Indian Rice Pudding

India is rich in its tradition and its festivals. We have a potpourri of festivals, not only connected with Gods and Goddesses, but also with wind, harvest and so on.
Colors, sweets, firecrackers and flowers are an integral part of any festival in India.
Sharing an Indian Rice Pudding recipe,apt for any occasion. This is a quick and easy method to make this dessert, which could take an hour to cook otherwise, if we follow the usual method. But taste is the same, I must say! So here we go!
Ingredients
Raw Rice -   ¾ cup
Milk        - 1-1/2 liters
Sugar – 1-1/4 cup
Ghee – 2 tsp
Cardamom – 2tsp
Cashew nuts, Raisins – To garnish
Method of Preparation
Wash the rice and soak for 15 minutes.
In a pressure cooker, add in milk, sugar, rice and powdered cardamom.
Cook on high flame until 1 whistle. Simmer and cook for 20 minutes. Allow the pressure cooker to cool.
Heat Ghee in a pan. Fry cashew nuts and Raisins.  Pour in the ghee along with the fried items.
If you want a thicker consistency, add in some powdered cashew nuts. And serve chilled or at room temperature.
Kids would enjoy this version of rice pudding.
