oil-1 -2 tsp Soy sauce-1-2 tsp Worcester sauce-1 tsp Vinegar- 2 tsp Salt- 1 tsp Green chilles-2 nos Garlic-2 cloves Ginger -Cut longitudinally Red chillies(dry)-1 no Method of preparation Cook noodles according to packet instructions. Heat oil in a grill pan and saute crushed garlic and dry red chilly. Saute veggies in this  oil. Add ginger and green chillies. Now add the noodles along with 1 cup water in which it was cooked. When everything get cooked and dried,add the sauces and allow it to fry for 3-4 minutes. Garnish with spring onions. ENJOY!

Hummus

This recipe gave me the real authentic taste of arabic Hummus.Serve this along with Khubbus or any flat bread for a very healthy protein rich breakfast. Hummus is a healthy Middle eastern dip or spread made from cooked Chick peas(Garbanzo beans),Tahini,Garlic& Lime. Though its very common in Middle east,I am trying to share the recipe with the people around other parts of the Globe. As an appetizer and dip, hummus is scooped with  f lat bread  (such as pita ). Ingredients 1. Garbanzo Beans or Chickpeas - 100g soaked all night (Easily available as canned,but please avoid using canned Garbanzo beans) 2. Tahini  paste - 4tbsp (Tahini is white sesame seeds available as canned paste.Instead,you can soak white sesame seeds over night and grind it to a paste along with olive oil) 3.Garlic paste- 2 tbsp 4.Lime juice - 2tsp 5.Salt   - to taste 6.Olive oil - 4 tbsp 7.(Cherry tomatoes , Olives for garnishing ) Method Of Preparation Boil the chick peas adding salt and wate

Spiced Finger Chips with Garlic Mayo

Another easy recipe from deepsrecipes- But not a low fat recipe,this time.But this is a grilled version of the french fries,so,there is an excuse. Break all the rules and binge. This is extremely tasty,starter item.French fries are anybody's  favorite, especially kids. Ingredients Potato-2 nos Chilly powder(Paprika )-1 tbsp or more according to your taste. Salt-to taste Plain flour-1 tbsp Garlic powder-1 tsp Oil-1 tbsp Method of preparation 1.Cut the potatoes into  longitudinal strips.Boil water with salt and cook the potato strips for 3-4 minutes. Remove from water and pat dry. 2.Mix all the dry ingredients with this potatoes and grill in 1 tbsp oil. 3.Serve hot with Garlic Mayo. *Garlic mayo can be prepared by adding garlic powder into mayonnaise. *You can use  frozen french fries to cheat the first step in this recipe. These are a healthy snack/Laddoo using brown rice and  Jaggery.   This is a tasty and healthy evening snack from the ancient recipe collections of south Indian state Kerala. Ari Unda/Rice balls Wishing all Indians a very HAP PY DIWALI. ..! It's again a festive season in our country INDIA.Diwali is the festival of lights.Every Indian around the world,celebrate this day,by  decorating their houses with lamps/diyas. Special sweets are also made on this auspicious day.  This recipe is simple ,hardly takes 10-15  minutes to prepare. Ingredients for Brown rice balls/Laddoos Par Boiled rice-2 cups Jaggery-1/2 cups grated Coconut grated-3/4 cup Cardamom powder-1 tsp Method Of Preparation Dry roast the rice until it crackles and turns golden completely.Refer the picture below for the exact texture. Pepper Gobi

Pepper Gobi is a grilled fry made from cauliflower in pepper and soy sauce. Very delicious and healthy.Cauliflower has got great nutritional value as it contains high amount of folate, vitamin C and dietary fiber.  Ingredients Cauliflower florets-Big pieces Garlic chopped-2-3 cloves Ginger-garlic paste-2tsp Onion-1 big no Corn flower-2 tbsp Pepper-1 tbsp Soy sauce-1 -2 tsp Salt-to taste Parsley leaves- Method Of Preparation 1 .Clean the florets under running water.Then dip them for 6-8 minutes in boiling water after adding salt and 1/2 tsp vinegar to the water.Drain. 2. Marinate with ginger garlic paste,salt,pepper,soy sauce and cornflower  with out adding water. 3. Grill it on a grill pan after adding very little oil. Crepe Recipe

Here  is a small variation from the usual Crepe  recipe.Crepes are really a quick and easy breakfast item. Here crepe batter has been enriched using whole meal   and wheat flour.Those who have bored of having brown bread every day can try this,tastes different from the usual pan cakes too.The authentic taste and aroma of sage gives this dish a completely different finish.Try this at home and please leave the comments. Ingredients Whole meal-1 cup (Instead make crumbs from brown bread and add to the wheat flour,as I have done.) Wheat flour -1 cup Dried Sage-1-2 tsp Salt-to taste Olive oil-Optional Water- Method Of Preparation Make a thin batter with all the ingredients except olive oil. Radish Kofta

Kofta is a Middle eastern and South Asian delicacy using ground meat(also called Meat balls.) This recipe is Radish Koftas ;a  vegetarian version of Kofta. Dry Koftas are served as appetizers ;but you can easily make a delicious curry,with  tomato or cream based gravy  served with koftas. My suggestion for the gravy which really goes well with kofta is here. Substitute Paneer in the above recipe with these Koftas and you will get a delicious ,rich party item. So  all coffee lovers out there,this recipe is for you.This is a method to make Instant Coffee with out using a coffee maker or filter ; You can use any instant coffee powder. “Come on, don't you ever stop and smell the coffee?”  ― Justina Chen Headley , North of Beautiful For 1 cup of coffee you need 2 tsp coffee powder or less as per your taste. A bit of hard work is needed. First add a spoonful of hot water and the required amount of sugar to the coffee powder and blend well with a spoon for 5-10 minutes or until the coffee turns thick and frothy as in the picture. Vegetable curry

Here'z a vegetable curry using yam and pumpkin . This nutritious,mildly spicy,tangy curry can be served with rice. Ingredients Yam- 100 g Pumpkin-100 g Mustard seeds-1/2 tsp Fenugreek seeds-1/2 tsp Asafoetida -1/2 tsp salt-to taste Shallots-6-8 nos Garlic -2 pods Turmeric powder-1/2 tsp Chilly powder-2tsp Coriander powder-1 tsp Coconut grated-1/2 cup Cumin seeds-1 tsp coriander leaves chopped Tamarind -soaked 2 tbsp Method Of Preparation Add 2 tsp oil to a sauce pan.Splutter mustard seeds,fenugreek seeds and saute shallots. Add the vegetables after cutting them in to cubes.Add turmeric,chilly ,asafoetida,salt and coriander powder and cook well in tamarind water. Add the garlic pods . Coarsely grind coconut and cumin seeds. Once the veggies  cooked well,add the coconut mixture,coriander leaves and saute well. Finally add some coconut oil on top and close the lid to lock the flavors. This is a really yummy side dish for rice. ENJOY!

This recipe is very Indian,delicious and flavorful. Lean Beef i s said to be very healthy; high in iron,protein and B-complex vitamins. This recipe uses very less oil.Beef supplies abundant amount of key nutrients needed for us especially children. Kerala beef ularth   is a must try dish when ever you get a chance.This is the same recipe;I had acquired from an expert cook and family friend. Well,those who don't eat beef,please ignore this post. INGREDIENTS Beef-250 g Whole Garam masala-powdered Ginger-garlic paste-1tbsp Onion-1 no Shallots -8-10 nos Curry leaves- Chilly powder-1-2 tbsp(as per your taste) Salt- Turmeric-1/2 tsp Coriander powder-2tbsp Meat Masala powder-1 tbsp Coconut -grated/pieces if available Mix all the ingredients with the beef (mixing with the hands is the best for this) Now in a pressure cooker,pour in 2 tsp oil(preferably coconut oil)and add the mix. Ingredients Potato-1 big boiled and cut into chunks Fresh Pineapple pieces-4 tbsp Cucumber-1 cut into small pieces Peanuts- Salt and pepper- Mayo-2 tbsp Milk-2 tsp Method Of preparation Mix all the veggies and drizzle some salt and pepper. Prawns are the tastiest sea food according to me.Easy to cook,hardly needs 3-4 minutes cooking time.Though toasted prawns are really divine,today,sharing a yummy curry with Prawns which can be served with chapati/rice. Ingredients Prawns -500g Garlic paste-1/2tsp Mustard seeds-1 tsp Fenugreek seeds-1tsp Raw Mango-1 no Shallots-8-10 nos Coriander leaves- Curry leaves- Garlic -1 clove Salt and pepper Turmeric powder-1/2 tsp Dry red Chilly-4 nos Coconut oil-2tsp Grated coconut-1 cup salt-to taste Kokum-2 nos soaked in water-(discard the water after soaking)-OPTIONAL Method of preparation 1.Marinate Prawns with salt,pepper and garlic paste. 2.In a sauce pan ,heat 1 tsp oil and add mustard and fenugreek seeds.When it starts to splutter,add dry red chilies,shallots,1 garlic clove,salt,pepper,curry leaves and turmeric powder. This is an Indian Pulao with soya chunks.Really easy to make and with less oil too.For those who crave for biriyani, this one is for you: You can have this less oil pulao with out guilt.Replace rice with Pearl Barley  for a healthier treat. Mixing shallow fried soya chunks make this rich in protein. Soya chunks are so yummy,so,I prefer it as a side dish along with this the pulao rather than mixing it into the rice.. Spicy Sausage Spaghetti

This Italian recipe demands sweet Italian sausage.But I have used chicken franks that is widely available. Again,this is my personal recipe and I must confess,a personal favorite too. A secret ingredient that I have added to bring THE REAL taste is hmm...Is the Bolognese spice mix.....did I really say that...! Serve this spicy spaghetti with Garlic bread. Ingredients Italian Spaghetti-100g Olive oil- Dry Red chilly flakes-2 tsp Garlic chopped-2cloves Onion-1 medium,chopped Chicken/beef sausage-100g Oregano-1tsp Bolognese spice mix-1tbsp Tomato Puree-1/4 cup Salt and pepper- Parsely chopped Grated Parmesan cheese-1tsp Cooking Method Cook spaghetti in salt water along with a pinch of Oregano.It should be done al dente. Drain and keep aside. Marinate sausages with salt,pepper and a pinch of oregano.Saute this in olive oil until crispy. Garlic bread is a favorite to almost all of us.Serve this along with Italian pasta/spaghetti and a healthy dinner is ready in minutes. You can serve this with Spaghetti Bolognese. Here I have made cheese garlic bread.Avoid cheese and it is still very tasty.Since we are using Olive oil,we can cut some calories there too. Ingredients Baguette (long thin Bread loaf )-1 no Olive oil-tbsp Garlic-2-3 cloves Parsley-chopped 2 tbsp Salt and pepper-to taste  Mozzarella cheese- Method of preparation 1.Cut Baguette  into 2 halves.Now slit each half longitudinally. 2.Make a Garlic Paste Blend garlic cloves,a pinch of salt and parsley with 1 tbsp olive oil. Make a fine paste.You can store this paste refrigerated  and can be used in many other recipes. 3.Apply this paste on the bread and toast it in an oven at maximum temperature.You can toast  on stove top too. When it turns light brown ,add plenty of cheese(salt and pepper if you prefer) and cook until cheese is melted and bubbly

Kids Pizza

This Kids Pizza is just a trial from deepsrecipes which turned out to be tasty .Topping can be anything you like,but here we are using egg  omelet  strips,bell peppers and lot of  Mozzarella  cheese. Ingredients For the Pizza dough All purpose flour-1-1/2 cups Whole meal-1/2 cup Dry yeast -5g sugar -2tsp salt-to taste Add 2 tbsp warm water to the yeast and 2 tsp sugar.Keep aside for 5 minutes. Make a smooth dough with flour,yeast and salt by adding water carefully. Keep aside for 30 minutes. Now after 30 minutes beat the dough with the back of your hand .Make big balls out of this and keep aside for 10 more minutes.Now these balls will become double in size. Ingredients for the Topping. Pizza sauce- Omelette cut into strips- Bell pepper -Chopped/if your kid is not a big fan of Bell peppers,you can even puree to make it go along with Mozzarella. Mozarella cheese

Kerala Fish Curry

Fish- Any white fish-200g Shallots-10-15nos (Or you can use 1 chopped onion) Ginger -Garlic paste-1tsp Chilly powder-1tbsp Turmeric powder- a pinch Salt-to taste Kokum-4-5nos (You can use white vinegar instead) Curry leaves- Coconut oil-2tsp Method Of preparation In a sauce pan(If you have clay pot,like the one in the picture above,it's the best for this dish) pour  1-1/2 cups of water. Add all ingredients except Fish and coconut oil. When it starts boiling,add the fish. Let it cook for 3-5 minutes until the fish is tender and the sauce starts to thicken. Pour the oil and add some more curry leaves. Best curry with white rice/Tapioca. This is a special,traditional delicacy from Kerala.

Battered Fish Recipe

Fish - All purpose flour-2tbsp Eno Fruit Salt-1/2 tsp (You can also use baking powder ) Fennel powder-1-2 tsp Paprika-1tbsp Garlic paste-1/2 tsp Salt-to taste Oil-2tbsp(for shallow frying) Mix all ingredients with warm water to get a thick batter.Dip fish pieces and shallow fry.. You can also serve this with finger chips or mashed potatoes.

Indian Pudding Recipe

Bengal gram has low glycemic index and can be included under weight loss diet. In that aspect,this recipe is a fresh option for those under weight loss regime.I am so happy to share this wonderful dessert from India. INGREDIENTS Split Bengal gram(skinless)- 1 cup Jaggery-200 g Milk(low fat)- 1/2 cup Coconut milk(thin)-3 cups Thick coconut milk-1/2 cup Cumin powder-2 tsp For Garnish Cashew nuts Raisins Ghee-1tsp Method Of Preparation 1.Wash and soak split bengal gram seeds for 30 minutes. Cook it(split bengal gram(also called Chana dal in Hindi)) until its almost mushy.Use a pressure cooker for this. 2.Now in a non stick pan,add the cooked bengal gram along with melted jaggery and stir until the mixture cooks well in jaggery and starts coming out from the pan. Once it's ready,the texture will be like the one in the picture below. Now add in 1 cup of low fat milk and mix well. When the mixture turns almost dry,pour in 3 cups of thin cocon
