Chop Suey(Only Veg)

Classic American chop suey consists of elbow macaroni and bits of cooked ground beef with sautéed onion and green pepper in a thick tomato-based sauce.Though this decidedly American comfort food is clearly influenced by Italian-American cuisine, it is known as a chop suey because it is a combo meal with meat and vegetables.
 But my recipe is Chinese-American Chop Suey with only vegetables and Noodles instead of Pasta.
You can add chicken or meat and chicken stock instead of vegetable stock.
(Chop suey has become a prominent part of American Chinese cuisine, Filipino cuisine, Canadian Chinese cuisine, Indian Chinese cuisine, and Polynesian cuisine. In Indonesian Chinese cuisine it is known as Cap cai)
This recipe consists of simple 3 step process.
Step1
Cook the noodles with salt.
Heat oil in a frying pan and deep fry this cooked noodles.
Noodle should be added little by little and in a way that after frying it should resemble a bird’s nest.
Step2.
This step is making the Chop suey sauce with all the veggies and chicken if you are using.
Ingredients
1. Ginger-1tsp finely chopped
2. Garlic-1tsp finely chopped
3. Onion-1 medium sized
4. Carrot-1 no
5. Bell Pepper-1 no
6. Spring Onion /celery- 2 tbsp
7. Cabbage-4 tbsp
8. Veg stock/water-2tbsp
9. Salt & Pepper
Sugar-1tsp
10. Tomato sauce-bountiful
 & Worchester sauce-1tsp
Method of preparation
In a wok, add in 1tbsp oil.
Add in chopped ginger, garlic, onion and spring onion and sauté well.
Now add all the veggies (you can add your selection of veggies), just sauté in high flame.
Add 1 tsp sugar.
Add generous amount of Tomato sauce and just 1 tsp Worchester sauce.
Add in salt, pepper and stock.
Cook until al-dente.
Step3
In another pan add 1 tsp oil and fry 1 egg .This is served as a topping to the chop suey.
Serve hot.
